Urinary nitric oxide during one year of gluten-free diet with or without oats in children with coeliac disease.

OBJECTIVE: Although in both adults and children with coeliac disease (CD) it is now recommended that oats be added to their gluten-free diet, there is still some controversy concerning the possible harmful effects of oats in some individuals. In this study concentrations of nitric oxide metabolites were repeatedly measured in the urine of children under investigation for CD, when on a gluten-free diet with or without oats. MATERIAL AND METHODS: The study included 116 children, randomized to a standard gluten-free diet (GFD-std) or a gluten-free diet supplemented with wheat-free oat products (

Ingredient selection for plastic composite supports for L-(+)-lactic acid biofilm fermentation by Lactobacillus casei subsp. rhamnosus.

Plastic composite supports containing 50% agricultural products (oat hulls, soybean hulls, yeast extract, soybean flour, dried bovine erythrocytes, bovine albumin, and/or mineral salts) and 50% (wt/wt) polypropylene were produced by high-temperature twin-screw extrusion. The research employed two half sets of a five-factorial fractional design (2(5 - 1)) to evaluate the effects of different agricultural components on the properties of the plastic composite supports and to select the best plastic composite support formulation for lactic acid fermentation. The biofilm population was affected by

Physicochemical properties, flavor profile, and alleviation of DSS-induced colitis in mice of co-fermented oat beverage.

Oat beverages fermented with lactic acid bacteria represent a promising strategy to improve sensory and nutritional properties. This study presents a systematic investigation into the cooperative fermentation of oats using Lactiplantibacillus plantarum and Streptococcus thermophilus (LP7-ST3) for developing a novel beverage. Compared to single-strain fermentation, LP7-ST3 co-fermentation significantly enhanced the sensory quality and markedly increased the contents of β-glucan, polyphenols, flavonoids, and proteins, resulting in superior antioxidant capacity. Non-targeted metabolomics and flav

Effect of oat β-glucan in managing blood pressure: a randomized cross-over pilot trial.

Hypertension affects over 1.2 billion adults worldwide. While numerous pharmacological treatments are available for managing hypertension, dietary approaches may also offer beneficial alternatives or complementary strategies. High molecular weight (HMW) β-glucan, a fibre found in oats, may be responsible for reductions in systolic blood pressure. This pilot trial investigated the efficacy of HMW oat β-glucan in reducing systolic and diastolic blood pressure in individuals with mild hypertension. Additionally, changes in heart rate, body weight, waist circumference, and dietary intake, includin

Emerging science on benefits of whole grain oat and barley and their soluble dietary fibers for heart health, glycemic response, and gut microbiota.

The aim of this work is to review the major mechanisms by which consumption of whole grain oats and barley, and β-glucans, reduces the risk of coronary heart disease, type 2 diabetes, and other noncommunicable chronic conditions. These effects have been predominantly explained by the role of soluble dietary fibers and smaller bioactive compounds, such as phenolic compounds, in oats and barley. These help to reduce the level of serum low-density lipoprotein cholesterol, decreasing postprandial blood glucose and modulating gut microbiota. In the present review, the role of viscosity development

Characterization of cereal toxicity for celiac disease patients based on protein homology in grains.

BACKGROUND AND AIMS: Celiac disease is caused by T-cell responses to wheat gluten-derived peptides. The presence of such peptides in other widely consumed grains, however, has hardly been studied. METHODS: We have performed homology searches to identify regions with sequence similarity to T-cell stimulatory gluten peptides in the available gluten sequences: the hordeins of barley, secalins of rye, and avenins of oats. The identified peptides were tested for T-cell stimulatory properties. RESULTS: With 1 exception, no identical matches with T-cell stimulatory gluten peptides were found in the

Effect of Oat Flakes on Glycemic Variability, Dyslipidemia, and Pancreatic Duodenum Homeobox-1 (PDX-1) Level Among Adolescents with Type 1 Diabetes: A Randomized Crossover Study.

Aims: Murine studies show a promising effect of high-fiber β-glucan on glycemic control and serum lipids. In addition, β-glucan has recently been found to have strong antioxidant and immunomodulatory effects. Oat flakes are a natural source of β-glucan. However, the effects of oat flakes on glycemic variability, dyslipidemia, and pancreatic duodenum homeobox-1 (PDX-1) levels in type 1 diabetes (T1D) remain unclear. Hence, this study assessed the effect of oat flakes on glycemic variability, dyslipidemia, and PDX-1 among adolescents with T1D. Materials and Methods: Sixty adolescents with T1D we

Probiotics, Prebiotics and Other Dietary Supplements for Gut Microbiota Modulation in Celiac Disease Patients.

To date, the only available treatment for celiac disease (CD) patients is a life-lasting gluten-free diet (GFD). Lack of adherence to the GFD leads to a significant risk of adverse health consequences. Food cross-contamination, nutritional imbalances, and persistent gastrointestinal symptoms are the main concerns related to GFD. Moreover, despite rigid compliance to GFD, patients struggle in achieving a full restoring of the gut microbiota, which plays a role in the nutritive compounds processing, and absorption. Pivotal studies on the supplementation of GFD with probiotics, such as Bifidobact

Sensitive detection of cereal fractions that are toxic to celiac disease patients by using monoclonal antibodies to a main immunogenic wheat peptide.

BACKGROUND: Celiac disease is an immune-mediated enteropathy caused by the ingestion of gluten, a protein fraction found in certain cereals. Immunotoxic gluten peptides that are recalcitrant to degradation of digestive enzymes appear to trigger celiac syndromes. A 33-mer peptide from alpha-2 gliadin has been identified as a principal contributor to gluten immunotoxicity. A gluten-free diet is the usual first therapy for celiac disease patients; therefore, the characterization and quantification of the toxic portion of the gluten in foodstuffs is crucial to avoid celiac damage. Effects of forage source and particle size on chewing activity, ruminal pH, and saliva secretion in lactating Holstein cows.

The present study investigated the effects of dietary forage source (quality) and particle size on chewing activity, saliva secretion, and ruminal pH. Twelve multiparous lactating Holstein cows, four of which were ruminally cannulated, were used in a replicated 4 × 4 Latin square experimental design with a 2 × 2 factorial arrangement of treatments. Cows fed wild-rye hay diets had longer daily eating times than cows fed oaten hay diets. Treatments had no effect on ruminating time; therefore, resting time varied inversely to eating time. Neither the rate nor the amount of saliva secretion while

Development of hempseed protein films for edible packaging in dysphagia-friendly oat-porridge: Effect of pH and thermal denaturation conditions in tailoring film properties.

In this study, hempseed protein isolate (HPI) films were developed under varying pH and thermal conditions, and evaluated as edible packaging for oat-porridge, supporting the creation of innovative dysphagia-friendly foods. The effect of pH and temperature on the properties of the film-forming solutions and the resulting films were investigated. Surface hydrophobicity and thiol content of the film-forming solutions were significantly altered, primarily by pH. Furthermore, increasing temperature in combination with extreme alkaline conditions led to increased swelling index and water vapor perm

The effects of a diet formulation with oats, soybeans, and flax on lipid profiles and uricemia in patients with AIDS and dyslipidemia.

INTRODUCTION: Although the initiation of highly active antiretroviral therapy (HAART) is accompanied by an attenuation of viral load, metabolic disorders characterized by hyperglycemia, dyslipidemia, and lipodystrophy are often observed in patients under this treatment. Certain foods, such as oat bran, soy protein, and flaxseed, have been shown to improve a patient's lipid profile despite possible increases in uricemia. Thus, a bioactive compound was formulated using these foods to help patients with HIV/AIDS control metabolic disorders resulting from HAART. METHODS: An uncontrolled before an
