Hormones in international meat production: biological, sociological and consumer issues.

Beef and its products are an important source of nutrition in many human societies. Methods of production vary and include the use of hormonal compounds ('hormones') to increase growth and lean tissue with reduced fat deposition in cattle. The hormonal compounds are naturally occurring in animals or are synthetically produced xenobiotics and have oestrogenic (oestradiol-17beta and its esters; zeranol), androgenic (testosterone and esters; trenbolone acetate) or progestogenic (progesterone; melengestrol acetate) activity. The use of hormones as production aids is permitted in North American cou

Public health hazards from small ruminant meat products in Europe.

Foodborne diseases, in particular those related to meat and meat products, have recently become a matter of great public concern. Sheep and goat meat can transmit infections and diseases either through handling during preparation procedures or as a result of ingestion by the consumer. The authors highlight the second route of contamination in relation to meat and meat products from small ruminants in European countries. Among the most important diseases transmitted by mutton and goat meat, toxoplasmosis remains the greatest threat, particularly in immuno-compromised people and in pregnant wome

Trichinosis from wild boar meat in Gojjam, north-west Ethiopia.

An outbreak of trichinosis associated with ingestion of meat from a wild boar in Gojjam administrative region, Ethiopia, is reported. Of the 30 soldiers, 20 who ate the meat raw, became ill and 5 of them were admitted to the Armed Forces General Hospital (AFGH). Even though they presented with a typical history and clinical features the disease was not even suspected at the peripheral hospital. The diagnosis was confirmed, at the AFGH, by deltoid muscle biopsy in all the 5 cases. Trichinosis being increasingly recognized as a public health problem in Ethiopia, warrants public education and mor

Inactivation of Uropathogenic Escherichia coli in Ground Chicken Meat Using High Pressure Processing and Gamma Radiation, and in Purge and Chicken Meat Surfaces by Ultraviolet Light.

Extraintestinal pathogenic Escherichia coli, including uropathogenic E. coli (UPEC), are common contaminants in poultry meat and may cause urinary tract infections after colonization of the gastrointestinal tract and transfer of contaminated feces to the urethra. Three non-thermal processing technologies used to improve the safety and shelf-life of both human and pet foods include high pressure processing (HPP), ionizing (gamma) radiation (GR), and ultraviolet light (UV-C). Multi-isolate cocktails of UPEC were inoculated into ground chicken which was then treated with HPP (4°C, 0-25 min) at 30

Incorporating dietary fiber from fruit and vegetable waste in meat products: a systematic approach for sustainable meat processing and improving the functional, nutritional and health attributes.

BACKGROUND: Every year, the food business produces a sizeable amount of waste, including the portions of fruits and vegetables that are inedible, and those that have reached a stage where they are no longer suitable for human consumption. These by-products comprise of components such as natural antioxidants (polyphenols, carotenoid etc.), dietary fiber, and other trace elements, which can provide functionality to food. Due to changing lifestyles, there is an increased demand for ready-to-eat products like sausages, salami, and meat patties. In this line, meat products like buffalo meat sausage

Development of nested multiplex polymerase chain reaction (PCR) assay for the detection of Toxocara canis, Toxocara cati and Ascaris suum contamination in meat and organ meats.

Ascarid Larva Migrans Syndrome (ascarid LMS) is a clinical syndrome in humans, caused by the migration of animal roundworm larvae such as Toxocara canis, Toxocara cati and Ascaris suum. Humans may acquire infection by ingesting embryonated eggs, or infective larvae of these parasites in contaminated meat and organ meats. To detect these pathogenic contaminations, a novel nested multiplex PCR system was developed. Our novel nested multiplex PCR assay showed specific amplification of T. canis, T. cati and Ascaris spp. Detection limit of the nested multiplex PCR was tested with serial dilution of

Effect of Moderate Red Meat Intake Compared With Plant-Based Meat Alternative on Psychological Well-Being: A 10-Wk Cluster Randomized Intervention in Healthy Young Adults.

BACKGROUND: A healthy diet has been proposed to support good mental health, but the addition of either red meat or meat alternatives is nuanced. OBJECTIVES: We aimed to determine if psychological and physiological well-being is differentially affected by consuming recommended weekly amounts of either lean red meat or plant-based meat alternatives (PBMAs) supplemented with a plant-rich diet. METHODS: The trial was a parallel 2-arm randomized intervention of 10 wk duration. Eighty healthy omnivorous young adults were clustered as 40 cohabitating household pairs. Each pair was randomly assigned

Different patterns of changes in free 25-hydroxyvitamin D concentrations during intermittent fasting among meat eaters and non-meat eaters and correlations with amino acid intake.

We prospectively assessed changes in free 25-hydroxyvitamin D [25(OH)D] and vitamin D binding protein (VDBP) among overweight adults who followed a pescatarian Orthodox intermittent fasting regimen (n = 59) and controls who followed a low-fat 12:12 diet (n = 46). Total and free 25(OH)D, parathyroid hormone, VDBP, anthropometric data, and amino acid intake were evaluated in both groups at three time points: at baseline, 7 weeks after diet implementation, and 5 weeks after participants returned to their usual eating habits (12 weeks from baseline). An increase in amino acid intake between baseli

Associations Between Meat Consumption and Depression Are Small and Unlikely to Be Causal.

Evidence from cross-sectional studies suggests that people who eat more meat tend to report somewhat lower depression-a link that, if causal, could have important implications for mental health. However, little is known about why meat consumption is associated with depression. We examined the nature and magnitude of this association in three large, representative, longitudinal samples in the Netherlands, Germany, and Australia (total N = 77,678, aged 14-102 years). Adjusting for income, age, education, and gender, we observed a weak association of β = -0.05 between meat consumption and depress

Physicochemical and microbial changes in Raw beef meat induced by radiation.

This study aimed to investigate the effects of various electron beam irradiation doses on microbial inactivation and physicochemical properties of raw beef. The main research question was to determine the dose required to effectively eliminate pathogenic microorganisms without substantially compromising meat quality. Raw beef samples were treated with electron beam doses of 0, 1, 2, 3, 5, 7, and 9 kGy. Microbial inactivation was assessed by enumerating colonies of Salmonella Typhimurium, Listeria monocytogenes, Staphylococcus aureus, Bacillus cereus, and Escherichia coli. Based on the inactiva

A metabolomics approach to commercial protease enzyme hydrolysis of gourami meat.

The enzymatic hydrolysis of fish proteins has gained increasing attention to enhance nutritional quality and generate bioactive peptides with functional properties. In this study, we investigated the metabolomic consequences of gourami (Osphronemus goramy) meat hydrolysis using two commercial proteases, papain and bromelain. Hydrolysis was conducted over 0-240 min, and the resulting metabolites were profiled using ultra-performance liquid chromatography coupled with high-resolution mass spectrometry (UPLC-HRMS). Multivariate statistical analyses revealed a clear separation of hydrolysates by e

Selection of Aptamers To Detect Lean Meat Agents: Ractopamine and Clenbuterol.

In this work, a library-immobilization method was used to select DNA aptamers for ractopamine (RAC) and clenbuterol (CLB), two common "lean meat agents". Two RAC-binding aptamers, RAC-1 and RAC-5, exhibit dissociation constants (Kd) of 6.8 and 2.9 μM, respectively, based on isothermal titration calorimetry (ITC). Similar values were also obtained using a thioflavin T (ThT) fluorescence assay. A CLB aptamer named CLB-1 exhibited a Kd of 561 nM by the ThT assay and 885 nM by ITC. The RAC-5 aptamer showed a modest response to CLB, whereas CLB-1 exhibited strong specificity to CLB. Comparisons wer

[Genuine awareness of mammalian meat such as beef and pork: Myth or reality?].

BACKGROUND: Genuine sensitization to beef and pork is rare, with the best-characterized allergens being beef and pork (Bos d 6 and Sus s1). There are different presentations of mammalian meat allergy: cat-pork syndrome, alpha-gal syndrome, milk-related allergy, and primary sensitization. CASE REPORT: A 49-year-old man presented with urticaria after ingesting beef and pork and mild intermittent nasal symptoms. The initial approach was aeroallergen testing: positive for cat. Cat-pork syndrome was suspected. A prick-to-prick test was performed on raw and cooked pork: positive; raw beef: positive

Effects of ferulic acid on meat quality and fat metabolism in broilers.

This study aimed to explore the feasibility of using ferulic acid (FA) to regulate meat quality and fat metabolism in broilers. A total of 240 one-day-old male Arbor Acres broilers were randomly assigned to four dietary treatments, each consisting of 6 replicates with 10 birds per replicate. The birds were fed a basal diet supplemented with 0, 100, 300, or 600 mg/kg of FA for 42 days. The results showed that: 1) the FA increased the eviscerated ratio and breast muscle ratio, and reduced abdominal fat ratio (P< 0.05). 2) the FA improved Yellowness, 45 minutes and 24 hours pH and muscle crude pr

Multi-virulence of Campylobacter jejuni carried by chicken meat in Brazil.

Campylobacter jejuni is the most frequent cause of bacterial gastroenteritis; therefore, the characteristics of its epidemiology must be continuously investigated to support possible mitigating measures. This is particularly important when evaluating representative strains from the world's leading chicken meat exporter, Brazil. We evaluated a panel of 14 virulence genes in 359 strains of C. jejuni isolated from chilled broiler carcasses in Brazil. The genes were classified into five virulence categories (B: biofilm/motility; SS: secretion/cytotoxicity system; CI: invasion/colonization; GB: Gui

Phosphate alternatives for meat processing and challenges for the industry: A critical review.

Meat and meat products provide high levels of nutrition and many health benefits to consumers, yet a controversy exists regarding the use of non-meat additives, such as the inorganic phosphates that are commonly used in meat processing, and particularly their relationship to cardiovascular health and kidney complications. Inorganic phosphates are salts of phosphoric acid (e.g., sodium phosphate, potassium phosphate, or calcium phosphate), whereas organic phosphates are ester compounds (e.g., the phospholipids found in cell membranes). In this sense, the meat industry remains active in its effo
