Associations Between Meat Consumption and Depression Are Small and Unlikely to Be Causal.

Evidence from cross-sectional studies suggests that people who eat more meat tend to report somewhat lower depression-a link that, if causal, could have important implications for mental health. However, little is known about why meat consumption is associated with depression. We examined the nature and magnitude of this association in three large, representative, longitudinal samples in the Netherlands, Germany, and Australia (total N = 77,678, aged 14-102 years). Adjusting for income, age, education, and gender, we observed a weak association of β = -0.05 between meat consumption and depress

Physicochemical and microbial changes in Raw beef meat induced by radiation.

This study aimed to investigate the effects of various electron beam irradiation doses on microbial inactivation and physicochemical properties of raw beef. The main research question was to determine the dose required to effectively eliminate pathogenic microorganisms without substantially compromising meat quality. Raw beef samples were treated with electron beam doses of 0, 1, 2, 3, 5, 7, and 9 kGy. Microbial inactivation was assessed by enumerating colonies of Salmonella Typhimurium, Listeria monocytogenes, Staphylococcus aureus, Bacillus cereus, and Escherichia coli. Based on the inactiva

A metabolomics approach to commercial protease enzyme hydrolysis of gourami meat.

The enzymatic hydrolysis of fish proteins has gained increasing attention to enhance nutritional quality and generate bioactive peptides with functional properties. In this study, we investigated the metabolomic consequences of gourami (Osphronemus goramy) meat hydrolysis using two commercial proteases, papain and bromelain. Hydrolysis was conducted over 0-240 min, and the resulting metabolites were profiled using ultra-performance liquid chromatography coupled with high-resolution mass spectrometry (UPLC-HRMS). Multivariate statistical analyses revealed a clear separation of hydrolysates by e

Selection of Aptamers To Detect Lean Meat Agents: Ractopamine and Clenbuterol.

In this work, a library-immobilization method was used to select DNA aptamers for ractopamine (RAC) and clenbuterol (CLB), two common "lean meat agents". Two RAC-binding aptamers, RAC-1 and RAC-5, exhibit dissociation constants (Kd) of 6.8 and 2.9 μM, respectively, based on isothermal titration calorimetry (ITC). Similar values were also obtained using a thioflavin T (ThT) fluorescence assay. A CLB aptamer named CLB-1 exhibited a Kd of 561 nM by the ThT assay and 885 nM by ITC. The RAC-5 aptamer showed a modest response to CLB, whereas CLB-1 exhibited strong specificity to CLB. Comparisons wer

[Genuine awareness of mammalian meat such as beef and pork: Myth or reality?].

BACKGROUND: Genuine sensitization to beef and pork is rare, with the best-characterized allergens being beef and pork (Bos d 6 and Sus s1). There are different presentations of mammalian meat allergy: cat-pork syndrome, alpha-gal syndrome, milk-related allergy, and primary sensitization. CASE REPORT: A 49-year-old man presented with urticaria after ingesting beef and pork and mild intermittent nasal symptoms. The initial approach was aeroallergen testing: positive for cat. Cat-pork syndrome was suspected. A prick-to-prick test was performed on raw and cooked pork: positive; raw beef: positive

Effects of ferulic acid on meat quality and fat metabolism in broilers.

This study aimed to explore the feasibility of using ferulic acid (FA) to regulate meat quality and fat metabolism in broilers. A total of 240 one-day-old male Arbor Acres broilers were randomly assigned to four dietary treatments, each consisting of 6 replicates with 10 birds per replicate. The birds were fed a basal diet supplemented with 0, 100, 300, or 600 mg/kg of FA for 42 days. The results showed that: 1) the FA increased the eviscerated ratio and breast muscle ratio, and reduced abdominal fat ratio (P< 0.05). 2) the FA improved Yellowness, 45 minutes and 24 hours pH and muscle crude pr

Multi-virulence of Campylobacter jejuni carried by chicken meat in Brazil.

Campylobacter jejuni is the most frequent cause of bacterial gastroenteritis; therefore, the characteristics of its epidemiology must be continuously investigated to support possible mitigating measures. This is particularly important when evaluating representative strains from the world's leading chicken meat exporter, Brazil. We evaluated a panel of 14 virulence genes in 359 strains of C. jejuni isolated from chilled broiler carcasses in Brazil. The genes were classified into five virulence categories (B: biofilm/motility; SS: secretion/cytotoxicity system; CI: invasion/colonization; GB: Gui

Traditional marketed meats as a reservoir of multidrug-resistant Escherichia coli.

This study aimed to analyze Escherichia coli from marketed meat samples in Peru. Sixty-six E. coli isolates were recovered from 21 meat samples (14 chicken, 7 beef), and antimicrobial resistance levels and the presence of mechanisms of antibiotic resistance, as well as clonal relationships and phylogeny of colistin-resistant isolates, were established. High levels of antimicrobial resistance were detected, with 93.9% of isolates being multi-drug resistant (MDR) and 76.2% of samples possessing colistin-resistant E. coli; of these, 6 samples from 6 chicken samples presenting mcr-1-producer E. co

Phosphate alternatives for meat processing and challenges for the industry: A critical review.

Meat and meat products provide high levels of nutrition and many health benefits to consumers, yet a controversy exists regarding the use of non-meat additives, such as the inorganic phosphates that are commonly used in meat processing, and particularly their relationship to cardiovascular health and kidney complications. Inorganic phosphates are salts of phosphoric acid (e.g., sodium phosphate, potassium phosphate, or calcium phosphate), whereas organic phosphates are ester compounds (e.g., the phospholipids found in cell membranes). In this sense, the meat industry remains active in its effo

Meat grinder hand injury in children: A report of 5 cases.

BACKGROUND: Meat grinder injury is considered one of the leading causes that may result in mutilating hand injury. It is commonly occurred in children due to negligence, limited awareness and inexperience about the machine processing and its possible complications. CASE PRESENTATION: We reported five cases of grinder-induced hand injuries, presented with their hands yet firmly wedged inside the grinder. Each hand was freed from inside of the grinder by reversed turning of the machine except for one case which needed extrication with the using of a cutting torch. After releasing of the injured

A case of a dog with paragonimiasis after consumption of raw deer meat.

A 6-year-old castrated male Cavalier King Charles Spaniel was referred to the Animal Medical Center, Tokyo University of Agriculture and Technology, for examination and treatment of recurrent pneumothorax. Chest radiography and computed tomography showed multiple cavitary lesions in the caudal right posterior lobe. These lesions were surgically excised via thoracotomy. Subsequent histopathological examination revealed paragonimiasis. In the postoperative review, we found that the owner had fed raw deer meat to the dog four months earlier. Deer meat has attracted attention as a source of Parago

Development and Evaluation of a Preliminary Screening Assay for Antibiotic Residues in Meat.

A preliminary screening assay based on a microbial chromogenic reaction was developed to detect common antibiotic residues in meat rapidly. The assay comprised two bioassays: one for Escherichia coli and another for Geobacillus stearothermophilus. The assay was optimized and evaluated for the simultaneous screening of 30 antibiotics from five common antibiotic classes (tetracyclines, aminoglycosides, macrolides, β-lactams, and quinolones) found in meat. Extraction using phosphate-acetonitrile buffer (pH 7.2) and a delipidating treatment using n-hexane resulted in a high extraction efficacy for

Detection of Foot-and-Mouth Disease Virus in Swine Meat Juice.

Foot-and-mouth disease virus (FMDV) is a highly contagious agent that impacts livestock industries worldwide, leading to significant financial loss. Its impact can be avoided or minimized if the virus is detected early. FMDV detection relies on vesicular fluid, epithelial tags, swabs, serum, and other sample types from live animals. These samples might not always be available, necessitating the use of alternative sample types. Meat juice (MJ), collected after freeze-thaw cycles of skeletal muscle, is a potential sample type for FMDV detection, especially when meat is illegally imported. We hav

High Occurrence of Multiresistant Salmonella Infantis in Retail Meat in Ecuador.

Salmonella enterica is among the most important foodborne pathogens. In Ecuador, there is limited information about non-typhoidal S. enterica occurrence in raw meats, its serotype distribution, and antimicrobial resistance. In this study, we addressed this issue in 1095 retail fresh meats (chicken, pork, veal, lamb, beef, and turkey) in Quito by performing a traditional culture methodology and molecular detection. We found that S. enterica was present in 38.1% of the samples, and Salmonella Infantis was the most common serotype showing a high antibiotic resistance and a wide host range. Some h
