Self-control strategies to reduce meat consumption: An ecological momentary intervention.

An increasing number of individuals aim to reduce their meat consumption, but implementing this is challenging. Self-control strategies could support this change; however, their effectiveness remains understudied. This study examines whether providing self-control strategies supports motivated individuals in reducing meat intake. Based on the process model of self-control, we tested whether situational strategies outperform intrapsychic strategies. Additionally, we examined whether combining both strategy types is more effective than either strategy alone. We conducted an ecological momentary

Risk-Attributable Burden of Breast Cancer from High Red Meat Intake.

Breast cancer remains a major global health challenge, and increasing evidence suggests that high red meat intake may contribute to its burden. However, the magnitude and long-term trends of red meat-attributable breast cancer across major economies remain unclear. This study quantified the breast cancer burden attributable to high red meat intake from 1990 to 2021 and projected trends to 2040 across G20 countries using Global Burden of Disease (GBD) 2021 data. Using GBD 2021 estimates, we assessed red meat-attributable breast cancer burden based on the Comparative Risk Assessment (CRA) framew

Characterization of Campylobacter isolates from chicken farms and retail poultry meat.

Campylobacter is a major bacterial cause of gastroenteritis worldwide, and poultry meat is widely recognized as a principal reservoir for human Campylobacter infection. This study characterized the antimicrobial susceptibility profiles, genomic diversity, key antimicrobial-resistance determinants, and virulence genes of Campylobacter isolates collected from chicken farms and fresh retail poultry meat in ten regions of Jiangsu Province, China. The biofilm- forming capacity of selected strains was also evaluated. MLST identified CC-574 and CC-828 as the predominant clonal complexes of Campylobac

Understanding University Students' Willingness to Try Cultured Meat: Insights from Italy.

Background: Cultured meat (CM) has emerged as a promising, albeit controversial, alternative to conventional livestock production, offering potential benefits in terms of sustainability, animal welfare, and resource efficiency. Despite these potential advantages, consumer acceptance remains uncertain, particularly in countries where CM is not yet commercially available. Objectives: this study investigates the determinants of willingness to try (WTT) cultured meat among Italian university students (n = 335), with particular attention to the role of product-related perceptions and personal value

Accidental Botulism Caused by Consumption of Vacuum-Packaged Rabbit-Head Meat.

With the increase of sporadic cases of foodborne botulism and the occurrence of several large incidents of botulinum contamination in food, botulism has received greater attention in clinical practice. Foodborne botulinum toxin poisoning is an acute foodborne toxic disease caused by ingestion of food contaminated with Clostridium botulinum exotoxin. We present two cases of foodborne botulism affecting a mother and daughter who were admitted to our department after consumption of vacuum-packed rabbit-head meat. The time to symptom onset was less than 24 h in the daughter (aged 8 years) and 1 we

Meat Production Potential of Local Horse Breeds: Sustainable Conservation Through Valorization.

Local horse breeds, particularly cold-blood types, are often marginalized in economic and social contexts, primarily due to the neglect of their economic, genetic, and cultural potential, as well as their role in preserving the identity of rural areas, local communities, and ecosystems. The valorization of these breeds is a crucial prerequisite for their economic repositioning. The Croatian Posavina horse is a local breed, well adapted to harsh, extensive production systems. Its sustainability is achieved through pasture-based meat production, primarily targeting foreign European markets. Ensu

Lipid Oxidation in Meat: From Fundamental Mechanisms to Latest Control Solutions.

Lipid oxidation remains one of the most critical pathways compromising the quality and shelf life of meat and meat products. Over the past three decades, significant advances have been made in elucidating the mechanisms of lipid oxidation and in developing both experimental and computational approaches to study and control these processes. This chapter provides a comprehensive overview of these approaches, detailing their relative strengths and limitations. The complex interplay between substrates (e.g., unsaturated fatty acids) and pro-oxidant factors (e.g., heme pigments, lipoxygenase, iron)

Feeding systems change yak meat quality and flavor in cold season.

Yak meat is in high demand due to its unique flavor. Thus this research utilized GC × GC-ToF-MS to discover important flavor compounds in yak meat raised during the cold season under different feeding systems: traditional grazing (TG), grazing-based supplementation (GS), and stall-feeding (SF). Meat quality results showed that SF significantly improved meat's lightness and tenderness (P < 0.05), as compared to TG. Intramuscular fat (2.7 g/100 g) was highest in the SF, followed by the GS (2.46 g/100 g) and the TG (1.57 g/100 g), whereas protein content was similar in the GS and TG, but again hi

Investigating Infectious Organisms of Public Health Concern Associated with Wild Meat.

The wild meat trade poses a significant threat to public health as it facilitates the spillover of zoonotic pathogens through high-risk activities such as the hunting, butchering, trade, and consumption of wild animals. Despite the health risks and association with marking epidemics including SARS, Ebola, and COVID-19, the global wild meat trade continues to thrive. To summarize the evidence available, primary literature published between 2000 and 2022 was systematically and critically assessed for evidence of zoonotic pathogens or other infectious organisms detected in samples directly from w

Unusual Hypopharyngeal Foreign Body (Meat Bolus) in a Cardiovascular Disease Patient.

A 50-year old post-cardiovascular disease trader was rushed to our hospital's accident and emergency unit because of sudden onset noisy breathing associated with difficulty with breathing which had progressed for two days. Clinical examination revealed a patient in severe respiratory distress. We performed an urgent fibreoptic endoscopy to remove a meat bolus. It was found impacted in the hypopharynx with near-complete occlusion of the laryngeal inlet. He remained asymptomatic after the procedure and was subsequently transferred to the neurology unit for further management.

Mammalian meat allergy emerges after tick bite: the alpha-gal syndrome.

Alpha-gal syndrome (AGS) is a hypersensitivity reaction to mammalian meat that develops after tick bite exposure. AGS was first described in 2009 and testing for the allergy has become available in the last decade. We report the case of a 56-year-old farmer with a history of frequent lone star tick bites who presented with a 7-year history of diffuse urticaria occurring hours after eating red meat. AGS is likely underdiagnosed because of the unusual presentation of the allergy, historic lack of available testing, and deficiency of physician knowledge about the condition. Recognition of AGS is

Characterization of Listeria Monocytogenes Originating from the Spanish Meat-Processing Chain.

Using agglutination techniques, 118 Listeria monocytogenes isolates from red meat and poultry were serotyped. Strains were ascribed to the serotypes 4b/4e (44.1% of the strains), 1/2 (a, b or c; 28.0%), 4c (6.8%), 4d/4e (5.9%) and 3 (a, b or c; 2.5%). Among these are the serotypes most frequently involved in cases of human listeriosis. The susceptibility of 72 strains to 26 antibiotics of clinical importance was determined by disc diffusion (Clinical and Laboratory Standards Institute; CLSI). High levels of resistance were observed to cefoxitin (77.8% of the strains showed resistance), cefotax

Detection of anti-viral antibodies from meat juice of wild boars.

Wild boars are a reservoir for many zoonotic pathogens and a good sentinel for surveillance of zoonotic viral infections, but collection of serum samples from wild boars in the field is sometimes difficult and requires special equipment and techniques. In this study, ELISA using meat juices extracted from the heart and diaphragm of wild boars, instead of serum samples, was performed to detect antibodies against zoonotic pathogens, Japanese encephalitis virus and hepatitis E virus. The results of ELISA using meat juice samples were significantly correlated with those using serum samples and mea

Trichinellosis outbreak due to wild boar meat consumption in southern Italy.

We report a Trichinella britovi outbreak investigated during February-March 2016 in southern Italy. The source of infection was meat from infected wild boars that were illegally hunted and, hence, not submitted to post-mortem veterinary inspection. Thirty persons reported having eaten raw dried homemade sausages; five cases of trichinellosis were confirmed. Wild game meat consumers need to be educated about the risk for trichinellosis.

Phylogenetic demonstration of hepatitis E infection transmitted by pork meat ingestion.

Hepatitis E virus (HEV) is responsible for a small number of acute hepatitis in developed countries. In this setting, HEV infection seems to be a zoonosis, although this has not been completely demonstrated. High morbidity and mortality associated with severe acute infections have been described, as well as the possible role of ribavirin therapy in those cases. We describe a case of acute hepatitis after pork meat ingestion in a patient with Waldeström macroglobulinemia with immunoglobulin A deficiency. Acute hepatitis E was diagnosed based on positive IgM anti-HEV antibodies and HEV RNA detec
