Natural deep eutectic solvents (NADESs) have emerged as a promising eco-friendly alternative to petrochemicals for extracting plant metabolites. Considering that the demand for sustainable "green" ingredients for industrial applications is growing, those solvents are purported to develop extracts with interesting phytochemical fingerprints and biological activities. Given the interest in flavonoids from Chenopodium quinoa Willd. leaves, an efficient "green" extraction method was developed by investigating eight NADESs with defined molar ratios, i.e., malic acid-choline chloride (chcl)-water (w

This study investigated the effects of pentacyclic triterpene saponins from Chenopodium quinoa Willd. on insulin resistance (IR). Six saponin monomers (C1-C6) were isolated using semi-preparative liquid chromatography. In the T2DM zebrafish model, these compounds reduced the level of glucose, TC, TG, LDL-C, ALT, and AST, while increasing the level of HDL-C. They exerted antioxidant effects by enhancing GSH and SOD activities and reducing MDA levels. Histological analysis revealed restored liver morphology and reduced liver injury. Among the six compounds, C1, C4, and C5 demonstrated particular

BACKGROUND: Hyperlipidemia is characterized by abnormally elevated blood lipids. Quinoa saponins (QS) have multiple pharmacological activities, including antitumor, bactericidal and immune-enhancing effects. However, the lipid-lowering effect and mechanisms of QS in vivo have been scarcely reported.
METHODS: The effect of QS against hyperlipidemia induced by high-fat diet in rats was explored based on gut microbiota and serum non-targeted metabolomics.
RESULTS: The study demonstrated that the supplementation of QS could reduce serum lipids, body weight, liver injury and inflammation. 16S rRN

Soil salinity is a major environmental constraint that severely limits the growth and nutritional yield of Chenopodium quinoa Willd. Although metal-organic frameworks (MOFs) show strong potential in agricultural settings, hybridizing them with biopolymers facilitates application under environmental conditions. This study aimed to develop a novel biostimulant by synthesizing chitosan-encapsulated mono-metallic (Zn-MOF) and di-metallic (Zn/Ca-MOF) frameworks and evaluating their efficacy in quinoa under saline field conditions. The composites were synthesized and characterized for their structur

Chenopodium quinoa Willd. is a betalainic crop with remarkable tolerance to extreme environmental conditions. Despite numerous varieties grow at high altitudes, where UV-B radiation is intense, research on the effects of UV-B stress on this and related species is very scarce. In the present work we aimed to determine whether UV-B radiation induces the production of betalains, and evaluated the role of these pigments and other key antioxidants in preventing oxidative damage, in seedlings of C. quinoa (ecotypes CICA and Villarrica) and its close relative C. berlandieri Moq., grown in darkness an

Quinoa (Chenopodium quinoa willd.) is an annual herbaceous flowering plant showing appropriate nutritional and functional properties due to its high quality protein with a wide amino acid spectrum, particularly rich in lysine. The mature quinoa seed predominantly consists of 11S-type globulin called chenopodin, comprising about 37% of the total protein, and also 2S albumin accounting for 35% of the seed protein both stabilized through disulfide bridges. Moreover, quinoa seed contains low concentration of prolamins (0.5-7% of total protein) making it suitable for patients with celiac disease. D

Quinoa (Chenopodium quinoa Willd.) seedlings are nutrient-dense leafy vegetables, but their inherent bitterness and astringency limit consumer acceptance. The chemical basis underlying these sensory attributes remains largely unclear. In this study, four quinoa seedling varieties differing in seed coat colour were evaluated using electronic tongue analysis in combination with comprehensive metabolomics. Among the detected flavor attributes, bitterness and astringency were the most prominent in the four identified quinoa seedling varieties. Meanwhile, 2060 metabolites were identified across the

Quinoa (Chenopodium quinoa) is an emerging leafy vegetable and microgreen crop rich in health-promoting flavonoids, yet the regulatory mechanisms linking light perception to early metabolic adaptation remain unclear. Here, we integrated phenotypic, transcriptomic, metabolomic, and molecular analyses to investigate early de-etiolation responses in quinoa seedlings. Short-term light exposure rapidly promoted seedling establishment and induced transcriptional programs associated with photosynthesis, carbon metabolism, hormone signaling, and flavonoid biosynthetic gene expression, whereas metaboli
