Maternal dietary exposure to selenium nanoparticle led to malformation in offspring.

Selenium (Se) is an essential element and its biological activity is related to its speciation. It is also well-known that in excess it can cause teratogenesis in fish and birds. In this study we compared dietary toxicity of elemental selenium nanoparticles (SeNPs) with selenite and selenomethionine (Se-Met). Japanese medaka (Oryzias latipes) was used as a laboratory model to determine Se effects on adults and their offspring. Adult females were individually exposed using a dry diet fortified with 0, 10 or 20 µg/g of the three Se species for 7 days and then allowed to breed for 3 days. Fertili

Serum alkylresorcinols as biomarkers of dietary gluten exposure in coeliac disease.

BACKGROUND: Therapy for coeliac disease (CD) mainly relies on following a gluten-free diet (GFD); however, a serum marker for gluten intake has yet to be established. AIM: To evaluate the utility of alkylresorcinol concentrations for detecting gluten intake in studies of human and mouse. METHODS: Alkylresorcinol concentrations were compared among treated patients with coeliac disease (n = 34), untreated coeliac disease patients (n = 36) and controls (n = 33). Furthermore, seven additional coeliac disease patients whose serum samples were available at diagnosis and after GFD were evaluated. I

Dietary exposure to nitrite and nitrosamines and risk of nasopharyngeal carcinoma in Taiwan.

Previous studies of nasopharyngeal carcinoma (NPC) have found elevated risks with higher consumption of salted fish and preserved foods, particularly during childhood. These foods can contain high levels of nitrosamines; however, most studies have not estimated exposure to nitrosamines directly. We conducted a case-control study in Taiwan to evaluate dietary intakes and NPC risk. A total of 375 cases (99% response rate) and 327 controls (88% response rate) were interviewed about their diet as an adult and at age 10 using a food-frequency questionnaire. We interviewed mothers of participants ab

Reducing Dietary Sodium Exposure in Chronic Kidney Disease: Challenges and Opportunities.

Over 750 million individuals worldwide experience chronic kidney disease (CKD), which is a major contributor to cardiovascular disease and kidney failure as well as increased morbidity and mortality. Diet is a key lifestyle factor in CKD risk prevention and management. Overall public dietary quality and sodium intake have shown limited improvement despite decades of public health efforts. Excessive sodium consumption is a challenging dietary risk factor because exposure is largely passively embedded within the modern food environment. Furthermore, the consequences of overconsumption of dietary

Dietary exposure to brominated flame retardants and abnormal Pap test results.

OBJECTIVE: This study examined a possible association of dietary exposure to polybrominated biphenyls (PBBs), a brominated flame retardant, and self-reported abnormal Pap test results and cervical dysplasia as a precursor to cervical cancer. METHODS: Women in Michigan who ingested contaminated poultry, beef, and dairy products in the early 1970s were enrolled in a population-based cohort study in Michigan. Serum PBB and serum polychlorinated biphenyl (PCB) concentrations were measured. Reproductive history and health information, including Pap test results, were self-reported by participants.

Neonicotinoids in solanaceous vegetables from Ningbo, China, and dietary exposure risk.

Neonicotinoid insecticides are widely detected in vegetables, raising concerns regarding chronic dietary exposure. The present study quantified 7 neonicotinoids in 178 solanaceous vegetable samples (tomato, chilli pepper, eggplant, pimiento, and cherry tomato) collected from Ningbo, China, using HPLC-MS/MS. Cumulative exposure was evaluated by applying relative potency factors method, with imidacloprid as the reference compound. All target analytes were detected, with imidacloprid exhibiting the highest mean residue level of 18.8 µg/kg, with a detection frequency of 44.9%. Although individual

Prioritising relevant polychlorinated naphthalene (PCN) congeners for human dietary exposure studies.

Following a decline in the production and use of polychlorinated naphthalenes (PCNs) and the restrictions introduced by the Stockholm Convention, dietary intake represents the most significant pathway of human exposure to these dioxin-like contaminants. PCNs occur ubiquitously in foods, originating from the legacy of historical production that is now globally redistributed, as well as from ongoing industrial and domestic combustion sources which have a stronger influence on occurrence patterns in countries where they were not produced. Recent studies have benefited from a wider set of availabl

Dietary selenium protects against selected signs of aging and methylmercury exposure.

Acute or short-term exposure to high doses of methylmercury (MeHg) causes a well-characterized syndrome that includes sensory and motor deficits. The environmental threat from MeHg, however, comes from chronic, low-level exposure, the consequences of which are poorly understood. Selenium (Se), an essential nutrient, both increases deposition of mercury (Hg) in neurons and mitigates some of MeHg's neurotoxicity in the short term, but it is unclear whether this deposition produces long-term adverse consequences. To investigate these issues, adult Long-Evans rats were fed a diet containing 0.06 o

Seafood resistome across trophic levels: Tissue patterns, drivers, and potential dietary exposure.

Antibiotic resistance genes (ARGs) are recognized as emerging contaminants relevant to human exposure. They are widespread in seafood, but their distribution across trophic levels and tissues remains unclear. We analyzed 43 metagenomes covering five marine trophic levels, from seawater plankton to obligate piscivores, and examined muscle, gill, and viscera samples. Multidrug, tetracycline, bacitracin, and β-lactam genes together accounted for about 70% of total relative ARG abundance. ARG richness, diversity, and abundance increased with trophic level. In higher trophic taxa, edible muscle con

Dietary Microplastic Exposure in Athletes: Implications for Metabolism, Gut Health, and Performance.

Microplastics (MPs) are emerging environmental contaminants increasingly detected in foods, beverages, and food-contact materials, making dietary intake a relevant route of human exposure. In sports nutrition, this issue may be particularly important because athletes often have high food and fluid consumption, frequent use of packaged sports nutrition products, dietary supplements, bottled beverages, and sport-specific hydration strategies. This narrative review, supported by a structured literature search, examines dietary MP exposure and its potential relevance to gastrointestinal function,

How Gut Microbes Transform Dietary Phytonutrients: Enzymatic Pathways and Human Metabolite Exposure.

Compounds identified in plant foods are often not the species that reach human tissues. Glycosides, tannins and incompletely absorbed aglycones enter the colon, where gut microorganisms hydrolyse, reduce, cleave, demethylate or dehydroxylate them. This critical narrative review examines pathways resolved beyond taxonomic association: daidzein-to-S-equol conversion; cooperative urolithin and enterolignan formation; flavone reduction and C-ring cleavage; stereoselective catechin metabolism; glucosinolate activation; and transformations of resveratrol and hydroxycinnamate-derived metabolites. An engineered gut bacterium protects against dietary methylmercury exposure in pregnant mice.

Despite efforts to decrease mercury emissions, chronic exposure to the neurotoxicant methylmercury (MeHg) continues to be a global problem that contributes to disparities in risk for neurological and metabolic diseases. Herein we engineer a human commensal gut bacterium, Bacteroides thetaiotaomicron (Bt), to detoxify MeHg by heterologous expression of organomercury lyase (MerB) and mercuric reductase (MerA) genes derived from a resistant bacterium isolated from Hg-polluted mines. We demonstrate that BtmerA/B demethylates MeHg both in vitro and within the intestines of mice orally exposed to Me

Dietary exposure to thyroid disrupting chemicals: a community-based study in Canada.

The marine ecosystem around the Island of Newfoundland is contaminated by thyroid disrupting chemicals (TDCs). Coastal inhabitants may be exposed to TDCs through consumption of contaminated local seafood products and affecting thyroid functions. The aim of this study was to explore: (1) consumption frequency of local seafood products consumed by rural residents, (2) thyroid hormones (THs) and TDCs concentrations in residents, (3) relationships between local seafood consumption, TDC concentrations, and THs. Participants (n = 80) were recruited from two rural Newfoundland communities. Seafood co

Antibiotics in Raw Meat Samples: Estimation of Dietary Exposure and Risk Assessment.

The extensive use of antibiotics in livestock farming poses increased concerns for human health as residues of these substances are present in edible tissues. The aim of this study was the determination of the levels of four groups of antibiotics (sulfonamides-SAs, tetracyclines-TCs, streptomycines-STr and quinolones-QNLs) in meat samples (muscles, livers and kidneys from beef, chicken and pork) and the estimation of the dietary exposure to antibiotics from meat consumption and the potential hazard for human health. Fifty-four samples of raw meat were randomly collected in 2018 from the Cretan

Dietary exposure to potentially toxic elements through sushi consumption in Catalonia, Spain.

Although sushi is considered as a healthy food, it can also be a route of exposure to chemical contaminants such as potentially toxic trace elements. In this study, we analysed the concentration of Cd, I, Ni, Pb and total Hg, as well as iAs and MeHg in sushi samples. Iodine levels were higher in samples containing seaweed, while iAs concentrations were greater in rice-containing sushi. In turn, total Hg and MeHg were significantly higher in sushi samples with tuna. Health risks of sushi consumption were assessed for three population groups: children, adolescents and adults. Considering an aver

No detectable changes in crayfish behavior due to sublethal dietary mercury exposure.

Mercury, and particularly its organic form, methylmercury (MeHg), is a ubiquitous environmental contaminant with documented dosage-dependent adverse effects on endpoints spanning many levels of biological organization. However, relatively little is known about the sublethal impacts of environmentally-relevant exposures on behavioral characteristics that may impact predator-prey relationships, and thus the potential for Hg bioaccumulation within food webs due to behavioral impairments. This study investigated the potential for dietary mercury exposure to impair two behavioral outcomes in the hi

Prenatal Exposure to Nitrosatable Drugs, Dietary Intake of Nitrites, and Preterm Birth.

Prenatal exposure to nitrosatable drugs, including secondary or tertiary amines, has been associated with preterm birth. Associations may be accentuated by higher intakes of dietary nitrites because of the increased formation of N-nitroso compounds. Using data from mothers of babies without major birth defects (controls) from the National Birth Defects Prevention Study, we examined the relationship between nitrosatable drug exposure in conjunction with dietary nitrite intake and preterm birth among 496 mothers of preterm infants and 5,398 mothers with full-term deliveries in 1997-2005. Dietary Nutrient Intake in School-Aged Children With Heavy Prenatal Alcohol Exposure.

BACKGROUND: Nutrition is an important factor that affects brain development. Nutritional deficiencies can exacerbate alcohol's damaging effects. Conversely, nutritional supplementation can serve a protective role against alcohol damage and may prove to be a worthwhile intervention strategy. This study investigated dietary intake in school-aged children with heavy prenatal alcohol exposure to understand their nutritional status, compared to a national sample of typically developing children and Dietary Reference Intakes. METHODS: Dietary intake data were collected from children with confirmed
