Zygosaccharomyces bailii: A Promising Probiotic Candidate for Functional Food Development.

The growing interest in functional foods is accompanied by the need to select new probiotic microorganisms. Artisanal fermented foods serve as excellent sources for identifying probiotics, particularly yeasts. In this work, two strains isolated from kombucha were identified: Zygosaccharomyces bailii (UVI60) and Z. lentus (UVI61). Strain UVI61 did not grow at 37 °C, so the evaluation of probiotic properties was carried out with strain UVI60. Z. bailii UVI60 showed excellent survival (98%) under adverse conditions involving synthetic gastric and duodenal juices. The self-aggregation capacity (97

[Food Ingredients and Hygiene: Exploring the Functions of Food Ingredients Through Hygiene Studies].

Hygiene is a field of study that aims to "protect health" and "protect lifestyle" of people from external factors such as bacteria, poor nutrition, and toxic chemicals, as well as internal factors such as lifestyle and stress. In the early days of hygiene science in Japan, the results of nutritional epidemiology research by Dr. Kanehiro Takaki, a naval doctor who studied medicine in Kagoshima, on the prevention of beriberi, a national disease at the time, were highly regarded internationally. Since then, hygiene research on food ingredients has been vigorously pursued to expand from basic rese

Functional food packaging for reducing residual liquid food: Thermo-resistant edible super-hydrophobic coating from coffee and beeswax.

Edible super-hydrophobic coatings have attracted great attentions as they can avoid the waste of liquid foods, such as honey and milk, adhered to the inside of containers. However, the poor thermal stabilities of edible super-hydrophobic coatings restrict their applications. In this work, a thermo-resistant edible super-hydrophobic coating has been fabricated using beeswax and coffee, which are approved by U.S. Food and Drug Administration. This coating surface has the similar micro/nanoscale structure to that of the leaf surface. A variety of liquid foods can freely roll on this coating surfa

Dietary Microbial Polysaccharides in Food Systems: Production, Functional Properties, and Applications.

Microbial polysaccharides are structurally diverse biopolymers produced by bacteria, fungi, yeasts, and algae, functioning as extracellular matrices and/or intracellular carbon reserves depending on the organism and growth conditions. Among them, microbial exopolysaccharides (EPSs) have attracted substantial interest because their tunable architectures confer desirable techno-functional attributes alongside emerging biofunctional potential. This review synthesizes recent advances in EPS research with emphasis on how microbial origin, biosynthetic routes, and glycosidic linkage patterns shape h

Food choice as a key management strategy for functional gastrointestinal symptoms.

Recognition of food components that induce functional gut symptoms in patient's functional bowel disorders (FBD) has been challenging. Food directly or indirectly provides considerable afferent input into the enteric nervous system. There is an altered relationship between the afferent input and perception/efferent response in FBD. Defining the nature of food-related stimuli may provide a means of minimizing such an input and gut symptoms. Using this premise, reducing the intake of FODMAPs (fermentable oligo-, di-, and mono-saccharides and polyols)--poorly absorbed short-chain carbohydrates th

Fruit Seeds with Functional Applications: From Food Waste to Potential Uses.

Significant amounts of food waste come from fruit processing, causing economic and environmental impacts. The waste generated is a valuable source of compounds due to its concentration of nutrients, such as dietary fiber, vitamins, minerals, lipids with mono- and polyunsaturated fatty acids, and bioactive compounds. Despite the nutritional and functional qualities of the waste, it is still commonly discarded and underutilized, demonstrating the importance of studying it. The selected fruits described in this study are widely consumed by various populations around the world and are used at an i

Pigmented cereals as functional food systems: Linking phytochemistry, processing, and health.

This review combines the chemistry, processing and health-related aspects of anthocyanins in a single structure-processing function paradigm, limited to wheat, rice and maize, and evaluates the in vitro to human evidence in a logical framework. These compounds exhibit cereal-specific structural signatures: cyanidin-3-glucoside predominates across cereals like wheat, while maize displays the most complex glycosylation and acylation patterns. Preclinical and limited human evidence link pigmented cereal consumption to improved glycemic modulation (via inhibition of carbohydrate-digesting enzymes)

Functional expression mechanisms of food-derived components based on target proteins.

Food-derived polyphenols and some alkaloids have reported bioactivities related to the prevention of systemic metabolic disorders such as obesity, glucose intolerance, and dyslipidemia. For food-derived components to exert their functions in vivo, it is essential to interact with biological factors such as proteins, lipids, and nucleic acids. However, it is still unclear whether bioactive components in foods express functions related to their target factors. In this review, I introduce the target proteins in which food-derived components express functions in cells.

Phytosterols as functional food ingredients: linkages to cardiovascular disease and cancer.

PURPOSE OF REVIEW: To examine experimental evidence that has examined association of phytosterols and the reduction of the risk of cardiovascular disease and cancer. RECENT FINDINGS: Phytosterols exist as naturally occurring plant sterols that are present in the nonsaponifiable fraction of plant oils. Phytosterols are plant components that have a chemical structure similar to cholesterol except for the addition of an extra methyl or ethyl group; however, phytosterol absorption in humans is considerably less than that of cholesterol. In fact, phytosterols reduce cholesterol absorption, althoug

Vitamin C and the role of citrus juices as functional food.

The literature on the content and stability of vitamin C (ascorbic acid, AA) in citrus juices in relation to industrial practices is reviewed. The role of vitamin C from citrus juices in human diet is also reviewed. Citrus fruits and juices are rich in several types of bioactive compounds. Their antioxidant activity and related benefits derive not only from vitamin C but also from other phytochemicals, mainly flavonoids. During juice processing, temperature and oxygen are the main factors responsible for vitamin C losses. Non-thermal processed juices retain higher levels of vitamin C, but econ
