Microbial and Metabolic Dynamics during Fermentation of Vinegar with Rye Bread.

Vinegar is a widely consumed acidic fermented product prepared from diverse raw materials. In this study, we investigated vinegar fermentation using rye bread as a substrate, focusing on the comparative dynamics of spontaneous and backslopping fermentation. Two fermentation batches were produced, each in triplicate. One batch was subjected to spontaneous fermentation, while the other was inoculated with a starter culture via backslopping. The pH, microbial communities, and metabolite profiles were analyzed at various stages of fermentation to characterize the fermentation process. In both batc

Bacterial Cellulose Production, Characterization, and Its Use as a Membrane Filter for Microorganism.

The aim of this study was to investigate the usability of bacterial cellulose (BC) produced by Gluconacetobacter xylinus NRRL B-759 (Komagataeibacter xylinus) as a membrane filter and to determine the shortest incubation time for obtaining the BC membrane with an effective removal capacity. BC production of this bacterium was found to be dependent on incubation time (day), and the properties of the membranes produced on each day were then examined in detail. BC formed on the third day showed a suitable peak structure and ideal formation of the cellulose structure, as determined by FTIR and X-r

Targeted Vaginal Microbiome Modulation by Postbiotic Intervention Reduces Dysbiosis-Associated Pathogens in Infertile Women: A Pilot Study.

BACKGROUND: Vaginal dysbiosis characterized by depleted Lactobacillus populations is associated with impaired fertility outcomes in women undergoing assisted reproduction. Postbiotic interventions delivering antimicrobial peptides without live bacteria may offer targeted microecological modulation while preserving community stability. We investigated the microbial and clinical effects of an eight-week antimicrobial peptide-based postbiotic in infertile women. METHODS: Fifteen infertile women (mean age 38.7 ± 4.1 years) with ≥ 2 prior in vitro fertilization failures received intravaginal postb

Mechanisms of cyclic-di-GMP signaling in bacteria.

Cyclic-di-GMP is a ubiquitous second messenger in bacteria. The recent discovery that c-di-GMP antagonistically controls motility and virulence of single, planktonic cells on one hand and cell adhesion and persistence of multicellular communities on the other has spurred interest in this regulatory compound. Cellular levels of c-di-GMP are controlled through the opposing activities of diguanylate cyclases and phosphodiesterases, which represent two large families of output domains found in bacterial one- and two-component systems. This review concentrates on structural and functional aspects o

Bacterial cellulose membranes used as artificial substitutes for dural defection in rabbits.

To improve the efficacy and safety of dural repair in neurosurgical procedures, a new dural material derived from bacterial cellulose (BC) was evaluated in a rabbit model with dural defects. We prepared artificial dura mater using bacterial cellulose which was incubated and fermented from Acetobacter xylinum. The dural defects of the rabbit model were repaired with BC membranes. All surgeries were performed under sodium pentobarbital anesthesia, and all efforts were made to minimize suffering. All animals were humanely euthanized by intravenous injection of phenobarbitone, at each time point,

Hybrid Silver-Containing Materials Based on Various Forms of Bacterial Cellulose: Synthesis, Structure, and Biological Activity.

Sustained interest in the use of renewable resources for the production of medical materials has stimulated research on bacterial cellulose (BC) and nanocomposites based on it. New Ag-containing nanocomposites were obtained by modifying various forms of BC with Ag nanoparticles prepared by metal-vapor synthesis (MVS). Bacterial cellulose was obtained in the form of films (BCF) and spherical BC beads (SBCB) by the Gluconacetobacter hansenii GH-1/2008 strain under static and dynamic conditions. The Ag nanoparticles synthesized in 2-propanol were incorporated into the polymer matrix using metal-c

Toxicity of therapeutic contact lenses based on bacterial cellulose with coatings to provide transparency.

Therapeutic contact lenses were developed from bacterial cellulose (BC) by the Institute of Chemistry at Brazil's São Paulo State University (UNESP). In a previous study, cyclodextrins (CD) and medications such as ciprofloxacin (CP) and diclofenac sodium (DS) were incorporated into the lenses to provide therapeutic properties and control drug release. However, significant opacity was seen in the material inherent to cellulose. In order to achieve full material transparency, the lenses were coated with an organic-inorganic hybrid compound containing aluminum alkoxide and glycidoxypropyltrimetho

DETC-based bacterial cellulose bio-curatives for topical treatment of cutaneous leishmaniasis.

The treatment of leishmaniasis still relies on drugs with potentially serious adverse effects. Herein, we tested a topical formulation of bacterial cellulose (BC) membranes containing Diethyldithiocarbamate (DETC), a superoxide dismutase 1 inhibitor. Leishmania-infected macrophages exposed to BC-DETC resulted in parasite killing, without pronounced toxic effects to host cells. This outcome was associated with lower SOD1 activity and higher production of superoxide and cytokine mediators. Topical application of BC-DETC significantly decreased lesion size, parasite load and the inflammatory resp

Perspective Applications and Associated Challenges of Using Nanocellulose in Treating Bone-Related Diseases.

Bone serves to maintain the shape of the human body due to its hard and solid nature. A loss or weakening of bone tissues, such as in case of traumatic injury, diseases (e.g., osteosarcoma), or old age, adversely affects the individuals quality of life. Although bone has the innate ability to remodel and regenerate in case of small damage or a crack, a loss of a large volume of bone in case of a traumatic injury requires the restoration of bone function by adopting different biophysical approaches and chemotherapies as well as a surgical reconstruction. Compared to the biophysical and chemothe
