Unraveling the probiotic evidence: how Lactobacillus pentosus from fermented vegetables alleviates colitis by enlisting muribaculum to boost host phosphatidylcholine biosynthesis.

Probiotic-based modulation of the intestinal microenvironment is a key therapeutic strategy for inflammatory bowel disease (IBD). Lactobacillus pentosus (Lbp), a dominant bacterium in fermented vegetables, exhibits strong potential for regulating gut homeostasis. This study found through database mining that the abundance of Lbp was significantly reduced in IBD patients. A superior Lbp strain was screened from fermented vegetables, and in a mouse model of colitis, oral administration of Lbp repaired the intestinal barrier and rebalanced inflammatory cytokines. Multi omics analysis revealed tha

Saccharomycopsis fibuligera solid-state fermentation of wheat bran for glutathione enrichment and functional improvement.

Wheat bran (WB) is an abundant and low-cost cereal by-product, but its compact cell-wall structure and high levels of anti-nutritional factors limit its high-value utilization. In this study, a GSH-producing Saccharomycopsis fibuligera strain K2 with broad extracellular hydrolytic activities was selected for wheat bran biotransformation, and its glutathione (GSH)-producing capacity was further enhanced by atmospheric and room-temperature plasma (ARTP) mutagenesis. The resulting mutant 1-7 produced 29.57% more GSH than the parental strain K2 and was subsequently applied to WB solid-state fermen

Screening of lactic acid bacteria for their potential use as aromatic starters in fermented vegetables.

Lactic acid fermentation is a traditional process to preserve foods and to modify their organoleptic properties. This process is generally conducted in a spontaneous way, allowing indigenous lactic acid bacteria (LAB) of the matrix and of the environment to compete and grow. The aim of this study was to better characterise LAB strains ability to modify aroma profiles in fruit and vegetable matrices, by focusing on two key enzymatic activities: β-glucosidase and alcohol dehydrogenase (ADH). Firstly, 200 LAB isolated from Cambodian and Vietnamese fermented foods were screened for their β-glucosi

BLAB2CancerKD: a knowledge graph database focusing on the association between lactic acid bacteria and cancer, but beyond.

In a broad sense, lactic acid bacteria (LAB) is a general term for Gram-positive bacteria that can produce lactic acid by utilizing fermentable carbohydrates. It is widely used in essential fields such as industry, agriculture, animal husbandry and medicine. At the same time, LAB are closely related to human health. They can regulate human intestinal flora and improve gastrointestinal function and body immunity. Cancer, a disease in which some cells grow out of control and spread to other body parts, is one of the leading causes of human death worldwide. In recent years, the potential of LAB i
