Optimization and fractional characterization of exopolysaccharides produced by Leuconostoc mesenteroides subsp. jonggajibkimchii obtained from Kanji and their utilization in vitamin D nanoemulsion-fortified yogurt as stabilizers.

Bacterial polysaccharides are significant substitutes for plant polysaccharides in fermented foods and have a potential role in drug delivery systems, especially for lipophilic compounds. Several studies have focused on optimizing fermentation parameters to enhance exopolysaccharide production. The present study aimed to optimize the fermentation conditions for exopolysaccharide production from Leuconostoc mesenteroides subsp. jonggajibkimchii NCCP 961 obtained from the fermented Daucus carota drink "Kanji". The composition of the medium was optimized using the Plackett-Burman design and centr…

Leuconostoc, a masquerading pathogen in oral cancer patient: A rare case report.

Osteoradionecrosis is the most common cause of mandibular osteomyelitis. Here we are reporting a case of osteomyelitis of the mandible caused by Leuconostoc mesenteroides spp cremoris. The frequency of Leuconostoc infections are under reported mainly due to its difficult identification. Non pathogenic organism like leuconostoc can cause infection in the immunocompromised and should warrant proper microbial identification and adequate targeted treatment to manage the patients.

Detection of the Potential Inactivation of Tetrodotoxin by Lactic Acid Bacterial Exopolysaccharide.

Screening for compounds that can neutralize the toxicity of tetrodotoxin (TTX) or reduce its negative effects is necessary. Our study tested the TTX detoxification capacity of exopolysaccharide (EPS) extracted from lactic acid bacteria. EPS of Leuconostoc mesenteroides N3 isolated from the Vung Tau sea (Vietnam), Lactobacillus plantarum PN05, and Lactobacillus rhamnosus PN04 were used in the study. To more completely evaluate the importance of EPS in detoxification, EPS samples of Leuconostoc mesenteroides N3, Lactobacillus plantarum PN05 and Lactobacillus rhamnosus PN04 were also tested. The …

Diversity recovery and probiotic shift of gastric microbiota in functional dyspepsia patients after Helicobacter pylori eradication therapy.

The effects of Helicobacter pylori eradication on gastric mucosa-colonizing microbes in patients with functional dyspepsia (FD) remain unclear. Here, we explored microbial variation induced by H. pylori infection and eradication treatment in FD patients. Gastric microbial abundance and diversity were significantly reduced in the H. pylori-infected FD patients. Eradication treatment increased alpha and beta diversity of gastric mucosa-colonizing microbes, and promoted the expansion of several probiotic microbes, such as Leuconostoc mesenteroides, which exhibited a matched antagonistic performan…

Occurrence of lactic Acid bacteria during the different stages of vinification and conservation of wines.

We showed that the growth of lactic acid bacteria during alcoholic fermentation depends on the composition of the must. We illustrated how the addition of sulfur dioxide to the must before fermentation and the temperature of storage both affect the growth of these bacteria in the wine. Whereas species of Lactobacillus and Leuconostoc mesenteroides were isolated from grapes and must, Leuconostoc oenos was the only species isolated after alcoholic fermentation. This organism was responsible for the malolactic fermentation. Isolates of this species varied in their ability to ferment pentoses and …

Unlocking phenolic bioactive compounds from olive leaves through lactic acid fermentation.

Olive leaves represent about 10% of the biomass generated during olive oil production and are rich in phenolic compounds with known bioactivity. This study evaluated the effect of fermentation with six lactic acid bacteria (LAB) strains on the release of phenolic compounds with antioxidant and antidiabetic activities in leaves from the 'Picual' cultivar. LAB survival was strain-dependent and influenced by specific phenolics. Fermentation with selected LAB significantly increased key compounds: oleuropein rose by up to 55% with Pediococcus acidilactici and 28% with Leuconostoc mesenteroides, wh…

Validation of a predictive model for growth of gas-producing Leuconostoc spp. in MA-packed deli-meat.

Microbial gas formation by heterofermentative Leuconostoc spp. is a major cause of package bulging and food waste in modified-atmosphere (MA) packed deli-meats. This study identified the specific spoilage organisms associated with bulging in commercial products, developed a secondary growth model for Leuconostoc spp. in heat-treated MA-packed deli-meat and linked Leuconostoc growth to CO2 accumulation and bulging as a function of packaging material. Bulging retail products (n = 28) were collected from Danish supermarkets and characterised for headspace gas, pH, aerobic viable counts and microb
