Meat Consumption in Relation to Colorectal Cancer Incidence in Anatomical Subsites in the National Institutes of Health-AARP Diet and Health Study.

BACKGROUND: In the literature, the consumption of red and processed meat is associated with colorectal cancer (CRC) incidence. It still remains unclear whether the associations of different types of meat intake with CRC vary by subsite of the colorectum. OBJECTIVES: We investigated the association of red, white, and processed meat intakes with CRC incidence across anatomical subsites of the colon and rectum. METHODS: We analyzed data from 454,505 cancer-free adults in the National Institutes of Health-AARP Diet and Health Study cohort. During 6,896,619 person-years of follow-up, 9,461 CRC ca

Disease Outbreak, Health Scare, and Distance Decay: Evidence from HPAI Shocks in Chinese Meat Sector.

Background: During zoonotic disease shocks (ZDSs), zoonotic disease outbreaks (ZDOs) can induce public health scares (PHSs), causing meat price risks (MPRs). Nevertheless, spatial spillovers of zoonotic disease shocks in meat markets remain unclear. We explore how zoonotic disease outbreaks and public health scares locally and spatially spill over to meat price risks, and whether spatial spillovers of public health scares decay with distance. Methods: (i) We construct a long panel covering 30 provinces and 121 months, using highly pathogenic avian influenza (HPAI) epidemics as exogenous shocks

Molecular Characterization of Fluoroquinolone Resistance Mechanisms of Campylobacter Isolates from Duck Meats.

The purpose of this study was to identify the molecular basis of quinolone resistance of Campylobacter isolates recovered from duck meats. Sixty-one isolates from duck meat samples were studied using sequence analysis of the gyrA gene, and PCR assays were used to identify the presence of the CmeABC efflux pump and its restored sensitivity in the presence of efflux-pump inhibitors. High-level resistance to nalidixic acid and ciprofloxacin was attributed to amino acid substitutions Thr-86-Ile in some isolates. The PCR assay confirmed the presence of the cmeB gene in 29 (47.5%) of the 61 Campylob

Unlocking the potential of forage fish to reduce the global burden of disease.

Red meat consumption is associated with an elevated risk of mortality from non-communicable diseases (NCDs). In contrast, forage fish, as highly nutritious, environmentally friendly, affordable, and the most abundant fish species in the ocean, are receiving increasing interest from a global food system perspective. However, little research has examined the impact of replacing red meat with forage fish in the global diet on diet-related NCDs.MethodsWe based our study on datasets of red meat projections in 2050 for 137 countries and forage fish catches. We replaced the red meat consumption in ea

Replacing meat and dairy with plant-based alternatives in the Netherlands: trade-offs in environmental impacts and critical nutrient intake.

BACKGROUND: Plant-based protein sources are promoted as more sustainable alternatives to animal-based protein sources. The Dutch policy aims for 50% of dietary protein to come from plants, yet comprehensive evidence on the environmental and nutritional impacts of this transition is limited. We examined these impacts in the Dutch diet. METHODS: Dietary intake data from Dutch adults (18–65 years) in the 2019–2021 National Food Consumption Survey served as the reference diet, derived separately for men (n = 585) and women (n = 600). Four replacement scenarios—“no meat and dairy”, “no meat”, “half

Mycotoxins and plant alkaloids in plant-based protein foods and meat alternatives: Occurrence, exposure and risk assessment.

Plant-based protein-rich foods and meat alternatives are increasingly used as substitutes or supplements to animal-based products. Despite their potential nutritional and environmental benefits, data on their contamination with natural toxins remain limited, particularly for plant alkaloids. In this study, 57 mycotoxins, 16 tropane alkaloids and 32 pyrrolizidine alkaloids were analysed in 101 plant-based protein samples, including protein isolates/concentrates, extruded products, veggie burgers and other meat alternatives, using U-HPLC-HRMS/MS. Twenty-five mycotoxins and eight alkaloids were q

Optimization of the Meat Flavoring Production Process for Plant-Based Products Using the Taguchi Method.

The development of plant-based meat substitutes is imperative for reducing animal fat intake and promoting dietary diversification. However, the flavor profiles of these products frequently fall short of consumer expectations. This study sought to optimize the production process of meat flavorings for plant-based products using the Taguchi method. The study investigated the effects of sugar type, concentration, and reaction temperature on the Maillard reaction products, sensory characteristics, and volatile organic compounds. The thermal process flavors were obtained from the flavor precursor

Potential of Berry Fruit Pomace for Application in Processed Meat as Natural Alternative to Nitrates and Nitrites.

In recent years, increasing attention has been paid to limiting the use of nitrates and nitrites in meat products due to concerns regarding their potential health implications. Despite their important technological role in ensuring microbiological safety, oxidative stability, and the development of sensory characteristics of meat products, their use raises health concerns among consumers. These concerns are primarily associated with the potential formation of N-nitrosamines, some of which have been classified possible human carcinogens. In this context, there is growing interest in natural fun

A combination of two variants in PRKAG3 is needed for a positive effect on meat quality in pigs.

BACKGROUND: Color and pH of meat measured 24 h post mortem are common selection objectives in pig breeding programs. Several amino acid substitutions in PRKAG3 have been associated with various meat quality traits. In our previous study ASGA0070625, a SNP next to PRKAG3, had the most significant association with meat quality traits in the Finnish Yorkshire. However, the known amino acid substitutions, including I199V, did not show any association. The aims of this study were to characterize further variation in PRKAG3 and its promoter region, and to test the association between these variants

Molecular properties of plant-based proteins for alternative protein.

Alternative proteins, or alt proteins, are proteins obtained from non-animal sources like plant sources, meat cultured in labs, and other sources like fungi and insects. These contain a variety of benefits and are gaining popularity worldwide. Some chronic diseases require a low-red-meat diet, which can be fulfilled through alternative proteins, providing similar benefits to those of animal-based proteins. This chapter deals with the sustainability aspect of using alternative proteins. A sustainable protein refers to a protein that is efficient in terms of health benefits, taste, environmental

The microbial contaminants of plant-based meat analogues from the retail market.

The aim of the study was to analyse the key microbial contaminants of plant-based meat analogues (PBMA) from retail. A total of 43 samples of PBMAs (12 frozen/31 chilled) in the "ready-to-cook" category, such as hamburgers, meatballs or breaded imitation steaks were purchased in retail stores in the Czech Republic in summer (n = 21) and autumn 2022 (n = 22). The detected indicator bacteria (total viable count, lactic acid bacteria, Enterobacteriaceae, yeasts, moulds) had relatively low values in the analysed PBMA samples and only rarely reached levels of 7 log CFU/g. Protein digestibility and iron bioaccessibility of plant-based meat analogues.

Understanding the nutritional quality of plant-based meat alternatives (PBMAs) is important for consumers, manufacturers, and health professionals. This study examined nine commercial PBMAs, focusing on protein digestibility and iron dialyzability. In vitro protein digestibility ranged from 81 to 96%, comparable to meat (86-90%), and was highest in protein concentrates and isolates (97-99%). Extrusion conditions (150-750 rpm, 100-160 °C) had minimal impact on digestibility but significantly affected texture and sensory properties. Dialysable iron in PBMAs was lower (2-5%) than in fungi-based p

Introduction to alternative proteins.

Currently, one-third of the global grain supply is utilized as animal feed that eventually leads to global food shortage and increased food demand. A shift towards alternative proteins (APs) has several benefits which could assist in access expansion towards dietary protein and staple crop price reduction. Alternative proteins thus present a sustainable solution towards global food security. This chapter provides a comprehensive overview of alternative proteins, detailing their various types such as plant-based, microbial, insect-derived, and cultured meat proteins. It delves into the structur

A systematic review of consumer responses to meat alternative labeling.

Meat alternatives have gained popularity. However, there is ongoing debate over labeling requirements for these products. This systematic review collected and summarized recent research on how meat alternative name labeling affects consumer responses. The results indicate that meat-related labels significantly impact consumer responses. Using "meat" on cell-cultured meat labels increases confusion, while replacing it with "protein" may reduce confusion. Plant-based meat labels using meat-related terms generally cause little confusion and have minimal effects on purchasing decisions but may sli

Effects of Plant Substitutes for Nitrite on the Technological Characteristics of Fermented Sausages: A Comprehensive Review.

Meat and its derivatives stand out as valuable sources of premium proteins, essential B-complex vitamins, and minerals. The processing of raw meat, a common practice for creating diverse products like sausages and hams, traditionally involves the use of curing salts, predominantly sodium nitrates and nitrites These salts confer several advantages, encompassing color stabilization, inhibition of spoilage-causing microorganisms such as Clostridium perfringens, Clostridium botulinum, and enhancement of the final product's flavor and aroma. Despite their benefits, the utilization of curing salts r
