Friction variation in common working areas of fast-food restaurants in the USA.

Friction variation has been related to employees' perception of slipperiness in a field study conducted in fast-food restaurants. However, details of friction variation in actual workplaces have not been reported in the literature. This field study investigated friction variations in 10 fast-food restaurants in the USA. The results indicated that friction reductions in a step exceeding 10% were proportional to the ages of the floor tiles in most restaurants. There were more friction reductions exceeding 10% in the sink areas than the other five areas measured, but all the areas had more than 1

Design of the Focus on Restaurant Engagement to Strengthen Health (FRESH) study: leveraging systems science to work with independently-owned restaurants to increase access to and promotion of healthful foods.

BACKGROUND: High dietary quality can protect against diet-related chronic diseases. In the United States, racial and ethnic minorities and those with lower incomes consistently exhibit lower dietary quality. Independently-owned restaurants are a common prepared food source in minority low-income communities, but there are significant knowledge gaps on how to work with these restaurants to offer healthy food, due to underlying and dynamic complexities associated with providing healthy food options. METHODS: The Focus on Restaurant Engagement to Strengthen Health (FRESH) study addresses this co

Determination of several PFAS groups in food packaging material from fast-food restaurants in France.

Per- and polyfluoroalkylated substances (PFAS) are a large group of toxic compounds which have been widely used in industrial and consumer applications, from where they can migrate into the environment. They can pose a risk to human health because they have been associated with several diseases. To obtain more information on the risk of PFAS in fast food packaging materials, several PFAS (perfluorocarboxylic acids or PFCAs (n = 16), perfluorosulfonic acids or PFSAs (n = 14), and a miscellaneous group constituted by sulfonamides (n = 5) and fluorotelomer phosphate esters or PAPs (n = 5)) were q

Risk factors for transmission of foodborne illness in restaurants and street vendors in Jakarta, Indonesia.

In a previous risk factor study in Jakarta we identified purchasing street food as an independent risk factor for paratyphoid. Eating from restaurants, however, was not associated with disease. To explain these findings we compared 128 street food-vendors with 74 food handlers from restaurants in a cross-sectional study in the same study area. Poor hand-washing hygiene and direct hand contact with foods, male sex and low educational level were independent characteristics of street vendors in a logistic regression analysis. Faecal contamination of drinking water (in 65 % of samples), dishwater

Characteristics and health risk assessment of volatile organic compounds (VOCs) in restaurants in Shanghai.

Volatile organic compounds (VOCs) are important precursors of ozone and atmospheric particulates that have attracted extensive attention worldwide. Cooking emissions, the chemical characteristics of which vary dramatically due to different cooking styles, are a main source of ambient VOCs, especially in large cities. This research focused on the emission characteristics of VOCs from six types of restaurants in Shanghai: hot pot (HP), Sichuan cuisine (SC), Cantonese cuisine (CS), seafood (SF), Western fast food (WFF), and authentic Shanghai cuisine (ASC). It was found that HP, which discharged

Identification of factors associated with foreign substance contamination in restaurant food.

This study identified factors associated with foreign substance contamination in food prepared at restaurants in a district of Seoul. Data from 4,747 registered general restaurants were analyzed using the Hygiene Administration System and the Integrated Food Safety Information System. The dependent variable was the report of foreign substance contamination, and independent variables included owner characteristics (e.g., age group) and restaurant characteristics (e.g., cuisine type). Logistic regression analysis with stepwise selection was performed to identify factors associated with foreign s

An outbreak of salmonellosis associated with duck prosciutto at a Northern Territory restaurant.

In June 2015, an outbreak of salmonellosis occurred among people who had eaten at a restaurant in Darwin, Northern Territory over 2 consecutive nights. We conducted a retrospective cohort study of diners who ate at the restaurant on 19 and 20 June 2015. Diners were telephoned and a questionnaire recorded symptoms and menu items consumed. An outbreak case was defined as anyone with laboratory confirmed Salmonella Typhimurium PT9 (STm9) or a clinically compatible illness after eating at the restaurant. Environmental health officers inspected the premises and collected food samples. We contacted

AIMS: To determine the prevalence and risk factors for contact dermatitis and burns among restaurant, catering and fast-food outlet (FFO) staff. METHODS: Workers were interviewed and then clinical examination and patch and/or prick tests were conducted in select

Restaurant Advertising Expenditure Patterns in US Counties by Race, Ethnicity, and Income.

Recent growth in the share of household dollars spent on food consumed outside the home, in combination with growing obesity disparities, has heightened interest in food advertising by geography and population demographics. This study aimed to identify changes in advertising expenditure by US restaurant chains across counties, grouped by income, race, and ethnicity, specifically examining whether the lowest income and highest percentage of Black and Hispanic/Latino residents are disproportionately impacted by these trends. Using expenditure and location data for the top-100 grossing US restaur

The Impact of Restaurant Menu Eco Labels on Consumer Meal Selections: An RCT.

INTRODUCTION: Food systems account for ∼30% of the greenhouse gas emissions that contribute to climate change. Climate labels on restaurant menus may help consumers decrease their food-related climate impact and improve meal nutrition given that environmentally sustainable diets are also healthier. This study evaluated the degree to which different climate labels promoted healthier and lower climate impact food choices. STUDY DESIGN: This was an online RCT conducted in 2024, analyzed in 2025. SETTING/PARTICIPANTS: A national sample of 6,221 adults benchmarked to the U.S. Census on sex, race,

An outbreak of foodborne norovirus gastroenteritis linked to a restaurant in Melbourne, Australia, 2014.

INTRODUCTION: In May 2014 an outbreak of norovirus occurred among patrons of a restaurant in Melbourne, Australia. Investigations were conducted to identify the infectious agent, mode of transmission and source of illness, and to implement controls to prevent further transmission. METHODS: A retrospective case-control study was conducted to test the hypothesis that food served at the restaurant between 9 and 15 May 2014 was the vehicle for infection. A structured questionnaire was used to collect demographic, illness and food exposure data from study participants. To ascertain whether any foo

Occupational asthma in a seafood restaurant worker: cross-reactivity of shrimp and scallops.

BACKGROUND: The case of a restaurant seafood handler with IgE-mediated occupational asthma and contact urticaria to both shrimp and scallops is presented. Independent hypersensitivity to both seafoods was demonstrated by skin testing, inhalation challenge, and immunoassays. Bronchial challenge with extracts of shrimp and scallops each produced an isolated early asthmatic response. OBJECTIVE: To investigate cross-reactivity of shrimp (phylum Arthropoda) and scallops (phylum Mollusca). METHODS: Shrimp and scallops extracts were prepared from raw seafood and seafood boiling water. Distillate wa

Multistate outbreak of Salmonella serotype Typhimurium infections associated with consumption of restaurant tomatoes, USA, 2006: hypothesis generation through case exposures in multiple restaurant clusters.

Multiple salmonellosis outbreaks have been linked to contaminated tomatoes. We investigated a multistate outbreak of Salmonella Typhimurium infections among 190 cases. For hypothesis generation, review of patients' food histories from four restaurant-associated clusters in four states revealed that large tomatoes were the only common food consumed by patients. Two case-control studies were conducted to identify food exposures associated with infections. In a study conducted in nine states illness was significantly associated with eating raw, large, round tomatoes in a restaurant [matched odds
