Suppressive effects of Streptococcus thermophilus KLDS 3.1003 on some foodborne pathogens revealed through in vitro, in vivo and genomic insights.

Foodborne diseases (FBDs) remain a persistent global challenge and recent research efforts suggest that lactic acid bacteria (LAB) strains can contribute towards their prevention and treatment. This study investigates the genetic properties of Streptococcus thermophilus KLDS 3.1003 as a potential probiotic and health-promoting LAB strain as well as its in vitro and in vivo activities against two foodborne pathogens. In vitro, its antimicrobial activities and tolerance levels in simulated bile salts and acids were determined. The cytotoxic effects of the LAB strain in RAW264.7 cells were also e

Lactobacillus delbrueckii subsp. bulgaricus 2038 and Streptococcus thermophilus 1131 suppress polystyrene nanoplastic transcellular permeability and internalization by intestinal epithelial cells.

The plastic is broken into nanoscale particles (nanoplastics) that are harmful to the human body. Nanoplastics orally ingested are internalized into various cells, causing adverse effects such as oxidative stress and apoptosis; however, methods for preventing nanoplastic internalization are lacking. By elucidating this method, it is possible to make a significant contribution to human health. Then, following previous reports that Lactobacillus delbrueckii subsp. bulgaricus 2038 and Streptococcus thermophilus 1131 ameliorated barrier dysfunction in the small intestine, we examined their effects

Integrated transcriptomics and metabolomics reveal changes during Streptococcus thermophilus JM66 fermentation in milk: Fermentation characteristics, flavor profile, and metabolic mechanism.

Microbial metabolism influences the physicochemical properties and flavor compound formation in fermented milk during fermentation. Streptococcus thermophilus is one of the primary fermentation strains used in fermented milk production. Herein, we investigated the fermentation characteristics, flavor profiles, and associated metabolic mechanisms of Streptococcus thermophilus JM66 in milk matrix through multi-stage dynamic monitoring and multi-omics techniques. A total of 66 volatile metabolites were identified across three fermentation stages of S. thermophilus JM66, with ketones (such as acet

Gestational supplementation of Bifidobacterium, Lactobacillus, and Streptococcus thermophilus attenuates hepatic steatosis in offspring mice through promoting fatty acid β-oxidation.

Currently, Bifidobacterium, Lactobacillus, and Streptococcus thermophilus (BLS) are widely recognized as the crucially beneficial bacteria in the gut. Many preclinical and clinical studies have shown their protective effects against non-alcoholic fatty liver disease (NAFLD). However, whether gestational BLS supplementation could alleviate NAFLD in the offspring is still unknown. Kunming mice were given a high-fat diet (HFD) for 4 weeks before mating. They received BLS supplementation by gavage during pregnancy. After weaning, offspring mice were fed with a regular diet up to 5 weeks old. Gesta

Genomic insights support the taxonomic differentiation of Streptococcus thermophilus Orla-Jensen 1919 (Approved Lists 1980) and Streptococcus salivarius Andrewes and Horder 1906 (Approved Lists 1980) as individual species.

Streptococcus thermophilus is widely used as a starter culture in the production of cheese, yoghurt and various cultured dairy products, which holds considerable significance in both research and practical applications within the food industry. Throughout history, the taxonomy of S. thermophilus has undergone several adjustments and revisions. In 1984, based on the result of DNA-DNA hybridization, S. thermophilus was reclassified as Streptococcus salivarius subsp. thermophilus. Subsequently, in 1991, Schleifer et al. proposed the revival of the species S. thermophilus also relying on a DNA-DNA

The effects of dairy products containing Lactobacillus bulgaricus and Streptococcus thermophilus on bone turnover biomarkers and bone mineral density: a pilot trial study.

BACKGROUND/OBJECTIVES: Low bone mineral density is a major public health concern that negatively affects quality of life. Dairy products fermented with Lactobacillus bulgaricus and Streptococcus thermophilus have been suggested to promote gut health, enhance calcium absorption, and suppress inflammatory cytokines related to bone turnover. However, the benefits of these fermented dairy products on bone health remain unclear. This study aimed to compare the effects of consuming dairy products with and without Lactobacillus bulgaricus and Streptococcus thermophilus on bone turnover biomarkers and

Influence of a Co-culture of Streptococcus thermophilus and Lactobacillus casei on the Proteolysis and ACE-Inhibitory Activity of a Beverage Based on Reconstituted Goat Whey Powder.

The potential for reusability of whey is of concern due to its substantial nutritional value and, second, in view of the need to reduce environmental impact. The use of goat whey powder in the production of a fermented dairy beverage using a Lactobacillus casei culture as adjunct shows a good prospect of a food product with hypotensive activity. This study investigated the microbial viability, proteolysis and angiotensin-converting enzyme (ACE) inhibitory activity of a fermented dairy beverage produced with goat whey powder and a probiotic culture of L. casei BGP93 co-cultured with Streptococc

Modulatory Effects of Heat-Inactivated Streptococcus Thermophilus Strain 7 on the Inflammatory Response: A Study on an Animal Model with TLR3-Induced Intestinal Injury.

Rotavirus infections result in severe gastroenteritis with a detrimental inflammatory response in the intestine. Because probiotics have an anti-inflammatory effect and can modulate the gut microbiota profile, they can be used as a biotherapy for inflammatory intestinal diseases. In this study, we isolated Streptococcus thermophilus strain 7 (ST7) from cow milk and examined the effect of heat-inactivated ST7 on the intestinal histopathological score, inflammatory cytokine levels, T-cell activation and effector function, and microbiome profile in a mouse model with intestinal injury induced by

Beta-galactosidase production by Streptococcus thermophilus is higher in the small intestine than in the caecum of human-microbiota-associated mice after lactose supplementation.

Transit kinetics and survival rates of a bacterial species from yoghurt (i.e. Streptococcus thermophilus strain FBI3) were examined in different digestive compartments of gnotoxenic and human-microbiota-associated mice. The production of the lactose-hydrolysing enzyme (i.e. beta-galactosidase) was also investigated within the digestive tract, using a chromosomal reporter system based on luciferase genes from Photorhabdus luminescens under the control of the plac promoter. In both mice models, S. thermophilus cells transited within 2 h from the stomach to the caecum-colon compartment of the dig

W/O/W emulsions with gelled aqueous and oil phases: Construction, characterization, and their effect on enhancing the stress resistance of Lactobacillus plantarum and Streptococcus thermophilus.

To overcome the poor stability and low probiotic survival associated with traditional delivery systems, this study systematically developed and compared water-in-oil-in-water (W/O/W) emulsions with different phase gelation strategies. Three emulsion types were constructed: oil-phase (O-W/O/W), external aqueous-phase (A-W/O/W), and dual-phase gelled (B-W/O/W) emulsions. The results revealed that dual-phase gelation (B-W/O/W) exhibited a superior synergistic effect compared to single-phase gelation. Both aqueous- and oil-phase gelation increased apparent viscosity and restricted internal water m

Assessment of the in-vitro probiotic efficacy and safety of Pediococcus pentosaceus L1 and Streptococcus thermophilus L3 isolated from Laban, a popular fermented milk product.

Probiotics are beneficial microorganisms, mostly lactic acid bacteria (LAB), that offer health benefits to the host when consumed in adequate amounts. This study assessed the probiotic efficacy and safety of LAB strains isolated from Laban, a traditional fermented milk product. Seven primarily selected Gram-positive, catalase-negative, non-spore-forming isolates were examined for their antimicrobial activity against the bacterial pathogens Bacillus cereus, Salmonella typhi, Staphylococcus aureus, and Vibrio cholera, and the fungal pathogen Candida albicans. Two isolates, identified as Pediococ

Lactobacillus delbrueckii subsp. bulgaricus 2038 and Streptococcus thermophilus 1131 ameliorate barrier dysfunction in human induced pluripotent stem cell-derived crypt-villus structural small intestine.

BACKGROUND: Lactic acid bacteria (LAB) have been widely used as probiotics which contribute to our health. We previously reported that Lactobacillus delbrueckii subsp. bulgaricus 2038 and Streptococcus thermophilus 1131, two yogurt starter strains, ameliorate the intestinal barrier dysfunction caused by tumor necrosis factor (TNF)-α and interferon (IFN)-γ in Caco-2 cells. However, Caco-2 cells differ from living organisms in various ways. We have developed a human induced pluripotent stem cell-derived crypt-villus structural small intestine (hiPSC-SI) was established with a villus-like structu

Activation of conventional and plasmacytoid dendritic cells and enhancement of anti-viral immune responses by Lactobacillus delbrueckii subsp. bulgaricus OLL1073R-1 and Streptococcus thermophilus OLS3059.

Dendritic cells are classified into conventional dendritic cells (cDCs) and plasmacytoid dendritic cells (pDCs), both of which play critical roles in anti-viral immune responses. Previous studies have reported that dairy consumption of yogurt fermented with Lactobacillus delbrueckii subsp. bulgaricus OLL1073R-1 and Streptococcus thermophilus OLS3059 had the effect of inhibiting viral infections. Recent studies have shown that the activation of both cDCs and pDCs and the decrease of respiratory symptoms were induced by the consumption of this yogurt. However, the components responsible for thes

Genomics of Streptococcus salivarius, a major human commensal.

The salivarius group of streptococci is of particular importance for humans. This group consists of three genetically similar species, Streptococcus salivarius, Streptococcus vestibularis and Streptococcus thermophilus. S. salivarius and S. vestibularis are commensal organisms that may occasionally cause opportunistic infections in humans, whereas S. thermophilus is a food bacterium widely used in dairy production. We developed Multilocus sequence typing (MLST) and comparative genomic analysis to confirm the clear separation of these three species. These analyses also identified a subgroup of
