Fermentation of kefir with traditional freeze-dried starter cultures successfully recreates fresh culture fermented kefir.

INTRODUCTION: Interest in fermented foods and their purported health benefits has led to increased scientific research investigating the development of starter cultures which maintain the characteristics of traditional products while allowing for industrial scale production. One such fermented food that is gaining steady attention for industrial production is kefir. To improve the ease of use and maintenance of starter cultures without compromising desirable fermentation characteristics and potential health benefits, this study investigated the impact of freeze-drying a previously described re

Renal Injuries Induced by Supplements Containing Red Yeast Rice.

Red yeast rice has been highlighted as a health-food ingredient that reduces serum cholesterol levels. Recently, an increased number of cases of renal impairment induced by a supplement containing red yeast rice have been reported in Japan. A 42-year-old man with no history of chronic kidney disease developed renal dysfunction with proximal tubular damage after supplementation with red yeast rice. An 83-year-old woman with advanced diabetic kidney disease experienced further deterioration of her renal function after supplementation with red yeast rice. We herein report cases of acute kidney in

Modulation of chewing behavior and reticular pH in nonlactating cows challenged with concentrate-rich diets supplemented with phytogenic compounds and autolyzed yeast.

Feeding of concentrate-rich diets impairs chewing behavior and leads to rumen acidosis in cattle. Because of their modulatory effects on ruminal fermentation, phytogenic compounds (PHY) and autolyzed yeast derivatives (AY) may alleviate the negative consequences of high-concentrate diets. Therefore, this research investigated if chewing behavior and the reticular pH dynamics are modulated by AY and PHY supplementation during repeated concentrate-rich challenges used to simulate intermittent rumen acidotic insults. Eight rumen-cannulated, dry, and nonpregnant Holstein cows were assigned to an i

A fraction derived from brewer's yeast inhibits cholesterol synthesis by rat liver preparations in vitro.

Brewer's yeast was grown on a defined medium containing tracer 51Cr with or without added chromium. The two batches of yeast contained 10 microgram/g (high-Cr) or 80 ng/g (low-Cr). Extracts were prepared and fractionated. A third batch of yeast (third batch) was grown with added Cr, and fractionated. Rats were reared on either rat cubes (normal diet) or on a low-Cr diet (low-Cr), or on rat cubes with added cholestyramine (cholestyramine diet). Preparations of rat liver, both cell-free and intact hepatocytes, incorporated acetate-carbon into fatty acids and cholesterol. These processes were inh

Kluyveromyces marxianus KLU1 Increases the Cell Density and Survival of Lacticaseibacillus rhamnosus GG in Dried Kurut.

Kurut is a traditional acid-coagulated dairy fermented product from Kazakhstan, China, Turkey, and some Central Asian countries. It can be consumed either fresh, semi-dried, or dried. In this study, probiotic Lacticaseibacillus rhamnosus GG (LGG) dried kurut was produced with and without the addition of Kluyveromyces marxianus KLU1, a yeast strain, we earlier isolated from kurut. K. marxianus KLU1 increased the cell count of LGG, enabling a probiotic level of >106 CFU/g for more than 100 days in dried kurut stored at +4°C. Addition of LGG and K. marxianus KLU1 in kurut had no adverse effects o

The yeast guanine nucleotide exchange factor Sec7 is a bottleneck in spatial protein quality control and detoxifies neurological disease proteins.

ER-to-Golgi trafficking partakes in the sorting of misfolded cytoplasmic proteins to reduce their cytological toxicity. We show here that yeast Sec7, a protein involved in proliferation of the Golgi, is part of this pathway and participates in an Hsp70-dependent formation of insoluble protein deposits (IPOD). Sec7 associates with the disaggregase Hsp104 during a mild heat shock and increases the rate of Hsp104 diffusion in an Hsp70-dependent manner when overproduced. Sec7 overproduction increased formation of IPODs from smaller aggregates and mitigated the toxicity of Huntingtin exon-1 upon he

Nucleotide-rich yeast extract fed to broiler chickens challenged with Eimeria: impact on growth performance, jejunal histomorphology, immune system, and apparent retention of dietary components and caloric efficiency1.

Nucleotide-rich yeast extract (YN) was investigated for its effects on growth performance, jejunal histomorphology and mucosal immunoglobulin A (IgA), immune organs weight and apparent retention (AR) of components in broiler chickens challenged with Eimeria. A total of 336 day-old male chicks (Ross x Ross 708) were placed in floor pens and provided a corn-soybean meal-based diet without or with YN (500 g/mt) (n = 14). On day 10, 7 replicates per diet were orally administered with 1 mL of sporulated E. acervulina and E. maxima oocysts and the rest (non-challenged control) administered equivalen

Nutritional role of chromium.

Chromium is an essential trace element required for normal carbohydrate metabolism. The biological function of chromium is closely associated with that of insulin and most chromium-stimulated reactions are also insulin dependent. Proper chromium nutrition leads to a decreased requirement for insulin and also an improved blood lipid profile. Most fresh foods and minimally processed foods are good sources of dietary chromium. Inorganic chromium does not potentiate insulin action and must be converted to an organic biologically active form. An organic form of chromium capable of potentiating insu

Synergistic effect of ultrasonic waves under pressure at mild temperatures (MTS) in yeast inactivation.

Ultrasonic treatments are one of the new technologies for microbial inactivation that could serve as an alternative for food preservation. However, decimal reduction times for most of microbial species generally exceed 1 min. Therefore, combined processes have been designed, based on the simultaneous application of ultrasonic waves under pressure at moderate temperatures (mano-thermo-sonication process, MTS). The aim of this study was mathematically quantify the synergism of MTS treatments on S. bayanus and different microbial groups including vegetative cells and bacterial spores and compare

Clinical demonstration of isolation of Nocardia asteroides on buffered charcoal-yeast extract media.

Nocardia asteroides was isolated only from sputum samples, obtained from three patients with pulmonary nocardiosis, that had been cultured onto buffered charcoal-yeast extract (BCYE) and selective BCYE media as part of laboratory workups for Legionella species. A decontamination procedure with low-pH pretreatment (KCl-HCl solution) had been performed on the sputa prior to culture onto the BCYE media because direct cultures on the media were overgrown with commensal microflora. Chalky white colonies, 0.5 to 1.0 mm in diameter, that were subsequently identified as N. asteroides grew well on the

Immobilizing yeast β-glucan on zinc-layered hydroxide nanoparticle improves innate immune response in fish leukocytes.

Nanoparticle-based delivery technologies have played a central role in a wide variety of applications, including cell therapy, gene transformation, and cellular delivery of molecular dyes. This work synthesized via ionic exchange a nanoparticle consisting of zinc-layered hydroxychloride coupled with yeast β-glucan (ZG), whose cellular immune response was evaluated using fish spleen leukocytes. Leukocytes from the marine Pacific red snapper (Lutjanus peru) were stimulated with zinc-layered hydroxychloride (ZHC) coupled with yeast β-glucan (GLU) and challenged with live Vibrio parahaemolyticus a

Effect of refined functional carbohydrates from enzymatically hydrolyzed yeast on the presence of Salmonella spp. in the ceca of broiler breeder females.

Broiler breeders hatched from Salmo-nella negative grandparents received either zero or 50 g/MT of refined functional carbohydrates (RFC) in their diets from d of placement to end of lay. There were no other treatments used. Pullets and cockerels were reared separately in an enclosed litter-floor house to 21 wk of age when 28 randomly selected pullets from each diet were transferred to individual cages for an additional 14 d before they were killed, and their ceca were excised aseptically and tested for Salmonella spp. The remaining birds were transferred to a two-thirds slat and one-third lit

Kinetics of drug action in disease states. IX. Effect of experimental fever on phenobarbital concentrations at onset of loss of righting reflex in rats.

The purpose of this investigation was to determine the effect of fever on the concentration-pharmacologic activity relationship of phenobarbital (PB). Fever was produced in adult female Lewis rats by either bacterial endotoxin or brewer's yeast. Endotoxin elevated body temperature by 0.9 +/- 0.6 degrees C in one study and by 1.0 +/- 0.4 degrees C in another. Brewer's yeast caused a more pronounced and protracted elevation of temperature averaging 1.8 +/- 0.3 degrees C at the time of the pharmacodynamic measurements. PB was administered by slow i.v. infusion until the rats lost their righting r

Comparative effects of freeze-dried and fresh Chlorella sorokiniana UKM3 and Coelastrella sp. UKM4 on the growth and survival of Daphnia magna.

Hatcheries mainly grow microalgae on-site to produce high-quality live feed for enriching zooplankton in aquaculture systems, predominantly for the larval stages of aquatic species. However, this is often related to high production and maintenance costs. This has driven research into more cost-effective and practical alternatives, such as freeze-dried or paste forms of microalgae. Therefore, this study aims to evaluate the potential of two local freshwater microalgae of Chlorella sorokiniana UKM3 and Coelastrella sp. UKM4 as an enrichment diet for zooplankton Daphnia magna. C. sorokiniana UKM3
