'Please, sir, can I have some more?' Food, lifestyle, diets: respect and moral responsibility.

This article is about respect for food, responsibility for lifestyle and diet and responsibility for those who suffer from lack of food. Aft … ctors have responsibilities in enabling people to chose healthy eating habits, e.g. by facilitating access to healthy foods and by criticizing scientifically unfounded weight loss diets. I continue to defend that we need to respect food and those who prepare it, and that we have a moral responsibility to contribute to the solution of the food gap in the world.

Cardiovascular Disease in the Peruvian Andes: Local Perceptions, Barriers, and Paths to Preventing Chronic Diseases in the Cajamarca Region.

Objectives: Public health interventions can be improved by understanding peoples' explanatory models of disease. We explore awareness and perceptions of cardiovascular diseases (CVD) and options for preventative actions in young adults living in rural Andean communities. Methods: We used convenience sampling to select 46 men and women from communities in Cajamarca (Peru). Subjects participated in eight focus groups where they discussed their understanding and perceived causes of CVD as well as barriers and pathways to healthy lifestyles. Results: Fresh foods, physical activity, unpleasant emot

Farm Fresh Foods for Healthy Kids (F3HK): An innovative community supported agriculture intervention to prevent childhood obesity in low-income families and strengthen local agricultural economies.

BACKGROUND: Childhood obesity persists in the United States and is associated with serious health problems. Higher rates of obesity among children from disadvantaged households may be, in part, attributable to disparities in access to healthy foods such as fruits and vegetables. Community supported agriculture can improve access to and consumption of fresh produce, but the upfront payment structure, logistical barriers, and unfamiliarity with produce items may inhibit participation by low-income families. The aim of this project is to assess the impact of subsidized, or "cost-offset," communit…

What does cooking mean to you?: Perceptions of cooking and factors related to cooking behavior.

Despite the importance of cooking in American life and evidence suggesting that meals cooked at home are healthier, little is known about perceptions of what it means to cook in the United States. The objective of this study was to describe perceptions of cooking and factors important to how cooking is perceived and practiced among American adults. Seven focus groups (N = 53; 39 female; 35 Black, 16 White, 2 Asian) were conducted from November 2014 to January 2015 in Baltimore City, Maryland. Participants were recruited from two neighborhoods; one with higher median income and access to health

Food access and the severity of newly diagnosed pediatric inflammatory bowel disease.

OBJECTIVES: Inflammatory bowel disease (IBD) results from genetic susceptibility, gut microbiome, and environmental factors. Diet, one modifiable environmental factor, has been linked to the increased prevalence of IBD. This study aimed to evaluate a potential association between food deserts and disease severity at diagnosis. METHODS: This retrospective study included newly diagnosed IBD patients (ages of 2 and 21 years of age; diagnosed between January 1, 2019, and December 31, 2021). The United States Department of Agriculture (USDA's) Food Access Research Atlas was used to determine if pa

Disparities in neighborhood food environments: implications of measurement strategies.

Public health researchers have begun to map the neighborhood “food environment” and examine its association with the risk of overweight and obesity. Some argue that “food deserts”—areas with little or no provision of fresh produce and other healthy food—may contribute to disparities in obesity, diabetes, and related health problems. While research on neighborhood food environments has taken advantage of more technically sophisticated ways to assess distance and density, in general, it has not considered how individual or neighborhood conditions might modify physical distance and thereby affect

The Nutritional Assessment of Bureau of Prisons Mid-Atlantic Region Commissary Offerings.

The Federal Bureau of Prisons (BOP) has both formal policies and internal guidelines for commissary food items that aim to increase access and provide nutritional information for individuals who experience incarceration. The purpose of this research was to determine (a) the nutritional assessment of commissary offerings by the BOP Mid-Atlantic Region because little is known about the foods offered in commissaries, (b) if the BOP commissaries align with recommended packaged snack food and nutrition standards, and (c) if they follow their own policies and standards for healthy commissary food of

Objective food store access was associated with calcium intake among older Japanese adults: a cross-sectional analysis from the Japan Gerontological Evaluation Study at Taisetsu Community Hokkaido.

Preventing osteoporosis in older populations is important for extending healthy life expectancy. Calcium is a crucial nutrient for maintaining bone health in this group. However, more than half of people aged ≥ 65 years have insufficient calcium intake. We investigated the influence of food store access on calcium intake in community-dwelling older adults. Our study employed a population-based cross-sectional design, using data from older adults aged 70-74 years living in three towns in northern Japan. Perceived food store access was assessed using a single question, while objective food store

Child and Adult Care Food Program: Family Childcare Home Providers' Perceptions of Impacts of Increased Meal and Snack Reimbursement Rates during the COVID-19 Pandemic.

Introduction: The U.S. Child and Adult Care Food Program (CACFP) provides tiered reimbursements for healthy foods for children at participating family childcare homes (FCCH). Higher tier 1 reimbursements are for providers who operate in low-income communities or who are themselves living on a low income. All FCCHs received a higher rate to address food insecurity during the COVID-19 pandemic. Methods: A survey was administered in the spring of 2023 to a randomly selected sample of licensed California FCCHs to assess the perceived impacts of the increased reimbursement on CACFP participation an

Diet quality among pregnant women in the Navajo Birth Cohort Study.

Proper nutrition during pregnancy is vital to maternal health and fetal development and may be challenging for Navajo Nation residents because access to affordable and healthy foods is limited. It has been several decades since reported diet quality during pregnancy was examined on Navajo Nation. We present the first study to estimate iodine intake and use the Healthy Eating Index (HEI-2015) to assess maternal diet quality among pregnant women in the Navajo Birth Cohort Study (NBCS). Based on dietary intake data derived from food frequency questionnaires, overall estimated micronutrient intake

Economic and Cultural Assessment of the DASH Eating Plan for Low-Income African Americans: An Integrative Review.

Diet is one modifiable risk factor for hypertension. The low-sodium DASH (Dietary Approaches to Stop Hypertension) eating plan has been shown to significantly reduce the risk of hypertension and cardiovascular disease. However, there is a lack of available health information on the economic feasibility and cultural acceptability of DASH for low-income African American (AA) populations who are at the most risk for hypertension. An integrative review was conducted to summarize empirical literature on the economic feasibility and cultural acceptability of the DASH plan for low-income AAs using th

Dietary phosphate toxicity: an emerging global health concern.

Phosphate is a common ingredient in many healthy foods but, it is also present in foods containing additives and preservatives. When found in foods, phosphate is absorbed in the intestines and filtered from the blood by the kidneys. Generally, any excess is excreted in the urine. In renal pathologies, however, such as chronic kidney disease, a reduced renal ability to excrete phosphate can result in excess accumulation in the body. This accumulation can be a catalyst for widespread damage to the cellular components, bones, and cardiovascular structures. This in turn can reduce mortality. Becau

Built Environment and Gender-Based Vulnerability as Key Drivers of Food Insecurity in Allegheny County.

Food insecurity is pervasive in Allegheny County, as one in five residents experiences food insecurity. Food insecurity is linked to chronic health conditions like heart disease and hypertension and disproportionately affects women in the United States, particularly women who are head of household. There are multiple dimensions used to measure regional disparities in food accessibility. Prior research has examined the linkages between food access and food insecurity, and this study aims to explore further the relationship between equitable access to sustainable and affordable food sources. Perceived Challenges and Solutions to Adopting Healthy Diets Among Women and Children: A Photovoice Study in Urban Ethiopia.

Ethiopia has one of the highest rates of undernutrition among children under five (U5) and women of reproductive age (WRA) globally, alongside rising overweight/obesity, particularly in urban areas. Poor diet is a shared driver of multiple forms of malnutrition. We used a participatory photography (Photovoice) approach to explore the lived experiences of WRA and their children U5 in adopting healthy diets across lower- and higher- socio-economic status (SES) groups in Addis Ababa. Women took photographs illustrating challenges to healthy diets, and five focus groups (n = 31 women) were conduct
