Annona squamosa is a tropical fruit with unique flavor but rapid postharvest spoilage. This study evaluated fermentation with Bacillus subtilis, Acetobacter tropicalis, Limosilactobacillus reuteri, and Lactobacillus buchneri on juice properties. Fermentation increased total phenolics, flavonoids, and free amino acids, and improved taste. Fermented juices showed enhanced antioxidant, antimicrobial, and anti-inflammatory activities, with increased inhibition of α-amylase, α-glucosidase, xanthine oxidase, and pancreatic lipase (p < 0.001). Metabolomics revealed differential metabolites linked to

The formation of bacterial cellulose pellicles by Acetobacter xylinum is investigated in growth media supplemented with sodium alginate (SA) or carboxymethylcellulose (CMC). Both polymers influence bacterial cellulose assembly during growth, but through distinct physicochemical mechanisms. In SA-containing media, increased viscosity reduces bacterial mobility and promotes the formation of denser pellicles with reduced interlayer spacing and porosity, without substantially affecting cellulose production. In contrast, under the acidic culture conditions used in this study, CMC undergoes pH-depen

Microbes play a vital role in ecosystem stability. Here, microbes-Acacia association is discussed with particular reference to Arbuscular Mycorrhizal Fungi (AMF) which help in the establishment of crop-plants, especially in arid and semi-arid areas. The association helps to restore the structural composition of soil from the hazardous impact of agrochemicals, increase resistance against various pathogenic attack as well as several abiotic stresses. Further, a comparative account of microbes found in the rhizosphere of Acacia is illustrated. Among these, Rhizobia, Acetobacter, Bradyrhizobium, B

In 1930, Bortels showed that molybdenum is necessary for nitrogen fixation in Acetobacter, and in 1939 Arnon and Stout reported that molybdenum is essential for life in higher plants. Nitrogenase is the nitrogen-fixing enzyme complex, while nitrate reductase requires molybdenum for its activity. Molybdenum occurs in the earth crust with an abundance of 1.0-1.4 mg/kg. The molybdenum content of the vegetation is determined by the amount of this element in the soil and its pH-value. The weathering soils of granite, porphyry, gneiss and Rotliegendes produce a molybdenum-rich vegetation. Significan

INTRODUCTION: Litchi fruit vinegar-like beverages (LVBs) are notable processed products derived from litchi fruit, yet few studies have focused on the systematic characterization of microbial and metabolic dynamics during their natural fermentation process.
METHODS: This work employed a comprehensive methodology integrating metagenomics and untargeted metabolomics based on UHPLC-MS/MS (Orbitrap Q Exactive HF-X) to elucidate the dynamic profiles of the microbial community and non-volatile metabolites, as well as their interrelations, across the various spontaneous fermentation stages of LVBs.

Kitchen waste (KW) generates odors comprising complex volatile organic compounds (VOCs). We used gas chromatography-mass spectrometry to analyze VOCs, and 16S gene sequencing was used to analyze the microbial community composition and microbial metabolic mechanism. The results showed that the major odor-causing VOCs were hydrogen sulfide, methanethiol, methyl sulfide, dimethyl disulfide, and ethyl acetate. As the temperature increased, the VOCs and microbial community composition became more complex, and the microbial community related to VOC production included Leuconostoc, Pediococcus, Aceto

Eight homoacetogenic strains of the genera Acetobacterium, Clostridium and Sporomusa were tested for their ability to dechlorinate tetrachloroethylene (perchloroethene, PCE). Of the organisms tested only Sporomusa ovata was able to reductively dechlorinate PCE with methanol as an electron donor. Resting cells of S. ovata reductively dechlorinated PCE at a rate of 9.8 nmol h-1 (mg protein)-1 to trichloroethylene (TCE) as the sole product. The dechlorination activity depended on concomitant acetogenesis from methanol and CO2. Cell-free extracts of S. ovata, Clostridium formicoaceticum, Acetobact

BACKGROUND: Animals are chronically infected by benign and beneficial microorganisms that generally promote animal health through their effects on the nutrition, immune function and other physiological systems of the host. Insight into the host-microbial interactions can be obtained by comparing the traits of animals experimentally deprived of their microbiota and untreated animals. Drosophila melanogaster is an experimentally tractable system to study host-microbial interactions.
METHODOLOGY/PRINCIPAL FINDINGS: The nutritional significance of the microbiota was investigated in D. melanogaste

Ascites is a life-threatening complication of advanced malignancies, yet how tumors disrupt systemic fluid homeostasis remains poorly understood. Here, using a Drosophila tumor allograft model that recapitulates key features of cancer-associated ascites, we identify a tumor-microbiome-renal axis that controls host fluid balance. Tumor-bearing hosts develop severe abdominal fluid accumulation accompanied by marked expansion and systemic dissemination of the gut commensal Acetobacter aceti . Tumor-induced bacterial dissemination activates innate immune signaling in the Malpighian tubules, the in

Water kefir (a probiotic-rich culture) and Eurotium cristatum (a key fungus in Fu brick tea) were co-fermented with dark tea infusion to investigate dynamic changes in volatile organic compounds (VOCs), microbial communities, and biochemical components. Co-fermentation dramatically altered microbial composition, enriching beneficial lactic acid bacteria (Liquorilactobacillus, Lacticaseibacillus) while inhibiting undesirable microbes (e.g., Saccharomyces). A total of 65 VOCs were identified, with co-fermentation promoting floral, fruity, minty, and stale aromas (e.g., linalool, methyl salicylat

Microbial contaminations pose a significant concern within the brewing industry, exerting negative effects on the organoleptic quality of the product and leading to substantial economic losses. The exponential proliferation of craft breweries in Argentina in recent years has heightened the demand for constant improvements in processes to ensure excellence in beer production. However, the stringency of microbiological quality controls remains a vulnerable area. This study assesses the prevalence of beer contaminants in samples from 10 breweries located in Buenos Aires City (CABA) and Greater Bu

Acetic acid bacteria (AAB) are known as a vinegar producer on account of their ability to accumulate a high concentration of acetic acid due to oxidative fermentation linking the ethanol oxidation respiratory chain. Reactions in oxidative fermentation cause poor growth because a large amount of the carbon source is oxidized incompletely and the harmful oxidized products are accumulated almost stoichiometrically in the culture medium during growth, but a newly identified AAB, Asaia, has shown unusual properties, including scanty acetic acid production and rapid growth, as compared with known AA

Gut microbiota plays a pivotal role in host immunity and overall health. Enterococcus faecium HDRsEf1 (Ef1), a novel potential probiotic, has been reported to enhance immune defense against pathogenic invasion; however, its effects on inflammation and gut microbiota remain poorly understood. This study aimed to evaluate the impact of Ef1 on host health, gut microbiota, and fecal metabolite profiles using DSS-induced colitis in mice and nursery pig models. In mice, Ef1 effectively mitigated growth retardation and organ damage caused by DSS-induced inflammation. In nursery pigs, Ef1 administrati

Host-microbe interactions are increasingly recognized as an important module to understand disease progression and potential treatment strategies. Increasing evidence points to the microbiome's ability to modulate host gene expression, and thereby influencing host physiology. By integrating dual RNA sequencing with machine learning, we uncover how transcriptionally active microbes (TAMs) may influence host genes involved in immune and metabolic functions in the hospital admitted dengue patients. Towards this, we analyzed 112 whole transcriptomes from the blood samples of patients with differen

Mutations in voltage-gated sodium (Nav) channels, which are essential for generating and propagating action potentials, can lead to serious neurological disorders, such as epilepsy. However, disease-causing Nav channel mutations do not always result in severe symptoms, suggesting that the disease conditions are significantly affected by other genetic factors and various environmental exposures, collectively known as the "exposome". Notably, recent research emphasizes the pivotal role of commensal bacteria in neural development and function. Although these bacteria typically benefit the nervous

Alzheimer's disease (AD) is a progressive disease and one of the most common forms of neurodegenerative disorders. Emerging evidence is supporting the use of various strategies that modulate gut microbiota to exert neurological and psychological changes. This includes the utilisation of probiotics as a natural and dietary intervention for brain health. Here, we showed the potential AD-reversal effects of Lactobacillus probiotics through feeding to our Drosophila melanogaster AD model. The administration of Lactobacillus strains was able to rescue the rough eye phenotype (REP) seen in AD-induce
