Biofortification is an agricultural strategy that aims to increase the content of select micronutrients, including zinc, in staple food crops such as rice, wheat, maize, pearl millet, and others. When consumed among zinc-deficient populations, zinc-biofortified staple foods should improve the adequacy of zinc intakes and hence reduce the risk of dietary zinc deficiency. Several conditioning factors will contribute to the potential for this strategy to meet its goal, including the additional amount of zinc that can be bred into the staple crop food, the amount of zinc that remains in the staple

Micronutrient malnutrition, commonly referred to as "hidden hunger, " remains a persistent global health challenge, particularly in regions with limited dietary diversity. Although agricultural intensification has substantially improved caloric availability, it has not ensured adequate micronutrient density in food systems, highlighting the urgent need for nutrition-sensitive crop improvement strategies. Biofortification has emerged as a sustainable and cost-effective approach to enhance the micronutrient content of food crops through agronomic, genetic, and biotechnological interventions. Whi

Vitamin D deficiency is a global concern, linked to suboptimal musculoskeletal health and immune function, with status inadequacies owing to variations in UV dependent cutaneous synthesis and limited natural dietary sources. Endogenous biofortification, alongside traditional fortification and supplement usage is urgently needed to address this deficit. Evidence reviewed in the current article clearly demonstrates that feed modification and UV radiation, either independently or used in combination, effectively increases vitamin D content of primary produce or ingredients, albeit in the limited

Cereals and pulses are consumed as a staple food in low-income countries for the fulfillment of daily dietary requirements and as a source of micronutrients. However, they are failing to offer balanced nutrition due to deficiencies of some essential compounds, macronutrients, and micronutrients, i.e., cereals are deficient in iron, zinc, some essential amino acids, and quality proteins. Meanwhile, the pulses are rich in anti-nutrient compounds that restrict the bioavailability of micronutrients. As a result, the population is suffering from malnutrition and resultantly different diseases, i.e.

Understanding Zn uptake dynamics is critical to rice grain Zn biofortification. Here we examined soil Zn availability and Zn uptake pathways as affected by genotype (high-grain Zn varieties IR69428 and IR68144), Zn fertilization and water management in two pot experiments. Results showed significant interactions (P < 0.05) between genotypes and Zn fertilization on DTPA (diethylenetriaminepentaacetic acid)-extractable soil Zn from early tillering to flowering. DTPA-extractable Zn in soils grown with IR69428 was positively correlated with stem (r = 0.78, P < 0.01), flagleaf (r = 0.60, P < 0.01)

Methionine (Met) is an essential amino acid that limits the nutritional value of many crop plants, yet its steady-state level in plant tissues is remarkably low. At the same time, Met is a central metabolic hub supporting protein synthesis and, through S-adenosylmethionine (SAM), drives the production of hormones, vitamins, polyamines, and epigenetic marks. The primary objective of this review is to understand why and how plants maintain low steady-state Met levels, and what occurs when Met content is elevated, a question of growing importance for Met biofortification. We first summarize evide

Vitamin B12 and iodine deficiencies are significant public health concerns and exhibit greater severity among vegans and vegetarians. This study aimed to evaluate the effects of the multi-biofortification of kale with vitamin B12 and iodine in a hydroponic vertical farming system. During hydroponic cultivation, kale was treated with cyanocobalamin (CN) and KI for a week before harvest. Combination treatment with CN and KI (5 μmol/L each; CN5+KI5) enhanced accumulation efficiency compared with individual treatments, and the consumption of 67.9 g of multi-biofortified kale met the recommended di

Maize is among the crops containing carotenoids that are easily converted to vitamin A and have an enormous influence on consumers' health. Principally maize has high calories and proteins but has less number of other micronutrients such as vitamin A. Societies that use maize as their main and sole staple food are likely to be affected by vitamin A deficiency. Thus, development and production of maize varieties rich in micronutrients and vitamin A are important for improved health. This study characterized 5 carotenoid components in maize genotypes grown in Tanzania as a strategy for improving

Despite achieving substantial progress in caloric food security, micronutrient deficiencies remain a major global health challenge, highlighting a persistent disconnect between crop productivity and nutritional quality. Crop biofortification has emerged as a promising strategy to address this gap by enhancing the intrinsic nutrient content of widely consumed foods to meet dietary requirements through complementary roles of staple crops and horticultural species in improving diet quality. In this review, we reposition biofortification within a broader nutrition-sensitive food system framework a

Iron biofortification of Hericium erinaceus is a promising strategy for enhancing its nutritional profile. This study examined the effects of supplementing growth substrates with various iron forms (FeCl3·6H2O, FeSO4·7H2O, and FeHBED) on iron uptake, accumulation, and metabolic profiles in H. erinaceus fruiting bodies. The results indicated that iron supplementation not only increased iron content but also affected several metabolic pathways, including energy metabolism, oxidative stress response, and biosynthesis. The choice of iron significantly influenced mushroom growth, mineral compositio

Selenomethionine (SeMet) is essential for selenium fortification in the hyper-selenophilous plant, Cardamine violifolia (Cv). However, there is currently a lack of real-time monitoring techniques to investigate SeMetfortification in Cv. In this study, we employed a time-course experiment (0-10 days) under different concentrations of SeMet (0-300 mg/L). Based on the growth characteristics of Cv, SeMet supplementation was most effective on day 4 at 100 mg/L. Compared with CK, the fresh weight of the roots, stems, and leaves, as well as the total chlorophyll and total nitrogen content, increased

Addressing global selenium (Se) deficiency requires enhancing soil Se bioavailability, a process largely governed by microbial oxidation whose molecular mechanisms remain elusive. Here, we systematically elucidated the SeCys2 oxidation mechanism of Comamonas testosteroni JL40 and its role in promoting rice Se biofortification. Strain JL40 employed a novel two-step oxidative pathway, converting SeCys2 sequentially to Se nanoparticles (SeNPs) and then to selenite (Se(IV)). SeoA-D were identified to catalyse Se oxidation by integrated proteomic, genetic and enzymatic analyses. Of these, SeoA and

Iodine deficiency remains a widespread nutritional concern, and biofortification of feed ingredients is a promising complement to salt iodization. Insects, such as the yellow mealworm, Tenebrio molitor Linnaeus (Coleoptera: Tenebrionidae), are gaining attention as sustainable protein sources, yet little is known about their capacity to accumulate iodine. This study quantified dose-dependent iodine accumulation and excretion, and assessed adverse effects, in T. molitor larvae reared on diets spanning more than 3 orders of magnitude of supplemented iodine; saturation kinetics here refers to dose

Macro and micronutrient deficiencies pose serious health challenges globally, with the largest impact in developing regions such as subSaharan Africa (SSA), Latin America and South Asia. Maize is a good source of calories but contains low concentrations of essential nutrients. Major limiting nutrients in maize-based diets are essential amino acids such as lysine and tryptophan, and micronutrients such as vitamin A, zinc (Zn) and iron (Fe). Responding to these challenges, separate maize biofortification programs have been designed worldwide, resulting in several cultivars with high levels of pr

The increasing global demand for functional foods rich in nutrients has spurred the exploration of agricultural practices aimed at enhancing the nutritional quality of crops. This study explored the effects of potassium biofortification on quinoa microgreens (QMG). The results showed that treatment with 8 mmol·L- 1 KCl increased fresh weight by 60.25-fold, reduced nitrate and free amino acids, and increased the contents of soluble sugars, proteins, vitamin C, fats, and cellulose. The application of potassium also increased the contents of polyphenols, flavonoids, and saponins, as well as the a

Allele mining for provitamin A biofortification in sorghum is advanced with new pre-bred germplasm and markers that are trait-predictive in diverse germplasm and breeding programs. Provitamin A biofortification of the staple cereal crop sorghum (Sorghum bicolor [L.] Moench) could reduce vitamin A deficiency in low-income countries of sub-Saharan Africa. To advance mining of alleles that confer high provitamin A from genebank accessions, we developed prebreeding germplasm and trait-predictive markers, and established the utility of these markers in a range of prebreeding and breeding materials.

Wheat genetic materials subjected to different irrigation levels may exhibit varying concentrations of elements such as zinc (Zn), iron (Fe), and calcium (Ca), depending on the cultivar and its response to irrigation. Additionally, these same conditions can lead to higher concentrations of bioactive compounds, such as flavonoids. Therefore, the objective of this study was to evaluate the concentrations of Zn, Fe, and Ca using X-ray fluorescence (XRF) and to determine the flavonoid content in different wheat and triticale genetic materials under distinct irrigation regimes. The experiment was c

With a burgeoning global population, meeting the demand for increased food production presents challenges, particularly concerning mineral deficiencies in diets. Micronutrient shortages like iron, iodine, zinc, selenium, and magnesium carry severe health implications, especially in developing nations. Biofortification of plants and plant products emerges as a promising remedy to enhance micronutrient levels in food. Utilizing agronomic biofortification, conventional plant breeding, and genetic engineering yields raw materials with heightened micronutrient contents and improved bioavailability.

Human malnutrition due to micronutrient deficiencies, particularly with regards to Zinc (Zn) and Selenium (Se), affects millions of people around the world, and the enrichment of staple foods through biofortification has been successfully used to fight hidden hunger. Rice (Oryza sativa L.) is one of the staple foods most consumed in countries with high levels of malnutrition. However, it is poor in micronutrients, which are often removed during grain processing. In this study, we have analyzed the transcriptome of rice flag leaves biofortified with Zn (900 g ha-1), Se (500 g ha-1), and Zn-Se.
