From Benchtop to Handheld Systems: Calibration Transfer for On-Site NIR System Butter Quality Monitoring.

Butter quality assessment requires rapid and reliable portable analytical tools that enable on-site analysis beyond specialized food laboratories. This study evaluated the transfer of calibration models developed on a benchtop Near-Infrared (NIR) instrument (DS25) to three handheld NIR devices (Aurora, JDSU and ISC) for the prediction of butter compositional traits and fatty acid profile. Ninety-nine butter samples from different milk production systems were used for spectral acquisition and calibration development. Different calibration transfer (CT) strategies, including spectral bias correc

Metabolomics identifies tissue-specific trends in butter clams (Saxidomus gigantea) across a subarctic fjord-type estuarine system.

Across the Circumpolar North, harvesting of marine shellfish resources is vital for continued subsistence, recreational, and commercial lifestyles. However, estuarine and intertidal systems of Southcentral Alaska experience landscape-scale challenges due to variable physical characteristics, freshwater discharge, water quality, food availability, and nutritional quality. Additionally, findings in more temperate environments may not be entirely applicable to the subarctic. The continued sustainability of this resource depends largely on our ability to understand and adapt to environmental chall

Effects of Peanut Butter Supplementation on Older Adults' Physical Function: A 6-Month Randomised Controlled Trial.

BACKGROUND: Nut consumption has been associated with a reduced risk of functional decline, but evidence from randomised controlled trials to support functional benefit is lacking. Therefore, this study aimed to investigate whether daily supplementation of peanut butter over 6 months, relative to usual care, can improve physical function in community-dwelling older adults. METHODS: One hundred and twenty older adults (aged ≥ 65 years) at risk of falls were randomly assigned to receive peanut butter (43 g/day, n = 60) or maintain usual care (control, n = 60) for 6 months. Outcomes assessed at b

A Cross-Cultural Evaluation of Liking and Perception of Salted Butter Produced from Different Feed Systems.

Perception and liking among Irish, German and USA consumers of salted butter produced from different feed systems-outdoor grass (FS-GRSS), grass/clover (FS-CLVR), and indoor concentrate (FS-TMR)-was investigated. A consumer study was conducted in all three countries. Irish and German assessors participated in ranking descriptive analysis (RDA), whereas descriptive analysis (DA) was carried out by a trained panel in the USA. Volatile analysis was conducted to identify differences in aroma compounds related to cow diet. Overall, there was no significant difference in overall liking of the butter

Dietary butter protects against ultraviolet radiation-induced suppression of contact hypersensitivity in Skh:HR-1 hairless mice.

Dietary fats modulate a wide variety of T cell functions in mice and humans. This study examined the effects of four different dietary fats, predominantly polyunsaturated sunflower oil, margarine, and predominantly saturated butter, clarified butter, on the T cell-mediated, systemic suppression of contact hypersensitivity by ultraviolet radiation in the Skh:HR-1 hairless mouse. Diets containing either 200 g/kg or 50 g/kg butter or clarified butter as the sole fat source protected against systemic photoimmunosuppression, whether the radiation source was unfiltered ultraviolet B (280-320 nm) or

Hypersensitivity reactions to food colours with special reference to the natural colour annatto extract (butter colour).

It is well known that synthetic food colours especially some azo dyes can provoke hypersensitivity reactions such as urticaria, angioneurotic oedema, and astma (Michaëlsson and Juhlin, 1973, Granholt and Thune, 1975). Natural food colours are scarcely investigated with respect to potential allergic properties. Annatto extract, a commonly used food colour in edible fats e.g. butter, has been tested in patients. Among 61 consecutive patients suffereing from chornic urticaria and/or angioneurotic oedema 56 patients were orally provoked by annatto extract during elimination diet. Challenge was per

Composition characterization of peanut embryonic axis and its application in peanut butter: Effects on texture and oxidative stability.

This study investigates peanut embryonic axis (EA) as a natural ingredient to enhance texture and oxidative stability of peanut butter. Proximate analysis showed EA had lower fat and higher fiber than cotyledon, while untargeted metabolomics revealed a higher relative abundance of triterpenoids in EA. EA partially replaced peanut kernels at 0-10% (w/w) to prepare peanut butter, and texture and rheological analyses demonstrated that EA incorporation produced a firmer and more cohesive texture. Antioxidant activity increased with EA addition, with 7.5% and 10% EA samples showing enhanced DPPH an

Shea Butter Application to the Umbilical Stump Resulting in Omphalitis and Leclercia adecarboxylata Bacteremia in a Neonate: A Case Report.

Leclercia adecarboxylata is a gram-negative, rod-shaped bacterium commonly found in nature. Its pathogenicity is mild and often results in asymptomatic carriage. However, it can cause sepsis and other life-threatening illnesses in immunocompromised individuals. Based on previous literature, the common practice of applying many unsafe substances, such as shea butter, to the umbilical cord of newborns for healing remains a significant risk factor for omphalitis and neonatal sepsis in developing countries. This case report describes a neonate showing signs of omphalitis and bacteremia, following

Effect of virgin olive oil as spreadable preparation on atherosclerosis compared to dairy butter in Apoe-deficient mice.

UNLABELLED: Olive oil is the main source of lipid energy in the Mediterranean diet and there is strong evidence of its health benefits. The effect of extra virgin olive oil (EVOO) in the form of a preparation of spreadable virgin olive oil (S-VO) on the progression of atheroma plaques was investigated in Apoe-deficient mice, a model of accelerated atherosclerosis. METHODS: Two isocaloric Western purified diets containing 20% fat, either as S-VO or as dairy butter, were used to feed 28 males and 16 females of two-month-old Apoe-deficient mice for 12 weeks. S-VO was prepared by blending more th

Lipoid Pneumonia After Prolonged Inhalation of Clarified Butter Made from the Milk of a Buffalo or Cow (Ghee).

Lipoid pneumonia is a rare form of pneumonia caused by inhalation or aspiration of fat containing substances. It can present acutely or more commonly presents as an insidious onset chronic respiratory illness. It requires a high degree of suspicion with great emphasis on history. It can mimic tuberculosis, malignancy or interstitial lung disease. We report the case of a 31-year-old male with a history of sniffing hydrogenated oil, presenting with a non-resolving pneumonia.

Clinical Evaluation of a Diaper Containing a Shea Butter-Based Emollient and Impact on Diapered Skin Erythema.

BACKGROUND/OBJECTIVES: Skin is a baby's first line of defense against mechanical, chemical, enzymatic, and microbial insults. Preventive interventions in the diapered area are important given repetitive, episodic exposures to irritants in urine and feces. For over a century, physicians have utilized petrolatum-based emollients (PBE) prophylactically and retroactively for skin irritation in the diapered area. In this study, a diaper containing an anhydrous, shea butter-based emollient (SBE) was evaluated for its skin effects on adult and baby skin. METHODS: A 6-week, randomized, crossover, on-

Vegetable Butters and Oils as Therapeutically and Cosmetically Active Ingredients for Dermal Use: A Review of Clinical Studies.

While the chemical composition of vegetable butters and oils has been studied in detail, there is limited knowledge about their mechanisms of action after application on the skin. To understand their dermal effects better, 27 clinical studies evaluating 17 vegetable oils (almond, argan, avocado, borage, coconut, evening primrose, kukui, marula, mustard, neem, olive, rapeseed, sacha inchi, safflower, shea butter, soybean and sunflower oils) were reviewed in this research. The reviewed studies focused on non-affected skin, infant skin, psoriasis, xerosis, UVB-induced erythema, atopic dermatitis,

Vegetable Butter-Based Nanocarriers: Do Nanoparticulation and Quercetin Loading Modulate In vitro Cellular Effects Involved in Wound Healing?

The need for advanced yet cost-effective topical strategies for chronic skin wounds motivated this study to evaluate nanostructured lipid carriers (NLCs) based on shea or cocoa butter. Our first goal was to compare NLCs with conventional emulsions to evaluate whether butter nanoparticulation confers biological advantages for wound-related applications. NLCs were produced by hot homogenization-sonication and characterized in terms of particle size, polydispersity, morphology, and stability. Both butter-based NLCs formed stable, monodisperse nanometric systems (size 197-240 nm, PDI < 0.2). In Ha
