Preserved eggs are produced by alkaline pickling, during which uncontrolled hydroxide diffusion can cause excessive egg-white liquefaction. Calcium chloride was evaluated as a modulator of alkali diffusion and gel stability during pickling. Eggs were pickled in 4% NaOH containing 0-0.8% CaCl2 or 0.2% CuSO4 for six weeks at 25 °C. Eggshell surface morphology, internal alkalinity, moisture redistribution, protein cross-linking, and gel structure were examined. At the 0.2% CaCl2 treatment, regulated hydroxide diffusion promoted controlled protein unfolding, more balanced thiol-disulfide transitio

In this study, it was aimed to determine the effects of using UV light instead of formaldehyde in disinfection of hatching eggs on the microbial load, shell and yolk compositions, embryo development, hatching results and chick characteristics. 552 hatching eggs were divided into formaldehyde fumigation and disinfection with UV groups. After disinfection, bacteriological growth was not observed in groups. While the difference between the groups in terms of hatching results was insignificant, it was determined that the incubation period in the UV group was shorter than that of formaldehyde group

Eggs are a highly nutritious food source used in a wide range of food products. In Australia, eggs are a frequent source of foodborne salmonellosis outbreaks, associated with eggshell contamination with Salmonella enterica serovar Typhimurium (ST). Despite their potentially hazardous nature, raw eggs are often used and consumed in mayonnaise, mousse, ice cream and eggnog. The aim of this study was to develop a shell egg decontamination method that removed ST contamination from the outside of an egg without impacting its usability. The decontamination method was developed by the adaptation of a

In recent years, the number of human salmonellosis cases in Western Australia (WA) has increased more dramatically than in any other Australian state. In 2017, the number of cases in WA was more than double the five-year average, and eggs had emerged as the key culprit for several Salmonella foodborne disease outbreaks. To better understand such an epidemiologically intriguing situation, our research goal was to investigate the prevalence, serovar diversity, multilocus sequence types, and antimicrobial resistance of non-typhoidal Salmonella contamination in retail eggs produced and sold in WA.

Non-destructive testing (NDT) for eggshell faults is highly important for the egg industry, as cracked eggs account for around 3% of total production. The most commonly used method at present, candling, is labor intensive, while computer vision systems are expensive and complicated. In this paper, we present a simple, yet efficient, novel method for eggshell crack detection by acoustic spectroscopy. Altogether, 693 sound recordings were evaluated by different classification methods. The results show a cross-validated 2.1% total classification error, with only 0.87% false positive rate, which i

Eggs of Trichuris trichiura were prepared for scanning electron microscopy (SEM) by the dimethylsulfoxide freeze-cracking method. The egg-shell and oocyte were examined by SEM. The egg has a chitinous shell which consists of more than 10 layers of dense lamellae. The shell is bordered by a limiting membrane. An operculum and a collar made of chitinous shell together form the opercular area. The operculum is an empty cavity. The chitinous fibers of the egg-shell in this area are diffuse and loose, with numerous micropores or spaces. The egg-shell in this area therefore appears to form a fine tu

1. Vascular adjustments to the process of egg formation were examined in the unanaesthetised laying hen, by the radioactive microspheres method. 2. Three- to four-fold increases in blood flow were found in segments surrounding the egg during its passage along the oviduct, possibly due to an enhanced metabolic activity in the muscle layer of the oviduct. 3. Shell-gland blood flow was minimal in the absence of an egg and increased gradually to a maximum (5-fold) about 5 h after entrance of the egg into the shell gland. This parallels the rate of calcification of the egg shell. 4. Changes in bloo

BACKGROUND: Eggs are essential food sources as they provide low cost and high nutritional content of animal protein. The preservation period is one of the apparent factors affecting egg quality. Previous studies based on traditional detection techniques demonstrated that storage period would significantly influence egg weight, eggshell weight, albumen height, haugh unit (HU) and albumen viscosity. Herein, we employed non-targeted metabolome technology to reveal the comprehensive changes in metabolite composition in duck eggs under the impacts of storage period.
RESULTS: The results showed tha

The proteins and pigment of the eggshell of the Siamese crocodile (Crocodylus siamensis) were analysed. For proteomic analysis, various decalcification methods were used when the two main surface layers were analyzed. These layers are important for antimicrobial defense of egg (particularly the cuticle). We found 58 proteins in both layers, of which 4 were specific for the cuticle and 26 for the palisade (honeycomb) layer. Substantial differences between proteins in the eggshell of crocodile and previously described birds' eggshells exist (both in terms of quality and quantity), however, the e

Egg inundation often results in poor hatching success in crocodylians. However, how tolerant eggs are to submergence, and/or how eggshell ultrastructure may affect embryo survival when inundated, are not well understood. In this study, our objective was to determine if embryo survival in Caiman latirostris is affected by eggshell surface roughness, when eggs are submerged under water. Tolerance to inundation was tested early (day 30) versus late (day 60) in development, using eight clutches (four per time treatments), subdivided into four groups: (N = 9 per clutch per treatment; 9 × 4 = 36 egg

The eggshell membrane (ESM), resembling the extracellular matrix (ECM), acts as a protective barrier against bacterial invasion and offers various biofunctions due to its porous structure and protein-rich composition, such as ovalbumin, ovotransferrin, collagen, soluble protein, and antimicrobial proteins. However, the structure of ESM primarily comprises disulfide bonds and heterochains, which poses a challenge for protein solubilization/extraction. Therefore, the method of dissolving and extracting bioactive protein components from ESM has significant potential value and importance for explo

A four-house broiler breeder farm of approximately 35-wk-old hens was diagnosed with egg drop syndrome (EDS'76) utilizing PCR and hemagglutination inhibition (HI) testing. Based on communication with local practitioners, the geographic area near where this flock was located had numerous EDS'76 cases in table egg layers at the time of diagnosis. An egg production drop was seen in the broiler breeder flock over a 7-day period, which prompted an investigation. During this investigation, a significant number of shell-less, wrinkled, and pale eggs were noted, but no increases in mortality or respir

Copper deficiency in the laying hen resulted in anemia and the production of eggs which were abnormal in size and shape. Many of the eggs had shells which were wrinkled and rough in texture. There was also an increase in the number of shell-less eggs. Examination of malformed egg shells using the scanning electron microscope revealed ultrastructural changes in the mammillary layer of the shell. The effect of copper deficiency on shell formation was attributed to the shell membranes which were altered in color, appearance, and physical consistency. Amino acid analysis of the membranes indicated

OBJECTIVES: Natural alternatives to synthetic additives are being explored as a means to enhance laying hen performance and egg quality. The study conducted a systematic review and meta-analysis to evaluate the effect of dietary supplementation with Thymus vulgaris (thyme) on productive performance and egg quality in laying hens.
METHODS: A comprehensive search of databases identified 18 eligible studies. Data were analysed using random-effects models, with subgroup analyses based on the thyme form (powder, essential oil, extract) and supplementation duration (≤ 8 weeks, > 8 weeks). The unsta

Consumption of shell eggs has been associated with Salmonella Enteritidis (SE) infections in humans in the United States. Because of this, the Pennsylvania Egg Quality Assurance Program (PEQAP) was developed and implemented in 1994. The PEQAP involves periodic flock testing and management practices to minimize SE contamination of shell eggs. Subsequently, the U.S. Food and Drug Administration (FDA) introduced a mandatory federal program in 2010 and 2012 for shell egg producers modeled closely after PEQAP to reduce the incidence and prevalence of SE during production, storage, and transport nat

BACKGROUND: In this study, we explored the characteristics and causes of freckle formation. We collected 15 normal and freckled eggs each for eggshell index testing and hypothesized that the structure and function of the uterus would have a direct effect on freckled egg production given that eggshells are formed in the uterus. To test this hypothesis, we collected uterine tissue from laying hens (418 days of age) that laid normal (Group C, n = 13) and freckled (Group T, n = 16) eggs for 7 consecutive days.
RESULTS: When we examined the eggshell quality, we found that the L value was significa
