Imidazolium polymerized ionic liquid-based membranes for the early warning detection of aflatoxins in fermented foods.

This study uses porous ionic liquid gel membranes (PILs) for early-warning detection of aflatoxins (AFTs) in fermented foods. We prepared a stable, cross-linked membrane by embedding imidazolium-based ILs into hydroxyethyl cellulose‑sodium polyacrylate. Its mild, tunable adsorption captures unstable AFT precursors and enables accurate, nondestructive quantification in complex food matrices. [AVIM]Br membranes selectively bind coumarin-type AFTs via amine groups (91.7-99.3% recovery); [BVIM]Br membranes bind anthraquinone-type precursors via phenylboronic acid (73.1-99.4% recovery). Coupled wit

Foods for Special Dietary Needs: Non-dairy Plant-based Milk Substitutes and Fermented Dairy-type Products.

A growing number of consumers opt for plant-based milk substitutes for medical reasons or as a lifestyle choice. Medical reasons include lactose intolerance, with a worldwide prevalence of 75%, and cow's milk allergy. Also, in countries where mammal milk is scarce and expensive, plant milk substitutes serve as a more affordable option. However, many of these products have sensory characteristics objectionable to the mainstream western palate. Technologically, plant milk substitutes are suspensions of dissolved and disintegrated plant material in water, resembling cow's milk in appearance. They

Perspectives on the probiotic potential of lactic acid bacteria from African traditional fermented foods and beverages.

Diverse African traditional fermented foods and beverages, produced using different types of fermentation, have been used since antiquity because of their numerous nutritional values. Lactic acid bacteria (LAB) isolated from these products have emerged as a welcome source of antimicrobials and therapeutics, and are accepted as probiotics. Probiotics are defined as live microbial food supplements which beneficially affect the host by improving the intestinal microbial balance. Currently, popular probiotics are derived from fermented milk products. However, with the growing number of consumers w

Allergenicity Assessment of Precision Fermentation-Derived Food Proteins.

Precision fermentation (PF) yields single, well-characterized recombinant proteins, such as dairy and egg white proteins, at an industrial scale, and several products have reached the market. Numerous PF-derived proteins, including ovomucoid and β-lactoglobulin, are known allergens designed as exact structural copies of their native homologs; hence, assessments center on equivalence rather than novel hazards. Therefore, the current tiered scheme of allergen database comparison, digestibility testing, and serum immunoglobulin E binding assays is applicable. Nevertheless, residual host cell prot

Designing scalable precision fermentation for sustainable food proteins.

Precision fermentation (PF) holds strong potential as a livestock-free platform for producing sustainable, high-value proteins to support a growing global population. However, broader adoption depends on achieving cost and functional parity with animal-derived proteins but has historically been limited by low volumetric productivity and yields that drive up costs. These challenges intensify at industrial scale, where linear process scale-up often fails due to technical, operational, and engineering constraints in large fermenters, widening the gap between affordability and supply. Differential adaptation of the yeast Candida anglica to fermented food.

A single strain of Candida anglica, isolated from cider, is available in international yeast collections. We present here seven new strains isolated from French PDO cheeses. For one of the cheese strains, we achieved a high-quality genome assembly of 13.7 Mb with eight near-complete telomere-to-telomere chromosomes. The genomes of two additional cheese strains and of the cider strain were also assembled and annotated, resulting in a core genome of 5966 coding sequences. Phylogenetic analysis showed that the seven cheese strains clustered together, away from the cider strain. Mating-type locus

Nutritional and potential health benefits of fermented food proteins.

BACKGROUND: Protein fermentation continues to gain popularity as a result of several factors, including the cost-effectiveness of the process and the positive correlation of fermented protein consumption, with a reduced risk of developing diet-related diseases such as diabetes and cardiovascular disorders, as well as their enhanced nutritional and techno-functional properties. Nonetheless, the nutritional and health benefits of food protein fermentation such as enhanced nutrient bioavailability, reduced antinutritional factors (ANFs) and enriched bioactive peptides (BAPs) are often overlooked.

Fermentation as a Functionalization Tool: Unlocking Agro-Food Residue Carbohydrates for Future Food Matrices.

Agro-food industrial residues (AFIRs) represent an underutilized source of recalcitrant carbohydrates, with food applications limited by poor hydration and sensory properties. Current physical or chemical processing strategies, however, are insufficient to achieve precise modulation, thereby creating a critical gap between residue availability and food applicability. This review reconceptualizes fermentation as a functionalization tool to transform these residues into high-value ingredients within a circular bioeconomy, specifically to address this gap. Their physicochemical targets can be cat

Food fermentation - Significance to public health and sustainability challenges of modern diet and food systems.

Current modern dietary patterns throughout the world have resulted in adverse health implications. On the other hand, current agricultural practices and methods employed in food industries lead to the exploitation of the environment and generate nutrient-rich waste, which is underutilized. The simple answer to both these problems could be the adoption of fermentation technology. Due to the presence of functional microorganisms, fermented foods possess unique properties like probiotics properties, antimicrobial, antioxidant, peptide production, etc., imparting health benefits to consumers. Next-generation fermented foods from non-conventional proteins: Linking fermentation dynamics, flavor chemistry, and gut microbiome modulation.

The urgent need to diversify protein sources beyond animal agriculture has propelled non-conventional proteins (e.g., insects, microalgae, single-cell organisms, novel plants) to the forefront of food innovation. However, their adoption is limited by off-flavors, anti-nutritional factors, and low digestibility. Fermentation can address these drawbacks and may impart health-relevant benefits, though human evidence remains limited. This review defines next-generation fermented foods (NGFFs) as rationally fermented non-conventional protein substrates achieving superior sensory, nutritional, and g

Insights into the analysis of microbial communities in fermented foods from the perspective of DNA-based techniques.

The quality, flavor, and stability of fermented foods depend on the microbial community. However, microbial dynamics are difficult to observe directly, leading to limited control over fermentation. High-throughput sequencing is a revolutionary tool for microbial characterization, among which DNA-based amplicon and metagenomic sequencing are core techniques. Nevertheless, the related data processing workflows in the context of fermented foods have not yet been systematically summarized, hindering the translation of research findings into fermentation practices. This review clarifies the applica

Volatile formation by combined cultures of yeast and homofermentative or heterofermentative lactobacilli in plant-based fermented foods.

Despite increasing interest of consumers in plant-based products, sales of the latter have been subtly decreasing mainly due to organoleptic challenges. Fermentation offers a sustainable option for improving flavour production in plant-based products. Yeast and lactobacilli are common food fermenting microbes, but a proper understanding of the interactions between the two microorganisms during flavour formation is lacking. This study explored the impact of a co-cultures of yeast and lactobacilli on aroma formation during fermentation of wheat and pulse-based food systems. Volatile analysis usi

Effect of Non-Saccharomyces Yeasts Derived from Traditional Fermented Foods on Beer Fermentation Characteristics and Flavor Profiles.

In recent years, numerous studies have demonstrated that non-Saccharomyces yeasts hold potential for industrial application and aroma generation during fermentation. Non-Saccharomyces wild yeasts can be important tools in the development of new products, and the objective of this work was to obtain and characterize novel yeast isolates for their ability to produce beer. Traditional fermented beverages serve as a vital source of yeast strains that can exhibit unique characteristics during the brewing process. Thus, 22 strains of Saccharomycopsis fibuligera were isolated from traditional ferment

Yeasts originating from fermented foods, their potential as probiotics and therapeutic implication for human health and disease.

Yeasts derived from fermented foods have historically been known for their organoleptic properties, enriching nutritional values, and producing bioactive metabolites with therapeutic potential. In this review, we discuss the yeast flora in fermented foods, their functional aspects in fermentation, as well as their probiotic and biotherapeutic properties. These yeasts have numerous physical and biochemical characteristics, such as larger cells as compared to bacteria, a rigid cell wall composed primarily of glucans and mannans, natural resistance to antibiotics, and the secretion of secondary m

Influence of fermentation and other processing steps on the folate content of a traditional African cereal-based fermented food.

Folate deficiency can cause a number of diseases including neural tube defects and megaloblastic anemia, and still occurs in both developed and developing countries. Cereal-based food products are staple foods in many countries, and may therefore be useful sources of folate. The production of folate by microorganisms has been demonstrated in some cereal-based fermented foods, but has never been studied in a traditional African cereal based food spontaneously fermented. The microbiota of ben-saalga, a pearl-millet based fermented porridge frequently consumed in Burkina Faso, has a good genetic

Fermentable oligosaccharides, disaccharides, monosaccharides and polyols (FODMAPs) and nonallergic food intolerance: FODMAPs or food chemicals?

Food intolerance in irritable bowel syndrome (IBS) is increasingly being recognized, with patients convinced that diet plays a role in symptom induction. Evidence is building to implicate fermentable oligosaccharides, disaccharides, monosaccharides and polyols (FODMAPs) in the onset of abdominal pain, bloating, wind and altered bowel habit through their fermentation and osmotic effects. Hypersensitivity to normal levels of luminal distension is known to occur in patients with IBS, with consideration of food chemical intolerance likely to answer many questions about this physiological process.
