BACKGROUND: Lack of adequate sanitation and refuse disposal facilities are among the factors found to contribute to food contamination among street food vendors. Most vending facilities are near crowded places, such as bus terminals or markets to attract consumers, and the few basic amenities, such as toilets, are inadequate. The objective of the study was to determine which sanitation practices were associated with food contamination in Githurai and Gikomba markets in Nairobi County.
METHODOLOGY: Using a cross-sectional study design, we systematically randomly sampled 149 street food vendors

The limited availability of fresh water sources across many developing countries necessitates the intake of wastewater as an alternative option for irrigation, raising worries about heavy metal contamination. The present study evaluated the accumulation of chromium (Cr), lead (Pb), cadmium (Cd), copper (Cu), and nickel (Ni) in easily available and highly consumed leafy vegetables (fenugreek, spinach, and mustard) irrigated with industrial effluents (post-primary, secondary, and tertiary treatments), drain water, and groundwater in a controlled pot experiment. The concentrations of Cr, Pb, Cd,

Food adulteration is a critical global threat to public health, economic stability, and social welfare. It primarily occurs in two forms: intentional and incidental. Intentional adulteration, or economically motivated adulteration, involves deliberately adding fraudulent or toxic substances such as hazardous ripening agents and harmful coloring to increase profitability. Substitution of food species is also a widely practiced form. Such adulteration can cause severe acute and chronic health issues, ranging from gastrointestinal distress to cancer and organ failure. Incidental adulteration happ

BACKGROUND: Gastrointestinal infections are a global public health problem. In Burkina Faso, West Africa, exposure to Salmonella through the consumption of unhygienic street food represents a major risk of infection requiring detailed evaluation.
METHODS: Between June 2017 and July 2018, we sampled 201 street food stalls, in 11 geographic sectors of Ouagadougou, Burkina Faso. We checked for Salmonella contamination in 201 sandwiches (one per seller), according to the ISO 6579:2002 standard. All Salmonella isolates were characterized by serotyping and antimicrobial susceptibility testing, and

Food poisoning caused by bacteria is a major cause of disease and death worldwide. Herein we describe the use of Janus micromotors as mobile sensors for the detection of toxins released by enterobacteria as indicators of food contamination. The micromotors are prepared by a Pickering emulsion approach and rely on the simultaneous encapsulation of platinum nanoparticles for enhanced bubble-propulsion and receptor-functionalized quantum dots (QDs) for selective binding with the 3-deoxy-d-manno-oct-2-ulosonic acid target in the endotoxin molecule. Lipopolysaccharides (LPS) from Salmonella enteric

Listeria monocytogenes has been the most common microbial cause of cheese-related recalls in both the United States and Canada in recent years. Since L. monocytogenes is inactivated by pasteurization, the majority of these cases have been linked to environmental and cross-contamination of fresh-soft, soft-ripened, and semi-soft cheeses. Cross-contamination of foods with L. monocytogenes is a continuous risk throughout the food supply chain and presents unique challenges for subsequent illness and outbreak investigations. Reports on outbreaks of listeriosis attributed to cross-contamination dow

On August 2019 a staphylococcal food poisoning outbreak occurred in an elderly home in Piedmont, Italy. The epidemiological investigation performed among the persons that consumed the meal identified chicken salad as the most likely source of the outbreak. Staphylococcus aureus was isolated from a total of seven samples, namely one vomit sample from a guest of the nursing home, two food samples (chicken salad with and without mayonnaise) and nasal swabs collected from a total of four persons working in the kitchen of the nursing home. The maximum likelihood tree obtained using single nucleotid

In Lebanon, agricultural soils and crops are exposed to multiple sources of heavy metals; however, only a limited number of studies have assessed contamination in food crops, and these have been restricted to specific regions. This study evaluated heavy metal contamination in leafy vegetables across major agricultural areas of Lebanon. A total of 48 vegetable samples, representing 16 species, were collected from 36 agricultural fields nationwide. Concentrations of zinc (Zn), copper (Cu), chromium (Cr), cadmium (Cd), nickel (Ni), and lead (Pb) were determined using atomic absorption spectrophot

Pyrrolizidine alkaloids (PAs) are the most widespread plant-derived toxins globally. Humans are frequently exposed to PAs through ingestion of PA-contaminated food products, with chronic dietary exposure estimated at up to 48.4 ng/kg body weight/day, posing a significant global health threat. Aside from the well-documented hepatotoxicity, dietary exposure to PAs is strongly implicated in the development of pulmonary arterial hypertension (PAH), a serious and often fatal disease with limited treatment options. However, the underlying molecular mechanisms remain poorly defined. This review provi

Additives, such as bisphenol A (BPA) that are added to packaging material to enhance functionality may migrate into food products creating a concern for food safety. BPA has been linked to various chronic diseases, such as: diabetes, obesity, prostate cancer, impaired thyroid function, and several other metabolic disorders. To safeguard consumers, BPA migration limits have been defined by regulatory bodies. However, it is important to address the underlying factors and mechanisms so that they can be optimized in order to minimize BPA migration. In this review, we determine the relative importa

A gluten-free diet (GFD) is currently the only effective treatment for celiac disease (CD); an individual's daily intake of gluten should not exceed 10 mg. However, it is difficult to maintain a strict oral diet for life and at least one-third of patients with CD are exposed to gluten, despite their best efforts at dietary modifications. It has been demonstrated that both natural and certified gluten-free foods can be heavily contaminated with gluten well above the commonly accepted threshold of 20 mg/kg. Moreover, meals from food services such as restaurants, workplaces, and schools remain a

Listeria monocytogenes, a gram-positive bacterium, is the cause of Listeriosis. Its mortality is currently the highest for food borne diseases. Affected are mainly elderly or immunocompromised patients, as well as pregnant women. Despite food hygiene measures and surveillance, outbreaks are possible in developed countries. In the canton of Valais, six hospitalized cases including one death occurred between end of March and the beginning of May 2020. The typing of these strains of L. monocytogenes showed a link to a larger Swiss outbreak associated with contaminated soft cheese (Brie). The outb

Mycotoxins are fungal secondary metabolites that have been associated with severe toxic effects to vertebrates produced by many important phytopathogenic and food spoilage fungi including Aspergillus, Penicillium, Fusarium, and Alternaria species. The contamination of foods and animal feeds with mycotoxins is a worldwide problem. We reviewed various control strategies to prevent the growth of mycotoxigenic fungi as well as to inhibit mycotoxin biosynthesis including pre-harvest (resistance varieties, field management and the use of biological and chemical agents), harvest management, and post-

On August 29, 1996, the Jackson County Health Department (JCHD) in southwestern Oklahoma notified the Oklahoma State Department of Health (OSDH) of a cluster of Campylobacter jejuni infections that occurred during August 16-20 among persons who had eaten lunch at a local restaurant on August 15. This report summarizes the investigation of these cases and indicates that C. jejuni infection was most likely acquired from eating lettuce cross-contaminated with raw chicken. This report also emphasizes the need to keep certain foods and cooking utensils separate during food handling.

The enteric nervous system (ENS), a key component of the gut-brain axis, has emerged as a critical player in the pathogenesis of Parkinson's disease (PD). It is the first neural system exposed to food contaminants (FCs)-a diverse group of ubiquitous toxic compounds fortuitously present in food derived from production, processing, storage, or environmental contamination. Emerging evidence suggests that FCs may initiate or amplify neurodegenerative processes, yet their effects on the ENS and their impact in gut-to-brain communication remain insufficiently characterized. This systematic review sy

We present a case of a woman in her early 30s who developed severe obsessive-compulsive disorder (OCD) symptoms following exposure to news reports about instant noodles allegedly contaminated with a carcinogenic substance. The news triggered an overwhelming fear of ingesting harmful food associated with persistent and intrusive thoughts about contamination in this patient. As a result, she adopted extreme food avoidance behaviours and restricted her oral intake for 2 weeks, causing significant weight loss and anxiety. Following a visit to her psychiatrist and a prescription for a selective ser

The number of people diagnosed with diabetes continues to increase, especially among younger populations. Apart from genetic predisposition and lifestyle, there is increasing scientific and public concern that environmental agents may also contribute to diabetes. Food contamination by chemical substances that originate from packaging materials, or are the result of chemical reactions during food processing, is generally recognized as a worldwide problem with potential health hazards. Phthalates, bisphenol A (BPA) and acrylamide (AA) have been the focus of attention in recent years, due to the

BACKGROUND: Contamination of agricultural commodities with multiple trichothecene mycotoxins, produced by toxigenic Fusarium species, is a food safety issue, which greatly affects grain production and marketing worldwide. Importantly, exposure to multiple trichothecenes may increase toxicity in animals due to their synergistic and/or additive effects. To address the problem this study aimed to achieve a novel biological trait capable of detoxifying various food and feed contaminating trichothecenes under aerobic and anaerobic conditions and wide range of temperatures.
