Physical-Chemical and Microbiological Characterisation of Blueberry By-Products (Vaccinium myrtillus L.) as Potential Food Ingredients.

The production of blueberry juice generates large quantities of waste products such as skins, pulp and seeds. These by-products contain high levels of bioactive compounds and are suitable for use as functional ingredients in food systems. In this study three powdered products obtained from blueberry pomace-with skins and seeds, seedless, and with seeds-have been physically-chemically and microbiologically characterised as being the individual anthocyanins and phenolic compounds identified by HPLC-QTOF. Furthermore, to ensure product safety, the effect of a heat treatment at 90 °C for 30, 60, 9

In Vitro Evaluation of Intestinal Barrier Function after Exposure to Digested Pea Ingredients─Food Matrix Effect.

Dietary fibers (DF) are important components of human and animal diets. However, they can decrease protein digestibility and absorption and thus the nutritional value of a food. The aim of this study was to investigate how the form of delivery of pea DF impacted the integrity of the intestinal barrier and, thereby, the potential absorption of molecules. To this end, two pea flours, with either intact or ruptured cell walls, and two controls, pea fibers and pea protein, were digested in vitro and the digesta obtained applied onto a jejunum porcine cell line (IPEC-J2 cells). Cell viability and i

Food safety assessment of last mile delivery as an alternative food distribution system for ready-to-eat multi-ingredient salad bowls.

A survey of ready-to-eat (RTE) multi-ingredient salad bowls, ordered online and delivered to customers via last mile delivery, was conducted in three European cities (Ghent, Belgium; Tulln, Austria; Burgos, Spain) to assess their microbiological quality, hygiene, and safety. Samples were analysed for foodborne pathogens (enumeration of presumptive Bacillus cereus, and detection of Listeria monocytogenes and Salmonella spp. per 25 g), a hygiene indicator (enumeration of generic E. coli), and general parameters (mesophilic aerobic plate count and enumeration of Enterobacteriaceae). Overall, the

Exploring the Protective Effect of Food Drugs against Viral Diseases: Interaction of Functional Food Ingredients and SARS-CoV-2, Influenza Virus, and HSV.

A complex network of processes inside the human immune system provides resistance against a wide range of pathologies. These defenses form an innate and adaptive immunity, in which certain immune components work together to counteract infections. In addition to inherited variables, the susceptibility to diseases may be influenced by factors such as lifestyle choices and aging, as well as environmental determinants. It has been shown that certain dietary chemical components regulate signal transduction and cell morphologies which, in turn, have consequences on pathophysiology. The consumption o

Assessment of black cumin (Nigella sativa L.) as a food ingredient and putative therapeutic agent.

The whole or ground seeds of the food ingredient Nigella sativa L., known in Western culture as "black cumin" or "black caraway", has a three-millennial history of use in Middle- and Far-Eastern cultures as a food ingredient. The seed and its extracts have also been increasingly reported as a successful therapeutic agent with efficacy often attributed to the presence of the powerful antioxidant, thymoquinone. However, quantitative analysis of the seed (especially the volatile fraction) yields widely variable results, which may be due to one or a combination of different crop origins or possibl

Assessing the impact of a mushroom-derived food ingredient on vitamin D levels in healthy volunteers.

BACKGROUND: Prevalence of vitamin D insufficiency/deficiency has been noted in athletic populations, although less is known about recreationally active individuals. Biofortification of natural food sources (e.g. UV radiated mushrooms) may support vitamin D status and is therefore of current scientific and commercial interest. The aim of this study was to assess the impact of a mushroom-derived food ingredient on vitamin D status in recreationally active, healthy volunteers. METHODS: Twenty-eight participants were randomly assigned to either: 25 μg (1000 IU) encapsulated natural mushroom-deriv

Egg-Derived Lipids and Phospholipids as Emerging Functional Ingredients: Molecular Structure, Bioavailability, Metabolic Effects, and Food Applications.

Egg yolk is often treated in the functional-food literature as a single, compositionally uniform fat depot, but this simplification obscures its actual structure: the yolk is a compartmentalized lipid system in which egg-yolk lipids are distributed between a triglyceride-dominant, low-density-lipoprotein (LDL) plasma fraction and a phospholipid-enriched, high-density-lipoprotein (HDL) granule fraction. Prior reviews of egg-yolk lipid bioactivity, extraction methodology, and flavor chemistry have generally addressed these topics as separate studies; here, molecular architecture, extraction and

Sulphite analysis of food ingredients: false positive responses with butter flavourings in the optimized Monier-Williams method.

The analysis of commercial butter flavouring materials for sulphite by the optimized Monier-Williams method revealed detectable levels of apparent sulphur dioxide (1810 ppm for butter oil, 5760 ppm for butter flavour, and 14.5 ppm for butter derivative) even though the manufacturers claimed that no sulphites were used in processing these ingredients. The presence of volatile fatty acids in these ingredients may explain the anomalous results. Volatile fatty acids were found to interfere with the optimized Monier-Williams method for sulphite determination, detectable levels of titratable acid be

Complexes of black kidney bean protein, pectin, and quercetin as potential antioxidant food ingredients: Fabrication and characterization.

This study developed non-covalent complexes of black kidney bean protein isolate (BBPI), pectin (PEC), and quercetin (Que) as nutraceutical delivery systems. The optimized Que-BBPI-PEC (mass ratio 0.1:3:1) exhibited a particle size of 479.73 nm (PDI = 0.38) with 94.72 % Que encapsulation efficiency. Electrostatic and hydrogen bonding primarily governed BBPI-PEC interactions, while Que integrated spontaneously at a single binding site, driven by hydrogen bonding and hydrophobic interactions. Overall, the amorphous Que-BBPI-PEC significantly enhanced Que stability under UV exposure, heat, and st

Chemical profiling, antioxidant, and antibacterial properties of Tropaeolum majus L. extract as a functional food ingredient.

BACKGROUND: Nasturtium (Tropaeolum majus L.) is an edible plant that contains a diverse array of bioactive compounds, including phenolics, glucosinolates, and their hydrolysis products, isothiocyanates. Despite its functional potential, the plant remains largely underutilized, as it is predominantly cultivated as an ornamental species. Its limited incorporation into food products is primarily attributed to the sulfurous odor and pungent, bitter taste generated by glucosinolate degradation products. Concentrating these bioactive compounds through extraction offers a promising approach to reduce

Acanthus mollis Leaf Extract as Potential New Food Ingredient in the Prevention of Aging-Related Neurodegeneration.

Life expectancy in high-income countries is increasing, leading to a higher incidence of age-related neurodegenerative diseases. To address this urgent medical need, several molecular targets have been identified, including advanced glycation end products (AGEs) and tyrosinase. Given the well-established role of diet in counteracting degenerative processes, this study aimed to identify a potential food ingredient with combined anti-tyrosinase and anti-glycative properties. Acanthus mollis L. was selected based on its inclusion in the BelFrIt list and its known content of tyrosinase inhibitors,

Evaluation of anti-Fel d 1 IgY ingredient for pet food on growth performance in kittens.

INTRODUCTION: The domestic cat (Felis catus) is one of the most common pets. Worldwide, approximately one in five adults are sensitive to cat allergens. The major cat allergen is the secretoglobulin Fel d 1, which is primarily produced in the salivary and sebaceous glands. Chickens produce IgY antibodies, which are similar in structure to mammalian IgG. When chickens are exposed to Fel d 1, anti-Fel d 1-specific IgY (AFD1) is produced and is naturally concentrated in egg yolk. The aim of this study was to evaluate the tolerability, effects on growth and food consumption, and potential adverse

Edible Mushroom Polysaccharides as Functional Food Ingredients for Metabolic Health: Preparation, Techno-Functional Behavior, and Requirements for Translation.

Edible mushroom polysaccharide (EMP) preparations have repeatedly improved glycemic control, adiposity, lipid homeostasis and hepatic lipid accumulation in animal models, and luminal assays and microbiota-perturbation experiments support the routes involved. Selected preparations also thicken, emulsify, retain water and modify food matrices. Yet these findings rarely concern the same material: metabolic, mechanistic and techno-functional studies usually examine different preparations, and retained function is seldom assessed after formulation, processing and digestion. This narrative review us
