Bioprotection strategies in winemaking.

Worldwide the interest for biological control of food spoilage microorganisms has significantly increased over the last decade. Wine makes no exception to this trend, as consumer demands for wines free of preservatives that are considered negative for human health, increase. Biological control during wine fermentation aims at producing high quality wines, while minimizing, or even eliminating, the use of chemical additives. Its success lies in the inoculation of microorganisms to prevent, inhibit or kill undesired microbes, therefore maintaining wine spoilage at the lowest level. The food indu

Cell-free supernatants produced by lactic acid bacteria reduce Salmonella population in vitro.

The genus Salmonella is closely associated with foodborne outbreaks and animal diseases, and reports of antimicrobial resistance in Salmonella species are frequent. Several alternatives have been developed to control this pathogen, such as cell-free supernatants (CFS). Our objective here was to evaluate the use of lactic acid bacteria (LAB) CFS against Salmonella in vitro. Seventeen strains of LAB were used to produce CFS, and their antimicrobial activity was screened towards six strains of Salmonella. In addition, CFS were also pH-neutralized and/or boiled. Those with the best results were ly

Single-Step Production of Mannitol From Yacon Fructo-Oligosaccharides Using Fructophilic Lactic Acid Bacteria.

Mannitol is a naturally occurring sugar alcohol with several applications in the food and pharmaceutical industries, with special interest as a low-calorie sweetener. While mannitol can be synthesized chemically, synthesis by bacterial fermentation is an attractive means of production due to its low cost, mild (near-ambient) conditions for synthesis and high yield. Bacterial production also allows the possibility of using low-cost, second-generation feedstocks to produce mannitol in a sustainable manner. In this work, we describe the feasibility of producing mannitol from yacon (Smallanthus so

A systematically biosynthetic investigation of lactic acid bacteria reveals diverse antagonistic bacteriocins that potentially shape the human microbiome.

BACKGROUND: Lactic acid bacteria (LAB) produce various bioactive secondary metabolites (SMs), which endow LAB with a protective role for the host. However, the biosynthetic potentials of LAB-derived SMs remain elusive, particularly in their diversity, abundance, and distribution in the human microbiome. Thus, it is still unknown to what extent LAB-derived SMs are involved in microbiome homeostasis. RESULTS: Here, we systematically investigate the biosynthetic potential of LAB from 31,977 LAB genomes, identifying 130,051 secondary metabolite biosynthetic gene clusters (BGCs) of 2,849 gene clus

Comparison of northeast sauerkraut fermentation between single lactic acid bacteria strains and traditional fermentation.

The quality characteristics of sauerkraut fermented with autochthonous LAB selected from traditional northeast sauerkraut were investigated. The physicochemical, microbiological and metabolome were also determined. The pH decreased rapidly in inoculated sauerkraut along with high sugar utilization and acid production. qPCR analysis showed that inoculated products exhibited sufficient numbers of beneficial bacteria. PCA showed clear differences in volatilome profiles of sauerkraut depending on starter cultures used. The greatest abundance of esters (ethyl lactate, ethyl acetate and isoamyl acet

Enhancement of immunomodulative effect of lactic acid bacteria on plasmacytoid dendritic cells with sucrose palmitate.

Plasmacytoid dendritic cells (pDCs) play a key role in the immune response against viruses. In addition, recent research has suggested that pDCs possess direct and indirect tumoricidal activities. We previously found that a lactic acid bacteria strain, Lactococcus lactis JCM 5805 (LC-Plasma), stimulated pDCs and prevented viral infection in mouse and human studies. Meanwhile, emulsifiers have recently been highlighted as candidate adjuvants for some viral vaccines and cancer immunotherapies. In this study, we discovered some specific emulsifiers, mainly consisting of sucrose fatty acid esters,

Causal association of the skin microbiome with human infertility: insights from a bidirectional two-sample Mendelian randomization.

Infertility is a disorder characterized by the inability to achieve a clinical pregnancy after 12 months of regular and unprotected sexual activity. Affecting 8-12% of the global population, with the continuous progress of microbial research in recent years, a variety of microorganisms may be associated with the onset of infertility. We therefore used a two-sample MR Analysis to investigate the association between skin microbes and infertility. we used preprocessed exposure data to correlate infertility measures (infertility in women, associated with anovulation; Female infertility, cervical i

Assays for Anti-Helicobacter pylori Effects of Lactic Acid Bacteria Secretions.

Helicobacter pylori (HP) is a chronic bacterial pathogen that can cause gastric ulcers and cancers. The treatment for HP infections relies on a combination of antibiotics and proton pump inhibitors. Due to rising antibiotic resistance, curtailing HP-induced diseases requires identifying new anti-HP molecules that can reduce HP viability or impair its virulence, including its ability to cause inflammation. Oral intake of lactic acid bacteria (LAB) was shown to enhance the treatment of HP infection, and we demonstrated that LAB secretions can affect HP's growth and virulence factor production. T

Characterization of surface properties and antimicrobial activity of autochthonous lactic acid bacteria isolated from the reproductive tract of healthy mares.

Equine endometritis, a major cause of subfertility in mares, has a significant economic impact on horse breeding. In the face of rising antimicrobial resistance, the use of beneficial bacteria to prevent this disease is a non-antibiotic alternative which aligns with "One Health" principles. This study characterised vaginal autochthonous lactic acid bacteria (LAB) from healthy mares. Out of the 25 presumptive LAB isolates obtained from 15 clinically healthy thoroughbred mares, 24 were confirmed. Surface properties were assessed (autoaggregation, hydrophobicity, biofilm formation, exopolysacchar

Revitalising Brewers' Spent Grains and Enriching With Biogenic Compounds Through the Fermentation of Fructophilic Lactic Acid Bacteria and Yeasts.

The large output of spent grains from the brewing industry presents environmental concerns but also offers promising nutritional and functional potential for valorization by researchers and industrial stakeholders. In this perspective, we investigated how non-conventional starters like Fructobacillus fructosus PL22 and Wickerhamomyces anomalus GY1 can drive the fermentation of brewer's spent grain (BSG), a solid by-product of the brewing industry, to enrich its portfolio of bioactive compounds. While sugar reduction was comparable between started- and unstarted-BSG, the effect of the fermentat
