Underlying substituted pyrazines formation in the glucose-alanine Maillard reaction: Carbon module labeling and carbonyl analysis strategy.

The Maillard reaction between glucose and alanine plays a pivotal role in the formation of substituted pyrazines responsible for roasty aromas, yet the underlying formation mechanisms remain poorly elucidated. The carbon skeleton rearrangement patterns and formation mechanisms of substituted pyrazines were clarified in this work. The absorbance of glucose-alanine Maillard model significantly increased (p < 0.05) during heating, reaching its maximum value at 50 min. A total of 11 substituted pyrazines were identified, among which the concentrations of all pyrazines except 2-methylpyrazine subst

Impact of ingredient composition and micronutrient interactions on Maillard reaction product in ready-to-feed liquid formula.

This study examines how ingredients affect the formation of Maillard reaction products (MRPs) in ready-to-feed liquid formula during thermal processing. The researchers measured Amadori products, 5-hydroxymethylfurfural (5-HMF), α-dicarbonyl compounds (α-DC), Nε-(carboxymethyl)lysine (CML), and Nε-(carboxyethyl)lysine (CEL). Inulin leads to high levels of 5-HMF (14.99 mg/100 g protein), while glucose-based carbohydrates produce more Amadori products (up to 3913.79 mg/100 g protein) and α-DC. The contents of CML and CEL were higher in pure whey protein formula (88.35 and 3.30 mg/100 g protein)

A novel approach to sesame oil aroma generation: Synergy of enzyme-modified lipids and the Maillard reaction.

This study aimed to develop a novel method for creating roasted sesame oil (SO) flavoring under mild conditions. Fresh SO (FSO) was hydrolyzed by lipase to obtain ESO1, which was further oxidized by lipoxygenase to obtain ESO2. Compared with ESO1 or FSO, adding ESO2 to the Maillard reaction (MR) model comprising arginine, lysine, cysteine, serine, and glucose enhanced the consumption of glucose and amino acids, browning intensity, and formation of aroma-active alkylpyrazines, alkylfurans, thiazoles, thiophenes, MR-induced ketones and acids, while reducing lipid-derived ketones, aldehydes, and

Physicochemical and functional characteristics of glycated collagen protein from giant salamander skin induced by ultrasound Maillard reaction.

Chinese giant salamander skin collagen (CGSSC) was successfully conjugated with glucose (Glu)/xylose (Xy) by ultrasound Maillard reaction (MR) in nature deep eutectic solvents (NADES). The effects of ultrasound and reducing sugar types on the degree graft (DG) of MR products (MRPs), as well as the influence of DG on the structure and functional properties of MRPs were investigated. The results indicated that the ultrasound assisted could markedly enhance the MR of CGSSC, and low molecular weight reducing sugars were more reactive in MR. The ultrasound MR significantly changed the microstructur

Vitamin C mediates chemical aging of lens crystallins by the Maillard reaction in a humanized mouse model.

Senile cataracts are associated with progressive oxidation, fragmentation, cross-linking, insolubilization, and yellow pigmentation of lens crystallins. We hypothesized that the Maillard reaction, which leads browning and aroma development during the baking of foods, would occur between the lens proteins and the highly reactive oxidation products of vitamin C. To test this hypothesis, we engineered a mouse that selectively overexpresses the human vitamin C transporter SVCT2 in the lens. Consequently, lenticular levels of vitamin C and its oxidation products were 5- to 15-fold elevated, resulti

Model studies on the formation of 2-vinylpyrazine and 2-vinyl-6-methylpyrazine in Maillard-type reactions.

Vinylpyrazine compounds are widely present in foods, especially in hot-processed foods, as a class of flavor compounds; however, their formation mechanism in food systems is still unclear. Therefore, in this study, 2-vinylpyrazine and 2-vinyl-6-methylpyrazine were identified in the Maillard model reaction of d-glucose and glycine. The Maillard model reaction of glucose-glycine was constructed to explore the effects of reaction parameters on vinylpyrazines and the related products. The Maillard reaction of [U-13C6] glucose and glycine was established, and alkylpyrazines and formaldehyde were de

Modulation of Maillard reaction pathways and aroma profiles in peanut oil using enzymatically tailored peanut meal hydrolysates.

This study establishes a mechanistic framework for directing Maillard-driven aroma formation in peanut oil through targeted enzymatic precursor engineering, exploring the potential of precursor engineering for flavor modulation in peanut oil. Defatted peanut meal was subjected to selective hydrolysis using distinct glycosidases (cellulase, hemicellulase, pectinase, α-amylase, and amyloglucosidase) in combination with proteases to systematically reconstruct the precursor microenvironment (reducing sugars and free amino acids). The resulting hydrolysates were thermally reacted with cold-pressed

Digestive properties of half-fin anchovy hydrolysates/glucose Maillard reaction products and modulation effects on intestinal microbiota.

BACKGROUND: The consumption of dietary Maillard reaction products (MRPs) might lead to positive or negative effects on health. The digestibility of half-fin anchovy hydrolysates/glucose MRPs (HAHp(9.0)-G MRPs) was therefore determined. The intestinal microbiota modulation of HAHp(9.0)-G MRPs in mice was also evaluated after administration for 14 days (1 g kg-1 •bodyweight). RESULTS: Different levels of digestibility of MRPs of fructosamine and advanced glycation products of Nε -carboxymethyllysine were detected in HAHp(9.0)-G MRPs during simulated gastrointestinal digestion. An increased rela

Maillard reaction products and guaiacol as production process and raw material markers for the authentication of sesame oil.

BACKGROUND: Sesame oil has an excellent flavor and is widely appreciated. It has a higher price than other vegetable oils because of the high price of its raw materials, and different processing techniques also result in products of different quality levels, which can command different prices. In the market, there is a persistent problem of adulteration of sesame oil, driven by economic interests. The screening of volatile markers used to distinguish the authenticity of sesame oil raw materials and production processes is therefore very important. RESULTS: In this work, six markers related to

Pyrraline Formation Modulated by Sodium Chloride and Controlled by Encapsulation with Different Coating Materials in the Maillard Reaction.

Advanced glycation end products (AGEs), which are present in heat-processed foods, have been associated with several chronic diseases. Sodium chloride (NaCl) modulates the formation of furfurals and acrylamide in the Maillard reaction; however, the effects of NaCl on AGE formation are inconsistent. In this study, we investigated the effects of NaCl on pyrraline formation using glucose-lysine model systems. NaCl, especially at 0.50%, promoted Maillard browning and pyrraline formation, with a simultaneous increase in the 3-deoxyglucosone concentration. To reduce the rate of pyrraline formation,

Maillard Reaction Products of Stir Fried Hordei Fructus Germinatus Are Important for Its Efficacy in Treating Functional Dyspepsia.

Hordei Fructus Germinatus (HFG) has been used as a traditional medicine to treat functional dyspepsia (FD) in China. Stir fried HFG (F-HFG) containing Maillard reaction products (MRPs) is used more widely than the raw HFG (R-HFG). However, the exact mechanisms in its functionality remain unclear. This article investigated the effect of R-HFG, F-HFG, and MRPs on brain-gut peptides, gut microbiota, and digestive enzymes using an FD animal mode. After administration of R-HFG, F-HFG, and MRPs, higher mRNA expression level of gastrin (GAS) and lower mRNA expression level of vasoactive intestinal pe

Ultrasound-assisted maillard reaction: a novel strategy for debittering, flavor enhancement, and antioxidant activity improvement of walnut peptides.

Walnut peptides (WP) show excellent antioxidant, anti-inflammatory, antihypertensive, and immunomodulatory activities, making them promising for functional foods and nutritional supplements. However, hydrophobic amino acids formed during enzymatic hydrolysis cause severe bitterness, limiting their application. This study investigated the debittering effect of ultrasound-assisted Maillard reaction (US-MR) on WP by applying ultrasonic pretreatment at different amplitudes followed by Maillard reaction. Results indicated that US-MR promoted WP-glucose conjugation, increased browning intensity and
