Combined Effect of High-Pressure Homogenization and pH on the Techno-Functional Properties of a Commercial Pea Protein Concentrate.

Low dispersibility and colloidal instability limit the application of commercial pea protein concentrates in liquid food systems. This study investigates the effect of high-pressure homogenization (HPH) followed by pH modulation on the techno-functional properties (soluble fraction, particle size, colloidal stability, rheological behavior, and emulsifying properties) of a commercial pea protein concentrate. Initially, 3% (w/w) dispersions were treated at 50, 100, 150, and 200 MPa to identify the optimal processing pressure. HPH significantly increased the soluble fraction, reduced particle siz

Pea protein-coated nanoliposomal encapsulation of jujube phenolic extract with different stabilizers; characterization and in vitro release.

Jujube, a fruit rich in phenolic compounds, is renowned for its potential health benefits, including lowering blood pressure, and exhibiting anti-cancer, and anti-inflammatory effects, attributed to its potent antioxidant properties. However, the application of these phenolics in food products is limited by their instability and low concentration in plant tissues. This study investigates the nanoencapsulation of jujube extract (JE) using nanoliposomes (NLs) coated with pea protein isolate (PPI) to enhance stability and bioavailability. NLs were prepared via the ethanol injection method and opt

Effect of a combination of pea protein, grape seed extract and lactic acid in an in vivo model of bacterial vaginosis.

Bacterial vaginosis (BV) is a common vaginal dysbiosis characterized by a malodorous discharge and irritation. The imbalance of the vaginal microbiota plays a key role in the development of BV. It has been demonstrated that Gardnerella vaginalis (GV), a facultative anaerobic bacillus, is involved in BV. Due to the rising number of antimicrobial-resistant species, recurrence of BV is becoming more frequent in women; thus, alternative treatments to antibiotics are needed. Natural substances have recently shown a great efficacy for the treatment of vaginal dysbiosis. Thus, this study aimed to inv

Palmitoylethanolamide (PEA) Inhibits SARS-CoV-2 Entry by Interacting with S Protein and ACE-2 Receptor.

Lipids play a crucial role in the entry and egress of viruses, regardless of whether they are naked or enveloped. Recent evidence shows that lipid involvement in viral infection goes much further. During replication, many viruses rearrange internal lipid membranes to create niches where they replicate and assemble. Because of the close connection between lipids and inflammation, the derangement of lipid metabolism also results in the production of inflammatory stimuli. Due to its pivotal function in the viral life cycle, lipid metabolism has become an area of intense research to understand how

Interpenetrating network emulsion gels prepared from polysaccharides and pea proteins: effect of polysaccharide charge on rheology, freeze-thaw stability, and dysphagia characteristics.

Interpenetrating network emulsion gels were fabricated from pea protein isolate (PPI) and polysaccharides with different charges: anionic Artemisia sphaerocephala Krasch gum (ASKG) or neutral curdlan (CURD). Microstructure, molecular interactions, rheology, texture, water holding capacity (WHC), cooking properties, and freeze-thaw stability were characterized. PPI-ASKG reduced oil droplet size compared to PPI-CURD. Polysaccharides modulated protein secondary structure, with hydrophobic attraction and hydrogen bonding as dominant intermolecular forces. The PPI-ASKG gels formed a thicker oil-wat

Fortification of Pea and Potato Protein Isolates in Oat-Based Milk Alternatives; Effects on the Sensory and Volatile Profile.

Oat-based milk alternatives (OMAs) are an important alternative to bovine milk, with prevalence of lactose intolerance, as well as soy and nut allergies limiting consumers options. However, OMAs are typically lower in protein content than both bovine milk and soy-based alternatives, with protein quality limited by low lysine levels, which can reduce protein digestibility. Addition of alternative plant proteins may increase the quantity of protein, as well as balancing the amino acid profile. However, plant-based proteins have additional sensory qualities and off-flavours, which may lead to und

Programmed cell death in plants: effect of protein synthesis inhibitors and structural changes in pea guard cells.

Pea leaf epidermis incubated with cyanide displayed ultrastructural changes in guard cells that are typical of apoptosis. Cycloheximide, an inhibitor of cytoplasmic protein synthesis, and lincomycin, an inhibitor of protein synthesis in chloroplasts and mitochondria, produced different effects on the dynamics of programmed death of guard cells. According to light microscopy data, cycloheximide reinforced and lincomycin suppressed the CN(-)-induced destruction of cell nuclei. Lincomycin lowered the effect of cycloheximide in the light and prevented it in the dark. According to electron microsco

Pea protein-coffee chlorogenic acid complex regulates the gut microbiota: In vitro simulation and fecal fermentation studies.

The key active component in coffee is chlorogenic acid (CGA). The content of CGA is strongly affected by the degree of roasting, and CGA is unstable during gastrointestinal digestion, resulting in poor bioaccessibility. Light-roasted coffee was selected for subsequent experiments through in vitro simulation and fermentation studies. To increase the stability of CGA during digestion, pea protein was selected to embed CGA from light-roasted coffee, and the structure, embedding effect, photothermal stability, and antioxidant capacity of the complex were evaluated. In vitro digestion found that af
