Cow milk constitutes a fundamental component of the human diet. Along with high nutritional value, contains neuroprotective components, caseins, lactoferrin, phospholipids and tryptophan. However, due to the use of pesticides in agriculture, veterinary drugs in livestock, and the presence of other contaminants, cow milk is frequently contaminated by these chemicals posing a risk to human health, namely through neurotoxicity. Strategies to decrease these contaminants include detoxification via microorganisms. Concomitantly, increased consumption of plant-based protein to substitute animal sourc

Down syndrome (DS) is a risk factor for severe food protein-induced enterocolitis syndrome (FPIES), with DS patients tending to have multiple-food FPIES. This is the first case where a DS infant with a history of severe chronic FPIES to milk and soy could effectively be introduced with some untested high-risk foods through hospital-based oral food challenges (OFCs). The infant is a 20-month-old girl with DS, who was diagnosed with milk- and soy-induced FPIES. Considering her history of intensive care unit care for severe FPIES reactions, we considered that introducing other high-risk foods, su

A bacteriological survey was performed on 1,960 food samples encompassing 60 types of health foods available in the Baltimore-Washington, D.C., metropolitan area. No consistent bacteriological distinction (aerobic plate counts, total coliform and fecal coliform most probable numbers) was observed between foods labeled as organic (raised on soil with compost or nonchemical fertilizer and without application of pesticides, fungicides, and herbicides) and their counterpart food types bearing no such label. Types and numbers of samples containing Salmonella were: sunflower seeds, 4; soy flour, 3;

A survey of the pesticide content of 25 commercially available infant formulae and 30 weaning foods available in New Zealand was undertaken in 1996. It included a representative mixture of imported and New Zealand manufactured infant foods. Three different pesticide screening techniques were used: a high-sensitivity organochlorine screen was carried out on all infant formulae, while a multiresidue screen (organochlorine and organophosphorus pesticides, synthetic pyrethroids, carbamate pesticides, fungicides and herbicides), and a specific screen for dithiocarbamate fungicides were both carried

BACKGROUND: Many infants with cow's milk protein intolerance have adverse reactions to soy, casein and whey hydrolysate formula and to other foods. The recent development of Neocate, a hypoallergenic, nutritionally complete infant formula composed of individual amino acids and other nutrients, has enabled these infants to be stabilized.
OBJECTIVE: We observed the effect of food challenges in infants with reported hypersensitivity to hypoallergenic formulas.
METHODS: Eighteen infants (median age, 7 1/2 months) were given Neocate formula for 2 months and then underwent a 7-day double-blind pla

Soy-containing foods and dietary supplements are widely consumed for putative health benefits (e.g. cancer chemoprevention, beneficial effects on serum lipids associated with cardiovascular health, reduction of osteoporosis, relief of menopausal symptoms). However, studies of soy isoflavones in experimental animals suggest possible adverse effects as well (e.g. enhancement of reproductive organ cancer, modulation of endocrine function, anti-thyroid effects). This paper reviews the evidence in humans and animals for anti-thyroid effects of soy and its principal isoflavones, genistein and daidze

Foods with partially hydrolyzed gluten may still trigger immune responses in celiac disease (CeD) patients due to residual CeD-active peptides. We applied nanoliquid chromatography-tandem mass spectrometry (nanoLC-MS/MS) to identify 54 CeD-active peptides in 15 barley malt extracts (BME), seven barley malt vinegars (BMV), and 15 soy sauces. Eight common CeD-active peptides were quantitated with targeted nanoLC-MS/MS and stable isotope dilution assay. Total peptide concentrations ranged from 481 mg/kg to 1305 mg/kg in BMEs, whereas three samples showed peptide concentrations near LOQ. Six BMVs

A healthy dietary pattern review for Asian countries is scarce, which is crucial for guiding healthy eating. We reviewed Taiwanese dietary pattern discovery studies. Included were 19 studies, the majority of which employed dimension reduction methods to find dietary patterns associated with various health conditions. To show what is a high or low intake of foods in Taiwan, we also report the average dietary content and the 25th and 75th percentile values of the adult population for six food groups gathered by the Nutrition and Health Survey in Taiwan, 2017-2020. The healthy Taiwanese dietary a

A vegan diet is increasingly en vogue, i.e., a diet based on plants, in which animal products are completely avoided, often for health and environmental reasons. The menu is supplemented with pulses (e.g., soy, lentils, peas), nuts (e.g., cashew, macadamia, almond, pecan, para, walnut) and seeds (e.g., chia, flaxseed) or pseudo-grains (quinoa, buckwheat). Indeed, the product range is expanding to include vegan foods such as milk alternatives (e.g., oat, almond, soy drinks) and cheese or meat substitutes (e.g., soy-based). Food allergies are also on the rise, with an increasing prevalence world

Eosinophilic gastrointestinal disorders are chronic inflammatory diseases in which eosinophils highly infiltrate into gastrointestinal tissue, resulting in gastrointestinal dysfunction. Here, we report a case of pediatric eosinophilic gastroenteritis (EGE). A 7-year-old boy with multiple food allergies (cow milk, hen's egg, fish, shellfish, and chicken) was admitted to our hospital because of continuous abdominal pain and vomiting. His soy allergy had been diagnosed to have oral tolerance based on an oral food challenge at the age of 6 years. He was diagnosed with EGE based on biopsy findings s

Breast cancer is one of the leading causes of cancer incidence and mortality in many countries worldwide although there is considerable geographic variation. Diet is thought to impact risk of developing breast cancer but identifying specific dietary factors involved in the etiology of this disease has proven difficult. The two primary factors that initially led to an interest in soy are the historically low breast cancer incidence and mortality rates in Japan and the uniquely high concentration of isoflavones in soybeans and foods derived from this legume. Isoflavones bind to both estrogen rec

Food protein-induced enterocolitis syndrome (FPIES) is a non-IgE-mediated food allergy with varying degrees of severity. The acute form of the disease is manifested by vomiting, lethargy and pallor, which usually appear within 1-4 hours after food ingestion, and can lead to shock. The most common trigger foods are: cow's milk, soy, rice and oats. Chronic FPIES is typical for infants fed with cow's milk or soy infant formula and is manifested by chronic vomiting, diarrhea and failure to thrive. In the vast majority of patients with FPIES, the analysis of the clinical history is sufficient to di

Probiotics' potential to enhance gut health is often limited by their poor survival during gastrointestinal (GI) transit, a challenge influenced by the composition and timing of co-ingested foods. Addressing the lack of dietary guidelines for optimal probiotic administration, this in vitro study examines how consuming Lactobacillus rhamnosus GG (LGG) with different foods at varying timings affects bacterial survival during simulated digestion. The results showed that simultaneous intake with durum wheat pasta or soy milk improved bacterial viability compared to standalone probiotics. The pasta

The aim of this work was to clarify the formation of ethyl carbamate (EC) and its influence factors throughout the production process of Cantonese soy sauce. The results showed that EC was not detected in the koji-making and early moromi fermentation stages, but started to be generated when pH of the moromi decreased to about 4.9-at the same time, the levels of ethanol, urea and citrulline increased significantly. Most EC was formed during raw soy sauce hot extraction (40.6%) and sterilization (42.9%) stages. The EC content exhibited the highest correlation with ethanol throughout the whole pr

In industrial tofu production, soy protein gelation dictates final product quality, yet it is still monitored largely by operator judgement, leading to appreciable batch-to-batch inconsistency. Although ultrasonic techniques have shown considerable promise in tracking protein coagulation, most applications remain limited to static evaluation of current gelation state, which limits proactive control strategies. To overcome this gap, we propose a framework that integrates ultrasonic transmission sensing with multi-step time series forecasting. In particular, a triple-attention Seq2Seq (TA-Seq2Se

BACKGROUND: Fermented soybean (natto)-induced hypersensitivity reactions (natto allergy) are rare and can result in late-onset anaphylaxis. The allergen in natto is considered to be poly-γ-glutamic acid (PGA), and marine sports are a risk factor for natto allergy due to epicutaneous sensitization to PGA from cnidarian stings. However, no research on natto allergy in fishery workers has yet been performed.
METHODS: We conducted a chart review of inpatients diagnosed with anaphylaxis due to natto at Hokkaido Prefectural Haboro Hospital between April 1, 2009, and August 31, 2020. We also adminis

Biogenic amines (BAs) are microbial-derived compounds that may exert adverse effects in humans when present at high concentrations. They are mainly formed by amino acid decarboxylation and can be produced by various microorganisms, including lactic acid bacteria, enterobacteria, staphylococci and Bacillus spp. While high BA levels in non-fermented foods indicate spoilage, their presence in fermented foods is often unavoidable, making process control essential to limit their accumulation. Plant-based fermented foods are gaining global interest, but their production frequently relies on spontane

PURPOSE OF REVIEW: This review discusses the safety, nutritional adequacy and recommendations for use of soy protein formulae, based mainly on the most relevant reports published during 2005 and 2006.
RECENT FINDINGS: Concerns have recently been raised regarding potential risks with soy protein formulae, in particular regarding their high phytoestrogenic isoflavone content. Recent data are insufficient to draw definitive conclusions on safety, but authorities and paediatric societies from several countries recently advised health professionals to use soy protein formulae only in certain cases
