Global health perspectives on diet patterns micronutrients and climato-economic factors.

Global dietary patterns and micronutrient deficiencies are key modifiable risk factors for disease, with complex relationships to geographical, climatic, and economic conditions. This study evaluates the global disease burden attributable to these factors. Using the Köppen climate classification and World Bank income groups as a descriptive framework, we analyze the geographical distribution of this burden. Dietary risks and nutrient deficiencies collectively account for 10.32% of global deaths and 5.74% of DALYs. High sodium (2.65%), low fruit (2.40%), and low whole-grain intake (2.21%) are l

Multi-omics analysis reveals breed-specific differences in the quality and nutrition of goose eggs.

Goose eggs are valued for their rich nutrition and unique flavor, yet breed-specific differences in egg quality remain unclear. This study found that meat-type Zhedong White goose eggs (ZDG) had higher weight, yolk ratio, and yolk color, with rounder shape and potentially stronger eggshells, while dual-purpose Huoyan goose eggs (HYG) showed relatively lower values in these traits but a higher yolk index. Proteomics revealed higher activity in the vitamin digestion and absorption pathway in ZDG, and metabolomics indicated enhanced metabolism of unsaturated fatty acids and α-linolenic acid. Inte

Tailoring oleogel properties from aerogel templates: A comparative study of konjac glucomannan modified by freeze-thaw, ethanol, and alkali strategies.

In this study, konjac glucomannan (KGM) hydrogels prepared by freeze-thaw, ethanol, or alkali treatments were converted into aerogel templates via freeze-drying and then adsorbed camellia oil to form oleogels. Scanning electron microscopy showed that alkali-treated KGM aerogels had a compact, uniform porous network with reduced steric hindrance, yielding a superior oil retention capacity. In contrast, aerogels from freeze-thaw and ethanol treatments had a rough mesh structure but a higher oil absorption. Alkali-induced deacetylation partially removed acetyl groups in alkali-treated KGM aerogel

Protease-dependent effects of salmon milt hydrolysates on protein-network characteristics in fermented pork sausages: Balancing water retention and texture formation.

Arginine-rich salmon milt hydrolysates can enhance water retention in fermented meat, but whether this benefit supports textural integrity depends on hydrolysate type. This study investigated the effects of hydrolysates prepared with neutrase, papain, and trypsin on rheology, texture, water retention, microstructure, and volatile profiles of fermented pork sausages. All hydrolysates reduced ripening moisture loss and heating-induced cooking loss, but altered texture. Neu-H caused limited softening and retained 80.6% and 69.3% of control hardness and chewiness after cooking, respectively, where

Harnessing diet to modulate inflammation and symptom progression in endometriosis.

Endometriosis (EMS) is an estrogen-dependent inflammatory disease affecting 10% of reproductive-age women, with up to 50% experiencing infertility. As primary care providers (PCPs) are often the first point of care, understanding dietary factors that influence EMS is crucial. This integrative review identifies dietary components that can modulate the inflammatory environment in EMS. Polyphenols like quercetin, apigenin, and curcumin demonstrated anti-inflammatory and anti-angiogenic effects by inhibiting key mediators like prostaglandins, cytokines, and matrix metalloproteinases. Phytoestrogen

Ferroptosis-mediated lipid peroxidation contributes to postmortem color development in yellow-feathered broiler Pectoralis major.

Oxidative stress from lipid peroxidation can compromise meat color, yet the underlying mechanisms remain incompletely understood. This study investigated whether ferroptosis contributed to color changes in postmortem broiler Pectoralis major (PM) muscle. Results showed elevated membrane lipid reactive oxygen species (mL-ROS), along with reduced levels of glutathione peroxidase 4 (GPX4) and glutathione, indicating a weakened antioxidant system. Transferrin receptor protein 1 (TfR1) was significantly increased, accompanied by elevated mL-ROS formation (P < 0.05). Mitochondrial ultrastructural ch

Protective Effects of Vanillic Acid against IQ-Induced Hepatointestinal Injury: Insights into Ferroptosis and Microbial Changes.

Thermally processed meat products are popular among consumers, but high-temperature processing generates heterocyclic amines (HCAs), particularly the highly toxic 2-amino-3-methylimidazo[4,5-f]quinoline (IQ), which impairs liver and intestinal function. Research has demonstrated that vanillic acid (VA) possesses potent antioxidant and anti-inflammatory activities. However, its protective mechanism against IQ-induced liver injury remains unknown. This study aims to explore VA's mitigation effects and underlying mechanisms. Results reveal that VA alleviates IQ-induced colonic ferroptosis and int

Effect of Type of Aging on Quality and Sensory Perception of Picanha (Biceps femoris) from Female Angus Calves.

This study investigated the meat quality, sensory properties and microbiology of Angus beef after a short dry or wet aging. For that, a total of 16 Biceps femoris muscles from female Aberdeen Angus x Charoles calves were used. Half of these underwent a technological aging process in the carcass (dry aging) for 7 days, whilst the remaining were filleted, vacuum-packed and stored at refrigerated conditions (wet aging) for 7 days at 4 ± 2 °C. The type of aging affected the ratio of the myoglobin forms but did not translate into differences in the instrumental colour measurements. Dry aging led to

Highly sensitive ELISA for determination of nifursol metabolite in food samples without derivatization: From rational hapten design to molecular recognition mechanism.

High-affinity antibodies to nitrofuran metabolites could avoid derivatization, but existing nitrofuran haptens yield low-affinity antibodies due to poor immunogenicity. Herein, we selected 3,5-dinitrosalicylic acid hydrazide (DNSH), the metabolite of nifursol, as model analytes to produce high-affinity antibodies against metabolites. Three novel DNSH haptens were rationally designed, with aromatic haptens specially incorporating nitro group to enhance immunogenicity. After rationality evaluation by computational chemistry, antisera results indicated that nitro-modified haptens, DNSH-1 and DNSH
