Formate- and Sodium Ion-Dependent Wood-Ljungdahl Pathway Involved in Organo-, Litho-, and Methylotrophic Growth of Tepidanaerobacter acetatoxydans.

Methane production by a biogas digester is a promising alternative to the use of fossil fuels as an energy source. One major substrate for methanogenesis is acetate, which is directly used by acetoclastic methanogens. At high pH and high ammonium concentrations, acetoclastic methanogenesis is inhibited, and acetate is oxidized to H2 + CO2, which are used by hydrogenotrophic methanogens. From such a digester, an ammonium-tolerant syntrophic acetate-oxidizing bacterium, Tepidanaerobacter acetatoxydans, was isolated in 2011 by Westerholm and colleagues, but its physiology and role in a biogas dig

Synthesis of Florasulam Stable Isotopes to Enable Identification of Degradants by Mass Spectrometry for Re-registration Studies.

Florasulam is a triazolopyrimidine herbicide that controls broadleaf and grass weeds in cereal crops and turf. It acts as an acetolactase synthase (ALS) inhibitor, blocking the synthesis of essential amino acids required for plant growth. Due to its potency, florasulam is effective at very low application rates making it cost-effective with reduced environmental off-target effects. As is common practice, florasulam has been subject to periodic reviews by regulatory agencies during re-registration requirements since its introduction into the market in 1998. The goal of these reviews is to ensur

Upcycling grapefruit peel pectin, curcumin, and Zn-CD into a high-performance biodegradable film for meat preservation and colorimetric freshness tracking.

To mitigate meat spoilage and plastic pollution, a multifunctional intelligent/active packaging film was developed using pectin extracted from grapefruit peel as the film matrix, combined with grapefruit peel residue-derived Zn-doped carbon dots (Zn-CD) and curcumin. Zn-CD and curcumin synergistically altered the microstructure of the pectin film, significantly enhancing its mechanical strength, UV-blocking performance, water/oxygen barrier properties, and antioxidant/antibacterial activities. The PC-5%CE-CD film exhibited sensitive pH/ammonia-responsive color changes from yellow to reddish-br

A combined computational and experimental approach to revisit the Butlerov reaction.

The Butlerov, or formose, reaction is the transformation of formaldehyde into a complex mixture of sugars in the presence of calcium hydroxide, eventually leading to sugar degradation with the formation of a tar, difficult to analyse. Its intricate mechanism has long captivated researchers, not only for its potential in sugar synthesis for food applications but also for its relevance to prebiotic chemistry. The autocatalytic formation of glycolaldehyde from the retro-aldol reaction of tetroses was proposed by Breslow in 1959 and has been discussed in most of the literature; however, the mechan

Rapid determination of chloropropanol in edible vegetable oil by the combination of a simple fluorescence sensor and chemometrics.

A simple and novel fluorescence sensor has been developed for the rapid determination of four typical chloropropanols, including 1,3-dichloropropanol (1,3-DCP), 2,3-dichloropropanol (2,3-DCP), 2-monochloropropanediol (2-MCPD), and 3-monochloropropane-1,2-diol (3-MCPD). The three-dimensional synchronous fluorescence spectroscopy was selected according to its high sensitivity to metalloporphyrin-based fluorescence sensors and their complexes. Detection and determination of chloropropanol analytes were carried out in the range of 1 ng to 1 mg. The three-dimensional synchronous fluorescence profil

Elevated invertebrate methylmercury concentrations across functional feeding groups in a eutrophic bog post-flooding.

Mercury is a toxic environmental contaminant that is known to undergo long range transport, resulting in deposition in remote and pristine ecosystems. Increases in methylmercury concentration at low trophic levels may result in greater risk to top predators in food webs. As a result, low trophic level invertebrates are important sentinels for ecosystem contamination and overall ecosystem health. Big Meadow Bog, located on Brier Island, Nova Scotia, is a disturbed wetland habitat that was subject to colonization by herring gulls (Larus argentatus), resulting in significant phosphate nutrient in

Flavonol-based fluorescent probe for bisulfite detection in plant cells and environmental water samples.

Bisulfite (HSO3-), which exists in equilibrium with sulfite and sulfur dioxide derivatives, plays significant roles in food preservation and biological systems. However, elevated levels of bisulfite are associated with various physiological disorders. Therefore, the development of reliable methods for monitoring bisulfite is of considerable importance. Herein, we report a flavonol-based fluorescent probe, 4-(3-hydroxy-4-oxo-4H-chromen-2-yl) benzaldehyde (BSP), synthesized via a simple two-step reaction using 1-(2-hydroxyphenyl)ethan-1-one and 4-(diethoxy methyl)benzaldehyde. Study On the Regulation of OVA-Induced Food Allergy Via the Gut Immune-Microbiota Axis by Milk-Derived Extracellular Vesicles.

Food allergy (FA) is an increasing global public health concern lacking effective preventive strategies. This study systematically evaluated the immunomodulatory effects of cow's milk-derived extracellular vesicles (C-EVs), buffalo milk-derived extracellular vesicles (B-EVs), and yak milk-derived extracellular vesicles (Y-EVs) in an Ovalbumin (OVA) -induced FA mouse model. All EVs treatments significantly alleviated allergic symptoms, reduced OVA-specific IgE/IgG1 and MCPT-1 levels, and improved intestinal barrier integrity. Among them, Y-EVs showed the strongest protective effects, markedly u

Viruses that heal: harnessing bacteriophages in the era of antibiotic resistance.

The global rise in antimicrobial resistance (AMR) poses an urgent threat to public health, and novel alternatives to traditional antibiotics are needed. One of the most promising options is bacteriophages, viruses that infect and destroy bacteria. Once overshadowed by the discovery of antibiotics, phage therapy is now regaining attention, driven by advances in genomics, synthetic biology, and targeted medicine. This review examines the biology, diversity, and therapeutic use of bacteriophages in treating bacterial infections, especially those caused by multidrug-resistant pathogens. It also di

Challenges and Opportunities for Understanding the Pathogenesis of Type 1 Diabetes: An Endocrine Society Scientific Statement.

The discovery of insulin transformed type 1 diabetes (T1D) from a lethal disease to a chronic health condition where individuals can lead long and productive lives. However, T1D is still associated with considerable morbidity and mortality, underscoring the need for disease-modifying therapies to delay clinical onset and preserve residual pancreatic β-cell function in those newly diagnosed with T1D. Notably, the first disease-modifying therapy (teplizumab, a monoclonal antibody targeting CD3+ on T lymphocytes) was approved by the US Food and Drug Administration in November 2022 to delay the cl

The Inflammation-Initiating and Resolving Mechanisms and Oxidation: Could Periodontal Therapy and Nutritional Strategy Improve the Systemic Health? A Narrative Review.

Periodontitis (PDS) is one of the most common and crippling systemic diseases. It is a chronic inflammatory condition that leads to the loss of periodontal attachment, resulting in tooth loss. In addition to its effects on oral health and nutrition, PDS is closely linked to other systemic conditions such as diabetes mellitus (DM), cardiovascular diseases (CVD), and rheumatoid arthritis (RA). The active role of inflammation and oxidation in systemic health, as well as their relationship with periodontal therapy, has been investigated. This review explores the evidence on how periodontal therapy

Chronic Exposure to Sunset Yellow Promotes Susceptibility to Experimental Colitis in Mice through Gut Microbiota.

Sunset yellow (SY) is a widely used food additive. However, its impacts on ulcerative colitis (UC) development remain unclear. Here, SY exposure exacerbated dextran sulfate sodium (DSS)-induced UC symptoms in mice, including body weight loss, elevated disease activity index, histological damage, inflammation, gut barrier impairment, disruption of gut microbiota composition, and sulfur metabolism. Moreover, fecal microbiota transplantation from SY-exposed mice also exacerbated colitis in the recipient mice. Notably, SY exposure both in vivo and in vitro inhibited the growth of Akkermansia mucin

Short Term Soft Pellet Diet Changes Intestinal Characteristics in Mice.

Diet alters the function and composition of small intestinal epithelial cells, making the relationship between diet and the intestine a focus of much research. This study aimed to clarify the effects of a soft diet on the small intestine. We fed mice a soft pellet diet (SP) and a control hard pellet diet (CD) for 14 days and examined changes in the epithelial cells of the small intestine. We found that the body weights of SP-fed mice were lower than those of CD-fed mice. SP did not alter the length of the small intestine, crypt to villus, or the number of Paneth and Goblet cells, but decreased

Monobutyrin can alleviate hepatic lipid dysmetabolism and improve liver mitochondrial ultrastructure and autophagy in high-fat diet mice.

The incidence of non-alcoholic fatty liver disease has proportionally escalated alongside the global epidemic of obesity. Monobutyrin (MB), a food additive found in butter and cod liver oil, possesses lipid-regulating properties. This study aimed to explore the alleviating effect of MB on liver oxidative injury and lipid metabolism in obese mice induced by a high-fat diet (HFD). The results showed that MB administration (1 or 2 g/kg body weight (BW)) for 8 weeks significantly reduced body weight, improved hepatic lipid metabolism via activation of the peroxisome proliferator-activated receptor
