This study examined how protein source and redox treatment influence structural properties and peptide profiles of high-moisture extruded (HME) meat analogs. Wheat gluten (WG) was blended with soy protein (SP) or pea protein (PP) and L-cysteine/ascorbic acid (LC/AA) followed by HME. The optimum feed moisture content (FMC) was selected based on the degree of texturization, which was subsequently analyzed for structural, thermal, digestibility, bioactivity, and celiac-related peptide. WG-SP formed stronger β-sheet-rich networks, whereas WG-PP showed more molecular flexibility with higher β-turn

This study aimed to develop and evaluate a liposomal nano-delivery system for bioactive peptide fractions (PFs) derived from Gracilaria corticata algae proteins. The peptides were obtained by enzymatic hydrolysis using alcalase, pancreatin, and trypsin. The resulting PF-loaded nanoliposomes were characterized in terms of degree of hydrolysis (DH), particle size, ζ-potential, encapsulation efficiency (EE), and antioxidant capacity (DPPH and ABTS assays). Among the tested enzymes, alcalase produced hydrolysates with the highest DH (33%) and EE (84%). The particle size of nanoliposomes ranged fro

Cardiovascular thromboses bring heavy global health burdens, while traditional screening of food-derived antithrombotic peptides is inefficient. This work built an integrated pipeline integrating de novo peptide generation, hybrid LSTM-GCN deep learning, and molecular simulations, screening 15,000 sequences to obtain lead peptide FPGGIP. It had a binding affinity of -6.4 kcal/mol and a stable thrombin complex (RMSD = 1.42 Å), acting as a competitive thrombin inhibitor (IC50 = 14.3 μM). FPGGIP exerted ex vivo anticoagulation, suppressed vascular smooth muscle proliferation, relieved oxidative s

Antithrombotic activity is primarily manifested in two aspects: anticoagulation and thrombolysis. It has been observed that shrimp paste has notable antithrombotic activity. However, research on mining active substances from shrimp paste combining anticoagulation and thrombolysis is limited. This study optimized Litopenaeus vannamei shrimp paste via enzymatic-assisted fermentation to enhance its dual antithrombotic profile and identify the responsible components. Optimal activity was achieved by using 1% chitosanase at 45 °C and pH 7.0 for 6 h, followed by fermentation at 25 °C for 15 d. A fib

BACKGROUND: Inhibitors of angiotensin-converting enzyme (ACE) are used in pharmaceuticals and functional foods. Captopril, a well-known ACE inhibitor, extends the lifespan of the nematode Caenorhabditis elegans. Bioactive peptides derived from food sources are considered safe ACE inhibitors. Previously, we identified the sequence Asp-Leu-Tyr-Ala in skeletal muscle actin and its derivatives, Leu-Tyr-Ala, Leu-Tyr, and Tyr-Ala, as antioxidant peptides. In the present study, we evaluated the ACE-inhibitory activity of peptides and their anti-aging effects in a C. elegans model.
RESULTS: Among the

The valorization of agro-industrial by-products as sources of bioactive compounds represents a key challenge for sustainable food systems. Previous studies demonstrated that microcapsules containing bioactive peptides derived from brewer's spent grain (BSG) exhibited antioxidant, antihypertensive, antidiabetogenic, and hypoglycemic effects in animal models. However, their application in real food systems remains unexplored. In this study, wheat crackers enriched with microencapsulated bioactive peptides from BSG were developed to evaluate their technological characteristics and post-digestive

Angiotensin-converting enzyme (ACE) inhibitory peptides are promising bioactive components for developing blood pressure-regulating functional foods. Idesia polycarpa meal (IPM), an underutilized protein-rich byproduct from oil processing, is currently restricted to low-value applications such as animal feed, and systematic research on its ACE inhibitory peptides remains largely absent. This study hypothesized that controlled enzymatic hydrolysis of IPM protein could release novel ACE inhibitory peptide candidates with high activity. Fourier-transform infrared spectroscopy and differential sca
