OBJECTIVE: The potentially beneficial effects of fish consumption on stroke may be modified by major food contaminants in fish. Polychlorinated biphenyls (PCBs) in particular are proposed to play a role in the aetiology of stroke. The aim of this study was to assess the association between dietary PCB exposure and stroke risk with the intake of long-chain omega-3 fish fatty acids and fish consumption.
DESIGN: The prospective population-based Swedish Mammography Cohort was examined. It was comprised of 34,591 women free of cardiovascular diseases and cancer at baseline in 1997 and followed up

For nearly a century, manganese has been recognized as an essential nutrient for proper bone formation, lipid, amino acid and carbohydrate metabolism. While manganese deficiency is characterized by symptoms ranging from stunted growth and poor bone remodeling to ataxia, it is manganese toxicity that is far more devastating from a public health standpoint. Most cases of manganese toxicity are the result of occupational exposure to high levels of the metal, and are characterized by specific neurological symptoms referred to as manganism. While manganism shares many common features with Parkinson

BACKGROUND: UK dietary exposure in 1980-1996 to the bovine spongiform encephalopathy (BSE) infectious agent through the consumption of beef mechanically recovered meat (MRM) contained in burgers, sausages and other meat products has already been quantified by birth cohort (born pre-1940, 1940-1969 or post-1969) and gender. In this paper, similar quantification is undertaken for the consumption of bovine head meat.
METHODS: Synthesis of evidence on clinical BSE bovines, on bovines slaughtered in the last year of their BSE incubation period, brain contamination during head meat production, brai

We interviewed 282 histologically confirmed cases of nasopharyngeal carcinoma (NPC) in Chinese residents of Selangor and the Federal Territory, Malaysia, and an equal number of Chinese age-, sex-, and length-of-residence-matched controls sampled from the general population. Consumption of 55 dietary items during childhood, and 5 years pre-diagnosis of NPC, was analyzed by univariate and multivariate methods. Four salted preserved foods (fish, leafy vegetables, egg and root), fresh pork/beef organ meats and beer and liquor consumption exhibited strong positive associations, and 4 vegetable/frui

The food system of Zhejiang Province, a major coastal province in China, includes a wide variety of products, such as canned foods, aquatic products, vegetables, fruits, and tea, all of which may serve as potential sources of tin (Sn) exposure. However, no systematic study has assessed the distribution and dietary exposure risk of Sn across food categories in the province, and a compound-specific evaluation of organotin compounds is lacking. Therefore, we investigated the occurrence of Sn in commonly consumed foods and assessed dietary exposure risks among different age groups in Zhejiang Prov

Understanding how anthropogenic change impacts metabolic physiology is crucial for predicting species survival and ecosystem dynamics. Microplastics are ubiquitous in both aquatic and terrestrial environments and can disrupt organismal physiology. We used Drosophila melanogaster as a model species to identify the metabolic effects of dietary exposure to 1 µm polystyrene microplastic (MP) and 50 nm nanoplastic (NP) particles. We exposed flies to ecologically relevant and equivalent doses (1.4×1011 particles day-1 kg-1 larvae for MPs; 1.2×1018 particles day-1 kg-1 larvae for NPs) from egg to adu

Changing eating habits and an increase in consumption of thermally processed products have increased the risk of the harmful impact of chemical substances in food on consumer health. A 2002 report by the Swedish National Food Administration and scientists at Stockholm University on the formation of acrylamide in food products during frying, baking and grilling contributed to an increase in scientific interest in the subject. Acrylamide is a product of Maillard's reaction, which is a non-enzymatic chemical reaction between reducing sugars and amino acids that takes place during thermal processi

BACKGROUND: Dietary habits have a profound influence on the metabolic activity of gut microorganisms and their influence on health. Concerns have been raised as to whether the consumption of foodstuffs contaminated with pesticides can contribute to the development of chronic disease by affecting the gut microbiome. We performed the first pesticide biomonitoring survey of the British population, and subsequently used the results to perform the first pesticide association study on gut microbiome composition and function from the TwinsUK registry.
METHODS: Dietary exposure of 186 common insectic

BACKGROUND: Mercury, in particular its most toxic form methylmercury, poses a risk to public health. Dietary methylmercury exposure is mainly by fish, and it can vary with fish contamination and by dietary habits of the population. This study aimed to quantify total mercury levels in different fish from Brazil and to estimate Brazilian exposure to methylmercury by fish consumption.
METHODS: Total mercury occurrence was investigated in 18 different fish species by atomic absorption spectrometry with thermal decomposition and gold amalgamation. Dietary exposure to methylmercury was estimated by

PURPOSE: Systemic exposures to intestinal bacteria may play a role in the etiology of the chronic, low-grade inflammation that is associated with western diets. Production of lipopolysaccharide-binding protein (LBP) is one biomarker of increased exposures to intestinal bacteria. This study evaluated whether changes in diet quality could affect serum LBP.
METHODS: This was a randomized, controlled trial of Mediterranean and Healthy Eating diets over 6 months in 120 healthy subjects at increased risk of colon cancer. Blood samples obtained before and after intervention were analyzed for LBP, br

Knowledge of the dietary intake of essential and toxic elements in fast-developing Southeast Asian countries such as Vietnam is limited. Iron and Zn deficiency in Asia is a well-known problem and is partly due to rice constituting a major part of the diet. Dietary habits are changing and there is a need to build more knowledge so authorities can give dietary recommendations. The aim of this study was to determine the total dietary intake of essential and potentially toxic elements and to assess the nutritional quality and food safety risks of the average Hanoi diet. Twenty-two foods or food gr

It has recently been demonstrated that developmental exposure to methylmercury (MeHg) is associated with perseveration on operant tasks. An understanding of the behavioral mechanisms underlying this phenomenon may improve human testing of MeHg exposures and could provide insight into clinical syndromes that include perseveration as a component. One possible mechanism is that MeHg-induced enhancement of reinforcer efficacy produces a "reinforcement trap" that inhibits change in novel situations. Rats were exposed gestationally to 0, 0.5 or 5 ppm mercury (Hg) as MeHg via maternal drinking water.

This article presents a general model for estimating population heterogeneity and "lack of knowledge" uncertainty in methylmercury (MeHg) exposure assessments using two-dimensional Monte Carlo analysis. Using data from fish-consuming populations in Bangladesh, Brazil, Sweden, and the United Kingdom, predictive model estimates of dietary MeHg exposures were compared against those derived from biomarkers (i.e., [Hg]hair and [Hg]blood). By disaggregating parameter uncertainty into components (i.e., population heterogeneity, measurement error, recall error, and sampling error) estimates were obtai

Acrylamide is a food contaminant formed via the Maillard reaction that may impair cardiometabolic health. Considering its role in oxidative stress, lipid peroxidation, and adipogenesis, acrylamide may compromise lipid and glucose profiles. The present study aims to assess acrylamide dietary exposure and test longitudinal associations with cardiometabolic outcomes from childhood to adolescence. From G21-birth-cohort, 3138 participants with at least 2 consecutive follow-ups from 4 to 13 years of age were included. Acrylamide dietary exposure was estimated using 3-day food diaries and occurrence

Foodborne and environmental pollutants are major threats to human health, nutrition, and ecosystems. Industrialization, agriculture, and urbanization have increased exposure to contaminants from environmental and food sources. Environmental pollutants include phthalates, PFAS, heavy metals, persistent organic pollutants, PBDEs, microplastics, and oil-derived contaminants. Microbial pollutants, including bacteria, viruses, and fungi, and chemical contaminants are encountered through contaminated food, water, air, and dust, affecting immunity, microbiota, and metabolism. Dietary arsenic (As) contamination is a major public health issue. In the Middle East, the food supply relies primarily on the import of food commodities. Among different age groups the main source of As exposure is grains and grain-based food products, particularly rice and rice-based dietary products. Rice and rice products are a rich source of core macronutrients and act as a chief energy source across the world. The rate of rice consumption ranges from 250 to 650 g per day per person in South East Asian countries. The source of carbohydrates through rice is one of the leading causes of hum

Macrolides are critically important antimicrobials for both human and animal health and should be prioritized in risk assessments, as inappropriate use may result in antimicrobial resistance. The antimicrobials erythromycin, oleandomycin, spiramycin, tilmicosin and tylosin were analysed in infant formula samples by HPLC-MS/MS using a validated analytical method based on a modified QuEChERS extraction. The results of the occurrence study were employed to perform a dietary exposure assessment of infants to residues. In a total of 30 analysed samples, 73% contained spiramycin residues and 27%, ti

Transgenerational inheritance from both parental lines can occur by genetic and epigenetic inheritance. Maternal effects substantially influence offspring survival and fitness. However, investigation of the paternal contribution to offspring success has been somewhat neglected. In the present study, adult zebrafish were separated into female and male groups exposed for 21 days to either a control diet or to a diet containing water accommodated fractions of crude oil. Four F1 offspring groups were obtained: (1) control (non-exposed parents), (2) paternally exposed, (3) maternally exposed and (4

BACKGROUND: Particulate matter ≤10 μm in aerodynamic diameter (PM10) and diet quality are risk factors for systemic inflammation, which is associated with preterm birth (PTB). PM10 and a pro-inflammatory diet (assessed by the Dietary Inflammatory Index [DII®]) have been individually evaluated as causes of PTB and differences by offspring sex have been reported for the DII. However, additional studies are needed to evaluate joint effects of these associations to inform intervention efforts.
OBJECTIVES: To evaluate the independent and joint effects of PM10 and energy-adjusted DII (E-DII) on PTB

Consumption of fruit juice is becoming trendy for consumers seeking freshness and high vitamin and low caloric intake. Mycotoxigenic moulds may infect fruits during crop growth, harvest, and storage leading to mycotoxin production. Many mycotoxins are resistant to food processing, which make their presence in the final juice product very likely expected. In this way, the presence of 30 mycotoxins including aflatoxin B1 (AFB1), aflatoxin B2 (AFB2), aflatoxin G1 (AFG1), aflatoxin G2 (AFG2), alternariol (AOH), alternariol monomethyl ether (AME), Ochratoxin A (OTA), fumonisin B1 (FB1), fumonisin B
