Incidence of toxigenic Bacillus cereus in ready-to-eat fermented foods in Osogbo, Nigeria: a potential health risk.

Bacillus cereus (B. cereus) is one of several foodborne pathogens that continue to threaten the safety of ready-to-eat (RTE) foods, including fermented foods. A few studies have identified the presence of enterotoxigenic gene-encoding B. cereus in several southwestern states of Nigeria. However, Osun State remains the only southwestern state without data on the potential presence of enterotoxigenic gene-encoding B. cereus. In this study, a preliminary investigation was carried out using a convenience sampling method at three highly patronized locations (Shasha, Orisumbare, and Oja-Oba) of RTE

Fermented Foods, Functional Nutrition, and Maternal Gut Microbiota During Pregnancy: Molecular Mechanisms and the Maternal-Infant Microbiome Axis.

Pregnancy is associated with profound metabolic, hormonal, and immunological adaptations accompanied by dynamic alterations in maternal gut microbiota composition and function. Emerging evidence suggests that maternal diet is a major regulator of these microbiota-related changes and may influence maternal-fetal health through microbial metabolites and host signaling pathways. Fermented foods and functional dietary components, including prebiotics, probiotics, synbiotics, and polyphenols, have gained increasing attention because of their potential to modulate gut microbial diversity, intestinal

Advances in Salt Reduction in Salt-Dependent Traditional Fermented Foods: From Microecological Responses to Flavor and Safety Control.

Salt-dependent traditional fermented foods rely on the selective ecological environment created by salt to develop characteristic flavor, maintain fermentation stability, and ensure product safety. However, the health risks associated with excessive sodium intake have made salt reduction a major priority in this field. This review focuses on representative salt-dependent traditional fermented foods, including soy sauce, fish sauce, shrimp paste, doubanjiang, kimchi, suancai, and fermented olives, and systematically summarizes the multilevel effects of salt variation on fermentation systems. Lactic acid fermentation as a tool for increasing the folate content of foods.

Folate is an essential micronutrient involved in numerous vital biological reactions. The dietary consumption of naturally occurring vitamin B9 is often inadequate in many countries, and supplementation or fortification programs (using synthetic folic acid) are implemented to alleviate folate deficiency. Other food-based alternatives are possible, such as the use of lactic acid bacteria (LAB) to synthesize folate during fermentation. Many studies have been conducted on this topic, and promising results were reported for some fermented dairy products. However, in other studies, folate consumpti

Phenotypic and molecular antibiotic resistance profile of Enterococcus faecalis and Enterococcus faecium isolated from different traditional fermented foods.

A collection of 55 enterococci (41 Enterococcus faecium and 14 E. faecalis strains) isolated from various traditional fermented foodstuffs of both animal and vegetable origins, and water was evaluated for resistance against 15 antibiotics. Lower incidence of resistance was observed with gentamicin, ampicillin, penicillin and teicoplanin. However, a high incidence of antibiotic resistance was detected for rifampicin (12 out of 14 of isolates), ciprofloxacin (9/14), and quinupristin/dalfopristin (8/14) in E. faecalis strains. Enterococcus faecium isolates were resistant to rifampicin (25/41), ci

Extremozymes for food fermentation: Integrating AI, metagenomics, and protein engineering.

Climate change-induced fluctuations in temperature, pH, salinity, and water activity are increasingly compromising microbial metabolism and fermentation efficiency, exposing the limitations of conventional mesophilic enzymes in maintaining process stability and product consistency. Extremozymes, derived from extremophilic microorganisms, exhibit exceptional structural stability and catalytic activity under harsh physicochemical conditions, making them promising biocatalysts for climate-resilient food fermentation. Although considerable progress has been achieved in extremozyme discovery and en

Fermentation-driven degradation of antinutritional factors in plant-based foods.

Fermentation is an effective natural strategy for reducing antinutritional factors (ANFs) in plant-based foods. ANFs can limit nutrient bioavailability, impair protein digestibility, and pose health risks. Microbial fermentation degrades ANFs through acidification, enzymatic activity, and microbial metabolism. Beyond detoxification, fermentation enhances nutritional quality by improving mineral bioavailability, enriching amino acid profiles, and generating beneficial bioactive compounds. The efficiency of this process depends on microbial strains, substrate characteristics, and processing cond

Fermentative valorisation of agri-food residues: optimisation of Lactiplantibacillus paraplantarum fermentation conditions for the production of platform organic acids.

INTRODUCTION: Organic acid fermentation is a key route for integrating second-generation (2G) biomass into biorefineries and promoting industrial symbiosis between agri-food residues and platform-chemical production. However, plant matrices such as tomato pomace (TP) and spent coffee grounds (SCG) show limited carbon accessibility and contain phenolic and lipidic compounds that may inhibit bacterial growth. METHODS: This study uses hydroalcoholically pretreated TP and develops an iterative strategy for organic acid production using Lactiplantibacillus paraplantarum as a biofactory, while eval

The influence of carbon dioxide on fermentation products, microbial community, and functional gene in food waste fermentation with uncontrol pH.

Food waste is a major problem faced by human beings. Acidogenic fermentation is an effective and feasible technology for resource recovery from food waste. The mixture of volatile fatty acids (VFAs) hinders the utilization of fermentation products. In this study, we constructed fermentation reactors for food waste treatment. The operation period was separated to three stages: Stage 1 (from day 1-102), Stage 2 (from day 103-208), and Stage 3 (from day 209-304). CO2 was sparged to the reactors to promote the acetate enrichment at Stage 3. Bioinformatics analysis were performed to analyze the mic

Anti-listeria activity of newly isolated lactic acid bacteria from fermented foods and their application to smoked salmon(Coho).

The objective of this study was to evaluate the anti-listeria activities of lactic acid bacteria (LAB) isolated from Korean fermented foods and to assess the effect of fermentate (cells and cell-free supernatant [CFS]), CFS or cells in controlling L. monocytogenes on smoked salmon, packaged either in vacuum- and air-packaging. One L. lactis (CJNU3001) strain and two Enterococcus faecium (CJNU2524 and CJNU2008) strains appeared to have higher anti-listeria activity than the other 15 LAB strains. They also exhibited anti-listeria activity against 24 L. monocytogenes strains of various serotypes.

High Prevalence of Antibiotic Resistance in Traditionally Fermented Foods as a Critical Risk Factor for Host Gut Antibiotic Resistome.

This study aimed to assess the suitability of fermented food interventions to replenish damaged gut microbiota. Metagenomic assessment of published sequencing data found that fermented food interventions led to a significant increase in the gut antibiotic resistome in healthy human subjects. Antibiotic resistome and viable antibiotic-resistant (AR) bacteria were further highly prevalent in retail kimchi and artisan cheeses by metagenomic and culture analyses. Representative AR pathogens of importance in nosocomial infections, such as Klebsiella pneumoniae, Serratia marcescens, and vancomycin-r
