Mycotoxins and human health.

Mycotoxins have been investigated in relation to a wide range of adverse human health effects, but the evidence for all but a small number of associations is limited. Thus, the full impact on human health of the widespread exposure to mycotoxins remains to be defined. The main exception is for aflatoxins; epidemiological, experimental, and mechanistic studies have contributed to establishing aflatoxins as a cause of human liver cancer, with a particularly elevated risk in people chronically infected with hepatitis B virus. In addition, acute aflatoxicosis after exposure to high dietary toxin l

Historical overview of key issues in food safety.

Foodborne transmission of pathogenic and toxigenic microorganisms has been a recognized hazard for decades. Even half a century ago we knew about the dangers of botulism from underprocessed canned foods; staphylococcal poisoning from unrefrigerated cream-filled pastries, sliced ham, meat, and poultry salads; and salmonellosis from infected animal products. Despite new protective measures, changes in preservation techniques and failure to follow recognized procedures have created new dangers. Moreover, we now recognize new organisms that can cause foodborne illness--Listeria monocytogenes, Esch

Photodynamic inactivation of edible photosensitizers for fresh food preservation: Comprehensive mechanism of action and enhancement strategies.

Foodborne harmful bacteria not only cause waste of fresh food, but also pose a major threat to human health. Among many new sterilization and preservation technologies, photodynamic inactivation (PDI) has the advantages of low-cost, broad-spectrum, energy-saving, nontoxic, and high efficiency. In particular, PDI based on edible photosensitizers (PSs) has a broader application prospect due to edible, accessible, and renewable features, it also can maximize the retention of the nutritional characteristics and sensory quality of the food. Therefore, it is meaningful and necessary to review edible

Microbial Survival, Sublethal Injury, and Recovery in Frozen Food Systems: Implications for Safety, Quality Deterioration, and Cold-Chain Control.

Freezing is widely regarded as a microbiologically protective process that suppresses growth and extends shelf life but rarely eliminates microorganisms. Microbial risk in frozen foods is, therefore, determined not only by survival during storage at -18°C but by post-thaw repair and growth during thawing and handling. This review synthesizes freeze-induced injury mechanisms, including membrane damage, osmotic stress, oxidative injury, and macromolecular disruption, and links them to physiological state transitions, lag phase behavior, and recovery potential. Rather than treating sublethal inju

Rapid and robust detection methods for poison and microbial contamination.

Real-time on-site monitoring of analytes is currently in high demand for food contamination, water, medicines, and ingestible household products that were never tested appropriately. Here we introduce chemical methods for the rapid quantification of a wide range of chemical and microbial contaminations using a simple instrument. Within the testing procedure, we used a multichannel, multisample, UV-vis spectrophotometer/fluorometer that employs two frequencies of light simultaneously to interrogate the sample. We present new enzyme- and dye-based methods to detect (di)ethylene glycol in consuma

The duality of filamentous fungi: Beneficial uses and risks in the food industry.

Filamentous fungi are ubiquitous microorganisms, comprising approximately 150,000 documented species, although global estimates suggest a total diversity of 11 million species. The role of filamentous fungi in the food supply chain is complex, balancing production benefits with risks of contamination and health concerns. These fungi have both positive and negative impacts on the food industry, reflecting their duality. Historically, fungi have played a key role in the production of antibiotics, such as penicillin, and have revolutionized food production, particularly cheese manufacturing, by c

Relationships between food and diseases: What to know to ensure food safety.

In recent years, the concept of food has undergone a radical transformation to the point of attributing to foods, in addition to their nutritional and sensorial properties, an important role in maintaining health and psycho-physical well-being and in the prevention of certain diseases. However, foods can hide many pitfalls for human health. There are many critical points in food production processes and they can represent real risks of contamination or of unsafe food production for consumers. Proper conservation, physico-chemical and microbiological stability, cooking methods are fundamental c

Dynamics of Microbial Inactivation and Acrylamide Production in High-Temperature Heat Treatments.

In food processes, optimizing processing parameters is crucial to ensure food safety, maximize food quality, and minimize the formation of potentially toxigenic compounds. This research focuses on the simultaneous impacts that severe heat treatments applied to food may have on the formation of harmful chemicals and on microbiological safety. The case studies analysed consider the appearance/synthesis of acrylamide after a sterilization heat treatment for two different foods: pureed potato and prune juice, using Geobacillus stearothermophilus as an indicator. It presents two contradictory situa

Research highlights in bacteriophages of fermented soybean foods.

Since their discovery, bacteriophages - viruses that infect bacteria - have fascinated scientists due to their ubiquity and potential applications in fields ranging from molecular biology to biotechnology and medicine. However, in fermentation processes that depend on bacterial activity, bacteriophages can pose a major threat by infecting and disrupting key microbial populations, leading to delayed or failed fermentations and resulting in economic losses. While the impact of bacteriophages on fermented dairy foods, such as yogurt and cheese, is well-documented, such knowledge is comparatively

Mapping spoilage microbiota in complex food systems: organisms, mechanisms, and omics-based characterization.

Food spoilage is a major cause of food loss, while it remains less understood in complex, multi-component foods than in single-ingredient products. This review reframes spoilage in such foods as a community-driven ecological process, not simply the result of single dominant organisms, and argues that spoilage is best understood through microbial activity rather than microbial presence or relative abundance alone. We develop this framework around three central ideas: (i) ingredient-derived microbiotas interact within a shared matrix, so spoilage depends on microbial succession and competition d

Microbial diversity, functional activities, and safety risks in fermented tea: a comprehensive review.

Microbial fermented teas are gaining global popularity due to their unique sensory profiles and health benefits. The quality and safety of these products are governed by complex microbial ecosystems that orchestrate the biotransformation of tea leaf components. This review addresses a critical paradox in the field: the same microbial activities that generate desirable bioactive metabolites, such as theabrownins and organic acids, also create ecological niches for mycotoxigenic fungi, posing significant health risks from contaminants like ochratoxin A, citrinin, and aflatoxins. While extensive
