Cheese as Functional Food: The Example of Parmigiano Reggiano and Grana Padano.

Italian hard cooked types of cheese, like Parmigiano Reggiano and Grana Padano, are characterised by positive nutritional qualities. In fact, they contain substances that have particular biological activities, and therefore they can be fully considered, according to the definition given by the European Unit, as 'functional' foods. This short review concisely describes these components and the beneficial effects related to their activities. The description of the biologically active components has been organised in the following paragraphs: protein and peptides, fat and lipids, carbohydrates an

Berries and anthocyanins: promising functional food ingredients with postprandial glycaemia-lowering effects.

The prevalence of type 2 diabetes (T2D) is predicted to reach unprecedented levels in the next few decades. In addition to excess body weight, there may be other overlapping dietary drivers of impaired glucose homeostasis that are associated with an obesogenic diet, such as regular exposure to postprandial spikes in blood glucose arising from diets dominated by highly refined starches and added sugars. Strategies to reduce postprandial hyperglycaemia by optimising the functionality of foods would strengthen efforts to reduce the risk of T2D. Berry bioactives, including anthocyanins, are recogn

Abnormal intragastric distribution of food during gastric emptying in functional dyspepsia patients.

Although delayed gastric emptying is found in some patients with functional dyspepsia, there seems to be little relation between rate of emptying and symptoms. This study examined the hypothesis that food maldistribution rather than gastric stasis may equate to symptoms in such patients and used scintigraphic techniques to quantify the partition of gastric contents between proximal and distal stomach during gastric emptying. Eleven patients with functional dyspepsia characterised by chronic severe postprandial bloating without organic abnormality, and 12 healthy volunteers, ingested a standard

Effects of temperature on food proteins and its implications on functional properties.

This article surveys the knowledge in the area of protein structure and chemistry of denaturation prior to an indepth review of the effects of heat on soy, milk, and egg proteins. It also reviews the methods available to assess denaturation of proteins. Protein denaturation is an ambiguous phenomenon and the consequences of denaturation on the functional properties of proteins is further confounded by this ambiguity. For each of the three food proteins, the known chemistry of individual proteins is reviewed followed by observations made on changes induced by heat in each protein group. Food pr

Neural responses to visual food cues: insights from functional magnetic resonance imaging.

The aim of this paper is to describe the patterns of functional magnetic resonance imaging activation produced by visual food stimuli in healthy participants, as well as in those with anorexia nervosa, bulimia nervosa, binge eating disorder and obesity. We conducted a systematic review of studies published in the last decade on normal and abnormal eating. This review suggested the existence of neural differences in response to the sight of food between healthy individuals, those with an eating disorder and obese subjects. Differences were identified in two brain circuits: (i) limbic and parali

Vincoside Lactam from Edible Uncaria rhynchophylla: A Food-Derived Indole Alkaloid for Dietary Postprandial Glycemic Regulation and Functional Food Development.

α-Glucosidase inhibitors play a role in postprandial blood glucose. However, synthetic hypoglycemic drugs often cause gastrointestinal discomfort and are unsuitable for use as food additives. Natural compounds from plants have therefore attracted interest as safer candidates for hypoglycemic functional foods. Vincoside lactam (VCS-LT), an indole alkaloid isolated from the leaves of Uncaria rhynchophylla (Miq.) Miq. ex Havil., is traditionally used in East Asian herbal teas and dietary supplements. We evaluated its carbohydrate-digestion inhibitory activity to provide experimental evidence for

Edible Mushroom Polysaccharides as Functional Food Ingredients for Metabolic Health: Preparation, Techno-Functional Behavior, and Requirements for Translation.

Edible mushroom polysaccharide (EMP) preparations have repeatedly improved glycemic control, adiposity, lipid homeostasis and hepatic lipid accumulation in animal models, and luminal assays and microbiota-perturbation experiments support the routes involved. Selected preparations also thicken, emulsify, retain water and modify food matrices. Yet these findings rarely concern the same material: metabolic, mechanistic and techno-functional studies usually examine different preparations, and retained function is seldom assessed after formulation, processing and digestion. This narrative review us

Effects of 3-week total meal replacement vs. typical food-based diet on human brain functional magnetic resonance imaging food-cue reactivity and functional connectivity in people with obesity.

OBJECTIVES: Calorie restriction via total meal replacement (TMR) results in greater reduction of food cravings compared to reduced-calorie typical diet (TD). Direct evidence of the impact of these interventions on human brain fMRI food-cue reactivity (fMRI-FCR) and functional connectivity is absent. We examined the effects of a 3-week 1120 kcal/d TMR intervention as compared to an iso-caloric TD intervention using an fMRI-FCR paradigm. METHODS: Thirty-two male and female subjects with obesity (19-60 years; 30-39.9 kg/m2) participated in a randomized two-group repeated measures dietary interve

Food-Based Strategies for Stunting: A Scoping Review of Functional Ready-to-Eat and Ready-to-Cook Foods.

Stunting, a chronic form of malnutrition characterised by impaired linear growth, remains a significant global public health concern. While supplementation programmes have shown potential to improve growth outcomes, long-term implementation may be constrained by poor adherence, high costs and limited sustainability. Increasing reliance on ready-to-eat (RTE) and ready-to-cook (RTC) foods in low- and middle-income countries highlights the potential of nutrient-dense food-based approaches that align with existing dietary practices. This scoping review aimed to map and synthesise existing evidence
