Formation of heterocyclic amines during meat extract processing and cooking.

Standardized biological in vitro systems and in particular those used for cancer prediction are being used to monitor the development of food products in order to ensure the absence of potential mutagens or carcinogens. Maillard reactions occurring during meat extract production was followed in order to reduce the formation of heterocyclic amines. Possibilities to reduce the content of heterocyclic amines during meat extract processing have been proposed. However, several aspects, such as interaction with food-borne mutagen or carcinogen inhibitors, keeping quality, and organoleptic properties

A novel angiotensin-converting enzyme inhibitory peptide from rabbit meat protein hydrolysate: identification, molecular mechanism, and antihypertensive effect in vivo.

Bioactive peptides exhibiting angiotensin-converting enzyme (ACE) inhibitory effects and extracted from natural foods have potential as healthy and safe therapeutics for high blood pressure. The aim of this study was to isolate and purify ACE inhibitory peptides from rabbit meat protein hydrolysate, to explore the underlying mechanisms by molecular docking, and to evaluate the antihypertensive effects in vivo. A novel ACE inhibitory tetrapeptide Trp-Gly-Ala-Pro (WGAP) was identified and purified from a bromelain hydrolysate. WGAP acted against ACE in a non-competitive manner with an IC50 of 14

MuSC cultivation for cultured meat production: recent advances, current limitations, and future directions.

Cultured meat is being investigated as a potential alternative to conventional livestock production by cultivating animal cells under controlled conditions to reproduce key components and structural characteristics of meat. Muscle stem cells (MuSCs), which proliferate, differentiate, and fuse into multinucleated myofibers, are the principal cell source for muscle tissue engineering. However, commercial-scale production remains limited by the restricted proliferative and myogenic potential of MuSCs during extended in vitro expansion, the lack of cost-effective and food-safe culture media, and t

Hybrid cultured meat as an integrated food production system: Recent advances and commercialization challenges.

Hybrid cultured meat (HCM) has emerged as a promising strategy to improve the food applicability of cultured meat (CM) by combining cultured animal cells with animal-free derived materials. This review synthesizes recent advances in HCM research published between 2021 and 2026, and examines HCM as an integrated food production system rather than as a simple extension of conventional CM. The review focuses on cell sources, animal-free scaffolds, serum-free media (SFM), 3D bioprinting, bioprocess scale-up, sensory and nutritional properties, consumer acceptance, and regulatory considerations. Regulation of small-molecule compounds on LC-PUFA biosynthesis during adipogenic transdifferentiation of Salmo salar muscle cells and preparation of cell-cultured fish fat.

Fish cells possess limited long-chain polyunsaturated fatty acid (LC-PUFA) biosynthetic capacity, representing a key bottleneck for improving the nutritional quality of cell-cultured fish meat (CFM). In this study, stearidonic acid-enriched mixed fatty acids (MFAs) in combination with small-molecule compounds were used to regulate LC-PUFA synthesis during the adipogenic transdifferentiation of Salmo salar muscle cells (SsMCs). The results demonstrated that MFAs promoted the adipogenic transdifferentiation of SsMCs in a concentration-dependent manner, and the combined treatment of MFAs and smal

Evaluation of the Effects of Psyllium Husk on the Physicochemical Properties and In Vitro Protein Digestibility of Chicken Myofibrillar Proteins at Various NaCl Concentrations.

Reducing salt while maintaining meat product quality is important, and psyllium husk may help preserve quality and protein digestibility. This study was conducted to evaluate how the addition of psyllium husk powder (PHP) affects the rheological properties of chicken myofibrillar protein (MP) at various NaCl concentrations. Additionally, an in vitro digestion model was applied to evaluate the effects of PHP on protein digestibility. As NaCl increased, the viscosity of MP increased, and the addition of PHP further increased viscosity. The hydrophobicity increased with higher NaCl levels. Howeve

Endogenous Synthesis of Tetrahydroisoquinoline Derivatives from Dietary Factors: Neurotoxicity Assessment on a 3D Neurosphere Culture.

Tetrahydroisoquinoline (THIQ) alkaloids and their derivatives have a structural similarity to 1-methyl-4-phenyl-1,2,3,6-tetrahydropyridine (MPTP), a well-known neurotoxin. THIQs seem to present a broad range of actions in the brain, critically dependent on their catechol moieties and metabolism. These properties make it reasonable to assume that an acute or chronic exposure to some THIQs might lead to neurodegenerative diseases including essential tremor (ET). We developed a method to search for precursor carbonyl compounds produced during the Maillard reaction in overcooked meats to study the

Food hydrocolloids κ-carrageenan and xanthan gum in processed red meat modify gut health in rats.

The food hydrocolloids κ-carrageenan and xanthan gum, used in processed foods including meat products, have unclear effects on gut health. This study investigated the effects of incorporating 1 % κ-carrageenan or xanthan gum into pork on protein digestibility, gut microbiota, oxidative stress, and gene expression using both in vitro gastrointestinal digestion/fermentation and an in vivo rodent model. In vitro, xanthan gum reduced protein digestibility (-11 %) in the simulated small intestine, thus elevating protein fermentation metabolites (up to 4-fold), but this was not observed in vivo. Con

Development of a 3D-bioprinted wheat gluten-based scaffold functionalized with citric acid for cultured meat applications.

The commercial viability of cultivated meat depends on the development of edible, low-cost scaffolds that provide suitable biomechanical cues for cell maturation. This study developed and characterized a food-grade composite bioink based on wheat gluten (10.8% w/w), sodium alginate (6.5% w/w), and carboxymethylcellulose (3.2% w/w), functionalized with citric acid for 3D bioprinting. Two formulations were evaluated: Control (BC) and Modified with citric acid (BM). Rheological characterization confirmed a non-Newtonian shear-thinning behavior (n = 0.14 to 0.22) for both groups, promoting shape f

The effect of oxytocin on porcine malignant hyperpyrexia susceptible skeletal muscle.

1. Certain commercial preparations of oxytocin have been reported to reverse the development of pale soft exudative meat and malignant hyperpyrexia (MH) in pigs in vitro. 2. In this study it is shown that preservative-free oxytocin has no significant effect on the characteristic contractures of MH susceptible (MHS) muscle to halothane, caffeine, succinylcholine and KCl in vitro. 3. Whilst a commercial preparation of oxytocin, Syntocinon (containing chlorbutol as preservative), reversed and prevented the MHS characteristic responses, this study demonstrates conclusively that this was entirely d

Incorporating air-classified quinoa flour in high-moisture-extruded meat analogues: digestive insights.

High-moisture extrusion and formulation-induced structural differences are associated with differences in dynamic gastric disintegration and subsequent intestinal protein hydrolysis in meat analogues; however, the underlying mechanisms remain unclear. This study compared the in vitro digestive behaviours of high-moisture-extruded meat analogues incorporated with 20% air-classified quinoa flour (QF) (MA-20QF), QF-free analogues (MA-0QF) and cooked chicken. Samples were subjected to dynamic gastric digestion (240 min) followed by static small intestinal digestion (120 min). Gastric-emptied diges

In Vitro Effects of Some Botanicals with Anti-Inflammatory and Antitoxic Activity.

Several extrinsic factors, like drugs and chemicals, can foster autoimmunity. Tetracyclines, in particular oxytetracycline (OTC), appear to correlate with the emergence of immune-mediated diseases. Accumulation of OTC, the elective drug for gastrointestinal and respiratory infectious disease treatment in broiler chickens, was reported in chicken edible tissues and could represent a potential risk for pets and humans that could assume this antibiotic as residue in meat or in meat-derived byproducts. We investigated the in vitro anti-inflammatory properties of a pool of thirteen botanicals as a
