Candida tropicalis, Clavispora lusitaniae, Limosilactobacillus fermentum, Liquorilactobacillus mali, and Leuconostoc pseudomesenteroides are associated with ethanol in Malian traditional fermented milk products.

Fermented milk products (FMP) have been consumed by humans for millennia and the associated health benefits are no longer to be demonstrated. Although the manufacturing procedure have been industrialized, FMPs are still produced traditionally in many parts of the world with variable manufacturing procedures and unknown sanitary conditions. In this study, we aimed at comparing the physico-chemical properties of industrial and traditional FMPs from France and Mali as well as their microbial diversity. Therefore, 43 FMPs from France (seven yoghurts and four curdled milk products) and Mali (seven

Enzymatic synthesis of L-DOPA alpha-glycosides by reaction with sucrose catalyzed by four different glucansucrases from four strains of Leuconostoc mesenteroides.

L-DOPA alpha-glycosides were synthesized by reaction of L-DOPA with sucrose, catalyzed by four different glucansucrases from Leuconostoc mesenteroides B-512FMC, B-742CB, B-1299A, and B-1355C. The glucansucrases catalyzed the transfer of d-glucose from sucrose to the phenolic hydroxyl position-3 and -4 of L-DOPA. The glycosides were fractionated and purified by Bio-Gel P-2 column chromatography, and the structures were determined by (1)H NMR spectroscopy. The major glycoside was 4-O-alpha-d-glucopyranosyl L-DOPA, and the minor glycoside was 3-O-alpha-D-glucopyranosyl L-DOPA. The two glycosides

A Case of Successfully Treated Central Line-Associated Bloodstream Infection Due to Vancomycin-Resistant Leuconostoc Citreum in a Child With Biliary Atresia.

Infections caused by the Leuconostocspecies have been increasingly described in the literature. They are Gram-positive, catalase-negative cocci that are intrinsically resistant to glycopeptides, including vancomycin. Although rarely pathogenic in humans, they have been primarily found in patients with immunosuppression, and a history of prolonged antibiotics use. We report a rare case of central venous catheter (CVC) infection caused by Leuconostoc citreum, which was successfully treated with salvaging of the CVC, aiming to highlight the potential risk factors and share the course of managemen

Long-term drench of exopolysaccharide from Leuconostoc pseudomesenteroides XG5 protects against type 1 diabetes of NOD mice via stimulating GLP-1 secretion.

BACKGROUND: Type 1 diabetes is an autoimmune disease that results in the specific destruction of insulin-producing beta cells in the pancreas. The aim of this study was to investigate the mechanism of exopolysaccharide from Leuconostoc pseudomesenteroides XG5 (XG5 EPS) against type 1 diabetes. RESULTS: Long-term drench of XG5 EPS delayed the onset of autoimmune diabetes and had fewer islets with high-grade infiltration (an insulitis score of 3 or 4) than untreated NOD mice. Oral administration of 50 mg kg-1  d-1 XG5 EPS increased the insulin and glucagon-like peptide-1 (GLP-1) levels of serum

Characterization and Antibacterial Activity of a Low-Molecular-Weight Bacteriocin-like Inhibitory Substance S-2 Produced by Leuconostoc falkenbergense SBL-85-2 Against Aeromonas hydrophila.

Aeromonas hydrophila is a globally distributed aquatic pathogen. Antibiotic overuse in traditional management practices has intensified problems such as antimicrobial resistance and environmental pollution, creating an urgent need for safe alternatives. This study characterized a BLIS produced by Leuconostoc falkenbergense SBL-85-2, which shows potential as an antibiotic alternative in aquaculture. L. falkenbergense SBL-85-2 exhibited no hemolytic activity, lacked typical high-risk virulence factors, and only low-identity vancomycin-related intrinsic genes (vanT and vanY) were identified by th

Inhibitory effects of Leuconostoc mesenteroides 1RM3 isolated from narezushi, a fermented fish with rice, on Listeria monocytogenes infection to Caco-2 cells and A/J mice.

Listeria monocytogenes causes listeriosis in humans mainly through consumption of ready-to-eat foods. Immunocompromised persons, the elderly, and pregnant women and their fetuses or newborns are at highest risk for the infection. To isolate probiotic lactic acid bacteria (LAB) with inhibitory effects against L. monocytogenes, we screened for acid and bile resistant LABs from narezushi, a traditional salted and long-fermented fish with cooked rice. Then, inhibitory effects of the selected LABs on L. monocytogenes invasion and infection of human enterocyte Caco-2 cells and Listeria-susceptible A

Breakthrough Pediococcus acidilactici and Leuconostoc lactis bacteraemia with elevated meropenem minimum inhibitory concentrations during broad-spectrum antimicrobial therapy in a patient with advanced pancreatic cancer: A case report and review of the literature.

Pediococcus acidilactici and Leuconostoc lactis are bacteria commonly found in dairy and probiotic products that are intrinsically resistant to glycopeptides. Although historically regarded as organisms of low pathogenicity, there are increasing case reports with invasive infections, primarily in immunocompromised hosts with compromised bowel mucosa. However, concurrent bacteraemia with elevated meropenem minimum inhibitory concentrations (MICs) in both organisms has not been previously described. Here we present the first case, occurring in a patient with advanced pancreatic cancer, peritonea

Polyphasic Characterisation of Microbiota Associated with Sant'Agostino Table Olives Flavoured with Foeniculum vulgare.

Sant'Agostino green table olives, traditionally processed in Apulia and flavoured with Foeniculum vulgare, represent a niche product whose microbial ecology remains largely unexplored. This study aimed to characterise the microbiota of the final product (both brine and fruit) after six months of storage with wild fennel. Four production batches were analysed using a combined culture-dependent and culture-independent approach. Microbiological counts revealed variable levels of aerobic mesophilic microorganisms, yeasts, lactic acid bacteria (LAB), and staphylococci, with yeasts and LAB being pre

Occurrence of lactic Acid bacteria during the different stages of vinification and conservation of wines.

We showed that the growth of lactic acid bacteria during alcoholic fermentation depends on the composition of the must. We illustrated how the addition of sulfur dioxide to the must before fermentation and the temperature of storage both affect the growth of these bacteria in the wine. Whereas species of Lactobacillus and Leuconostoc mesenteroides were isolated from grapes and must, Leuconostoc oenos was the only species isolated after alcoholic fermentation. This organism was responsible for the malolactic fermentation. Isolates of this species varied in their ability to ferment pentoses and
