Ultrasound-assisted maillard reaction: a novel strategy for debittering, flavor enhancement, and antioxidant activity improvement of walnut peptides.

Walnut peptides (WP) show excellent antioxidant, anti-inflammatory, antihypertensive, and immunomodulatory activities, making them promising for functional foods and nutritional supplements. However, hydrophobic amino acids formed during enzymatic hydrolysis cause severe bitterness, limiting their application. This study investigated the debittering effect of ultrasound-assisted Maillard reaction (US-MR) on WP by applying ultrasonic pretreatment at different amplitudes followed by Maillard reaction. Results indicated that US-MR promoted WP-glucose conjugation, increased browning intensity and

Sesame lignans modulate aroma formation in sesame oil through the Maillard reaction and lipid oxidation in model systems.

The unknown effect of sesame lignans on aroma formation in sesame oil via the Maillard reaction (MR) and lipid oxidation was investigated. Sesamin, sesamolin, or sesamol was added to 3 models: lysine+glucose (MR), cold-pressed sesame oil (SO), and MR + SO, and were heated at 120 °C for 60 min. All three lignans suppressed SO oxidation while increasing DPPH scavenging ability (p < 0.05). Lignans increased depletions of lysine and glucose and MR browning (p < 0.05). Lignans reduced most aroma-active pyrazines, aldehydes, ketones, alcohols, and esters (p < 0.05). Sesamol and sesamolin increased p

Effect of Processing of Whey Protein Ingredient on Maillard Reactions and Protein Structural Changes in Powdered Infant Formula.

The most widely used whey protein ingredient in an infant formula (IF) is the whey protein concentrate (WPC). The processing steps used in the manufacturing of both a powdered IF and a WPC introduce protein modifications that may decrease the nutritional quality. A gently processed whey protein ingredient (serum protein concentrate; SPC) was manufactured and used for the production of a powdered IF. The SPC and the SPC-based IF were compared to the WPC and the powdered WPC-based IF. Structural protein modifications were evaluated, and Maillard reaction products, covering furosine, α-dicarbonyl

Effect of 2'-fucosyllactose and hydrolysis degree on oxidation, Maillard reaction, and physical stability of whey protein hydrolysate emulsions.

Processing of liquid infant formulas inevitably triggers undesirable side reactions affecting product quality and nutritional value. This study investigated the effects of whey protein hydrolysis (WPH) at different degrees of hydrolysis (DH; 0%, 6%, 8%, and 10%) and 2'-fucosyllactose (2'-FL) on the physical stability, protein oxidation, lipid oxidation, and Maillard reaction in infant formula model emulsions. Increasing DH progressively enhanced DPPH and ABTS radical scavenging activities, resulting in lower peroxide values and thiobarbituric acid reactive substances, thereby improving lipid o

Maillard reaction indicators formation, changes and possible intake in infant formula produced by different thermal treatments during domestic use.

This study investigated the Maillard reaction of infant formulas (IFs) produced by four thermal treatments during simulated consumption storage. Among the four sterilization conditions, seventy-five degrees, 2 min was considered the optimal sterilization treatment. The loss of available lysine, 3-DG content and FAST (fluorescence of advanced Maillard products and soluble tryptophan) index was lower in the initial IF produced by this treatment. After storage at 37 °C, 57% RH, the largest loss of available lysine was 71.41%. 5-hydroxymethylfurfural content increased to 7.28 mg/100 g with storage

Alleviation effect of lutein Pickering emulsion formed by casein-dextran conjugates through Maillard reaction against blue light retinal degeneration.

With the increasing prevalence of electronic devices, awareness of the risks linked to blue light exposure has significantly heightened. Lutein, a powerful antioxidant, safeguards eye tissue by filtering blue light, while supplementation with docosahexaenoic acid (DHA) enhances retinal function. Adequate intake of these nutrients can help reduce the potential damage from prolonged blue light exposure. The protective effects of lutein and algal oil stabilized with Pickering emulsion were investigated using casein-dextran (CD) conjugates via Maillard reaction. Microstructural analysis revealed a

Isolation and Identification of Novel Taste-Modulating N2-Guanosine 5'-Monophosphate Derivatives Generated by Maillard-Type Reactions.

Several compounds with taste-modulating properties have been investigated, improving the taste impression without having a pronounced intrinsic taste. The best-known representatives of umami taste-modulating compounds are ribonucleotides and their derivatives. Especially the thio derivatives showed high taste-modulating potential in structure-activity relationship investigations. Therefore, this study focuses on the formation of guanosine 5'-monophosphate derivatives consisting of Maillard-type generated compounds like the aroma-active thiols (2-methyl-3-furanthiol, 3-mercapto-2-pentanone, 2-f

Effects of ultrasound-assisted Maillard reaction on the emulsifying and flavor properties of brewer's spent grain protein-gum arabic conjugates.

This study explores the effects of ultrasound-assisted heating compared to conventional wet heating on the Maillard reaction (MR) between brewer's spent grain (BSG) protein and gum arabic (GA), focusing on various factors like reaction kinetics, structural changes, emulsifying performance, and volatile formation. Ultrasound process markedly accelerated glycation, with a 45 min sonicated sample glycation to a similar degree to that induced by traditional 3 h treatment, such that cavitation facilitates early MR pathways. Both approaches enhanced solubility and remodeled secondary structures, alt

A green, chemical crosslinker-ternary macromolecular film from soy protein, Camellia waste, and carrageenan via Maillard reaction for food preservation.

Bio-based packaging films are promising alternatives to petroleum-based plastics, but their application is limited by chemical crosslinkers, high feedstock costs, and performance-sustainability trade-offs. Here, a crosslinker-free ternary film (SCC) was fabricated from soy protein isolate, Camellia oleifera cake extract (COCE), and carrageenan via Maillard-induced glycation. Under optimized conditions (95 °C, pH 8.5), Maillard covalent crosslinking formed a compact network, improving physicochemical properties. Compared with SC film, SCC showed a 4.4% lower swelling ratio, water vapor permeabi
