Extraction of Essential Oils and Terpene Volatiles from Plants and Identification by GC-MS-Based Techniques.

The extraction of plant essential oils (EOs) and analysis by gas chromatography coupled to mass spectrometry (GC-MS) are standard methods when studying aromatic plants and the chemical composition of EOs. Here, two simple methods for the extraction of EO compounds from leaves of Thymus vulgaris are described. Organic solvent extraction and solid-phase microextraction (SPME), respectively, are used and the results of the GC-MS analyses are compared. We explain how analyte peaks can be identified and discuss possible rearrangement reactions that can occur during the extraction process or analysi

Evaluation of quality deterioration and volatile organic compounds formation in deep-fat frying of various oils using GC-IMS and kinetic modeling.

Formulated specialty frying oils are widely used, yet studies on their frying quality deterioration and assessment methods remain insufficient, and multi-dimensional correlation analysis of their physicochemical properties, hazardous contaminants, and volatile compounds (VOCs) during high-temperature processing is lacking. Therefore, this study selected three specialty frying oils as the research objects. Crispy meat was processed at 185 °C to simulate the real frying conditions, and through a "physicochemical properties-hazardous contaminants-volatile compounds" correlation model to systemati
