Effect of Xanthan, Guar, and Carrageenan Gums on the Physicochemical Properties of Hypoallergenic Pea Protein-Based Dysphagia-Friendly Matrices.

Due to the allergenicity of soy protein, this study aimed to develop a hypoallergenic, dysphagia-friendly matrix using pea protein isolate. We investigated the effects of three hydrocolloid thickeners-xanthan gum (XG), guar gum (G), and carrageenan (C)-at various concentrations on the matrices' rheological properties, textural characteristics, and dysphagia diet classification. The unthickened pea protein base was unstable, exhibiting rapid phase separation and low viscosity, unsuitable for dysphagia diets. The addition of XG (0.4-0.6 g), G (0.5-1.0 g), and C (0.8-1.2 g) successfully produced

Network formation in pea protein-based meat substitutes: effects of pH, oil, and pectin-based microgel particles.

As consumer awareness of the environmental and health impacts of excessive meat consumption grows, so does interest in plant-based meat substitutes. High-moisture extrusion of protein isolates is an emerging method for producing anisotropic, meat-like structures. However, sensory differences in texture remain a challenge. This study investigates the formation of protein networks in pea protein isolate (PPI) meat substitutes when the pH is adjusted, in a range of pH 3.3 to 11.1, using either hydrochloric acid or sodium hydroxide, or when canola oil and pectin-based microgel particles (MGP) are

Patient-reported outcomes on gastrointestinal tolerance and adherence to a pea protein plant-based enteral formula in children and adults.

INTRODUCTION: Enteral Nutrition through a feeding tube or orally can improve patient outcomes when tolerated to achieve nutritional requirements. While experts have provided feeding guidelines to enhance safety and efficacy, challenges in gastrointestinal (GI) tolerance such as diarrhea, constipation, bloating and vomiting often complicate adherence. Problems such as malnutrition, morbidity, and mortality occur when gastrointestinal intolerance results in the provision of formulas stopping and starting, and therefore delays, in optimal intake. Formulas vary widely in their composition, includi

Competitive binding and characteristic properties of pea 7S protein with three phenolic compounds: Implications for digestion and intestinal transport.

The delivery of phenols by proteins as carriers is a current research hotspot, but single phenol can no longer sufficient to meet people's health needs. In this study, a protein-phenol triligand complex of curcumin, resveratrol, caffeic acid and pea 7S protein was constructed. Fluorescence spectroscopy confirmed that quenching constants (Ksv) of resveratrol, curcumin and caffeic acid binding to protein were 2.73 × 104 M-1, 3.35 × 104 M-1and 3.38 × 104 M-1, respectively, indicating that caffeic acid has the strongest binding affinity. Influence of soaking and solvent extraction for deodorization of texturized pea protein isolate on the formulation and properties of hybrid meat patties.

BACKGROUND: Hybrid batters constitute the base for the processing of cooked and dry meat analogues. The use of texturized plant proteins in their formulation is a key strategy to reduce the consumption of animal proteins, although off-flavors present in these plant proteins often cause sensory rejection. The aim was to study the effect of a deodorization process of pea protein, for their use in hybrid meat batters at different percentages of substitution. RESULTS: Hybrid patties with higher percentages of pea protein showed higher values of yellowness, pH, and water activity, whereas hardness

Pea protein based nanocarriers for lipophilic polyphenols: Spectroscopic analysis, characterization, chemical stability, antioxidant and molecular docking.

The current research aims to construct and assess pea protein isolate (PPI) nanocarriers for lipophilic polyphenols of curcumin (CUR), quercetin (QUE) and resveratrol (RES), respectively. Fluorescence analysis demonstrated that the binding affinity declined in sequence of QUE > CUR > RES and about one polyphenol compound was bound to protein. Thermodynamic parameters revealed that hydrophobic interaction was mainly responsible for complexation between CUR/RES and PPI, while hydrogen bonding for QUE with PPI. All nanoparticles showed particle size of 154-159 nm. Three lipophilic polyphenols wer

Fabrication of soy protein - pea protein composite fibril/κ-carrageenan emulsion gels through thermal fibrillation for application as fat replacers in ice cream.

Growing interest in reduced-fat frozen desserts has created a need for plant-based fat replacers capable of reproducing the structural and sensory functions of milk fat. In this study, soy protein isolate (SPI) and pea protein isolate (PPI) were co-fibrillated by acid-heat treatment to produce composite protein fibrils (SPI/PPI-F), which were then combined with κ-carrageenan (KG) to construct emulsion gels. SPI/PPI-F exhibited a total β-sheet content of 60.49% and, among the fibrillar emulsifier systems tested, produced an emulsion with a near-zero creaming index. These results indicated that

Co-encapsulation of curcumin and catechin in a grass pea protein/beeswax bigel: Enhancing rheological properties, encapsulation efficiency, and bioaccessibility.

Curcumin (CUR) and catechin (CAT) offer significant bioactivity, but their co-delivery is challenging due to their opposing solubilities, instability, and poor bioaccessibility. Therefore, to co-encapsulate CUR and CAT, a novel bigel preparation method (Type I) was developed, differing from the conventional approaches that involve mixing pre-formed gels. In this novel method, a grass pea protein isolate (GPPI) dispersion and beeswax/sunflower oil were homogenized at specific ratios (30:70, 50:50, and 70:30) and then incubated at 37 °C to induce enzymatic cross-linking. Type I bigels showed mar

Arsenic intervened anarchy in cauda epididymis and spermatozoa of adult rats is amended by casein and pea enriched high protein diet.

Arsenic-mediated male reprotoxicosis has emerged as a serious health concern. Arsenic-induced oxidative stress is known to impair sperm quality, cause erectile dysfunction, and lead to infertility. On the other hand, a formulated high-protein diet (FHPD) enriched with casein and pea is considered to possess significant antioxidant potential. The present study aimed to investigate the protective efficacy of such a protein-rich diet against arsenic-induced epididymal and spermatozoal dysfunctions. Adult male rats were randomly divided into three groups (n = 8 per group). Group I served as contro

Ultra-stable pickering emulsion stabilized by anisotropic pea protein isolate-fucoidan conjugate particles through Maillard reaction.

Bio-based emulsifiers hold significant importance in various industries, particularly in food, cosmetics, pharmaceuticals and other related fields. In this study, pea protein isolate (PPI) and fucoidan (FUD) were conjugated via the Maillard reaction, which is considered safe and widely used in the preparation of food particle. The PPI-FUD conjugated particles exhibit an anisotropic non-spherical structure, thereby possessing a high detachment energy capable of preventing emulsion coalescence and Ostwald ripening. Compared to emulsions previously prepared in other studies (< 500 mM), the Picker
