Optimization of processing parameters to control Maillard browning in ready-to-eat processed potatoes.

Relationship among pH, aw and Maillard browning was investigated in processed potatoes ready-to-eat during cooking and sterilization in autoclave to prevent their colors changes. Central composite rotational design was used for optimization of color (L*, a* and b*), browning index and intermediate compounds index. Reduction in the L* value and increase in the a*, b* value and browning index, indicators for Maillard browning of the processed potatoes were mitigated at pH 4.0-5.0 and aw 0.96-1.00 and accelerated at pH less than 3.0 or more than 7.0 and aw less than 0.84. Formation of intermediat

Alternaria diseases on potato and tomato.

UNLABELLED: Alternaria spp. cause different diseases in potato and tomato crops. Early blight caused by Alternaria solani and brown spot caused by Alternaria alternata are most common, but the disease complex is far more diverse. We first provide an overview of the Alternaria species infecting the two host plants to alleviate some of the confusion that arises from the taxonomic rearrangements in this fungal genus. Highlighting the diversity of Alternaria fungi on both solanaceous hosts, we review studies investigating the genetic diversity and genomes, before we present recent advances from st

Associations of the Potato Psyllid and "Candidatus Liberibacter solanacearum" in Idaho with the Noncrop Host Plants Bittersweet Nightshade and Field Bindweed.

Zebra chip disease (ZC) in potato (Solanum tuberosum L. [Polemoniales: Solanaceae]) can produce unmarketable tubers with striped necrotic patterns. ZC is associated with the bacterium "Candidatus Liberibacter solanacearum" (Lso), which is transmitted by the potato psyllid, Bactericera cockerelli (Šulc) (Hemiptera: Triozidae). Potato psyllids are associated with numerous noncrop host plants, especially from the Solanaceae and Convolvulaceae; however, the contribution and importance of these hosts to ZC epidemiology in potato is poorly understood. To clarify seasonal phenologies on two such host

How do pathogens affecting the same host interact with each other? We evaluated here the types of microbe-microbe interactions taking place between Streptomyces scabiei and Phytophthora infestans, the causative agents of common scab and late blight diseases in potato crops, respectively. Under most laboratory culture conditions tested, S. scabiei impaired or completely inhibited the growth of P. infestans by producing either soluble and/or volatile compounds. Increasing peptone levels correlated with increased inhibition of P. infestans. Comparative metabolomics showed that production of S. sc

Solanaceae glycoalkaloids: α-solanine and α-chaconine modify the cardioinhibitory activity of verapamil.

CONTEXT: Solanaceae glycoalkaloids (SGAs) possess cardiomodulatory activity. OBJECTIVE: This study investigated the potential interaction between verapamil and glycoalkaloids. MATERIAL AND METHODS: The cardioactivity of verapamil and glycoalkaloids (α-solanine and α-chaconine) was tested in adult beetle (Tenebrio molitor) myocardium in vitro using microdensitometric methods. The myocardium was treated with pure substances and mixtures of verapamil and glycoalkaloids for 9 min with saline as a control. Two experimental variants were used: simultaneous application of verapamil and glycoalkaloi

Lectin binding sites on the luminal surface of ependymal cells of the rat spinal cord: implications for neuropathological investigation.

Twenty fluorescein isothiocyanate-labeled lectins were applied to formalin-fixed, paraffin-embedded sections of rat spinal cord to delineate the specific lectin binding sites on the ependymal cells. Only two lectins, Solanum tuberosum agglutinin (STA) and wheat germ agglutinin (WGA), were found to bind intensely to the ciliated surface of rat ependymal cells. Inhibition studies indicated that terminal N-acetylglucosamine and sialic acid were abundantly present on the ciliated surface of ependymal cells and accounted for the binding of these two lectins. Experimentally induced hydromyelia was a

Analytical strategies by liquid chromatography for the determination of glycoalkaloids in potatoes, tomatoes, eggplants and related products: Current knowledge, applications, and future perspectives.

Glycoalkaloids (GAs), bioactive secondary metabolites found in Solanum crops, have garnered increasing attention due to their dual role: health-promoting at low doses and toxic at high concentrations. Covering the period from 2000 to 2025, this review presents an updated assessment of sample preparation strategies and LC-based analytical methods for the detection and quantification of GAs in Solanum-derived foods. Solid-liquid extraction, often coupled with solid-phase extraction and UV detection, remains a commonly employed approach. However, fewer than 20 % of studies investigate the β- and

Revisiting a more than century-old study on the mycorrhiza of Gastrodia elata: Rediscovery and scientific significance of slide preparations.

Microscope slide preparations made for the observation of the mycorrhiza of the mycoheterotrophic orchid Gastrodia elata were rediscovered and confirmed to be the original materials used by Shunsuke Kusano for his 1911 publication. In this study, we re-examined these historical slides to assess their preservation and scientific significance. Among the 115 slides, 61 clearly displayed the mycorrhiza of G. elata. Intracellular organelles closely resembling the 'vesicle', 'globule', 'tubular sheath', 'globular bodies', and 'lignified papillae' described by Kusano were observed, and staining react

From Secular Isolation to Current Globalisation: Preserving the Ethnobotanical Knowledge in Eivissa/Ibiza (Balearic Islands, Spain).

Eivissa/Ibiza, as per its names in its two official languages, Catalan and Spanish, is the third of the Balearic Islands in terms of extension and the second concerning population. It is also a well-known holiday destination in Europe. Numerous ethnobotanical prospections have been performed in the Balearic Islands, but to date, Ibiza lacks a monographic study on traditional knowledge related to plant biodiversity. In this paper, we present the results of the ethnobotanical investigation carried out in Ibiza from 2016 to 2023. A total amount of 95 interviews were conducted with 101 informants

Unveiling the role of starch crystalline type in ultrasonic-assisted complexation with palmitic acid: Implications for physicochemical properties and enzyme resistance.

Starch crystalline type is a key structural factor influencing its interaction with lipids. This study compared how three starch crystalline types, namely A-type wheat starch (WS), B-type potato starch (PS), and C-type mung bean starch (MBS), influenced the formation and properties of starch-palmitic acid (PA) complexes under ultrasonic treatment. A-type WS formed complexes (UWS-PA-500) that exhibited the highest pasting temperature (93.82 °C) and the largest decrease in gelatinization enthalpy with ΔH reduced from 9.65 J/g to 7.95 J/g, indicating the most pronounced improvement in thermal sta

Evaluation and use of plant biodiversity for food and pharmaceuticals.

Many epidemiological studies have shown the importance of fruit and vegetables in the human diet so as to prevent the onset of cardiovascular disease and several forms of cancer. The use for food and pharmaceuticals of two of the most widely grown and genetically well-known species in the world, the tomato and the potato, is reviewed. Tomatoes are important sources of vitamin C, potassium, folic acid and carotenoids such as lycopene and beta-carotene. It has been demonstrated that lycopene has anti-oxidant properties and interferes with the growth of cancerous cells. At the Department of Agron

Improving the quality attributes of potato starch gel through combined pre-drying and short-term retrogradation.

To circumvent the health risks associated with traditional alum in potato starch noodles, this study applied physical modification of potato starch gels through moisture regulation (10%-60%) combined with short-term retrogradation (12h). Results showed that the gel with 30% moisture content after retrogradation formed a uniform and dense honeycomb network, with tensile strain and stress reaching 640% and 130 kPa, respectively, representing increases of 39% and 271% compared to the untreated sample. XRD analysis indicated that the treatment increased gel crystallinity from 1.96% to 13.68%, rais

Sorbitol-enhanced butyric acid production in mixed-culture anaerobic fermentation of potato peel waste.

The production of bio-based butyric acid mainly relies on NADH as a reducing agent. Enhancing NADH availability is a promising strategy to increase butyric acid yields in mixed-culture fermentation (MCF) systems. Compared with glucose, sorbitol degradation generates one additional mole of NADH per mole. Accordingly, this study investigated the effect of sorbitol addition on butyric acid production in MCF using potato peel waste as feedstock. NADH levels and microbial community dynamics were further analyzed. The results revealed that sorbitol supplementation significantly increased butyric aci

From the lab to the field and closer to the market: Production of the biopolymer cyanophycin in plants.

A range of studies has investigated the production of biopolymers in plants but a comprehensive assessment of feasibility and environmental safety and consumer acceptance is lacking. This review delivers such an assessment. It describes the establishment of the production in tobacco and potato, the analysis of lead events in the greenhouse and in the field, the establishment and upscaling of effective isolation processes and storage conditions, taking the cyanobacterial storage peptide cyanophycin (CGP) as an example. The paper lists several industrial and medical applications of CGP and its b

Characterization of molecular and kinetic properties of two acetylcholinesterases from the Colorado potato beetle, Leptinotarsa decemlineata.

The molecular and biochemical properties of two acetylcholinesterases (LdAChE1 and LdAChE2) from the Colorado potato beetle, Leptinotarsa decemlineata, were investigated in this study. Polyacrylamide gel electrophoresis in conjunction with western blotting with LdAChE1- or LdAChE2-specific antibodies suggested that LdAChE1 exists in a soluble form, whereas LdAChE2 exists in both soluble and amphiphilic forms with a glycophosphatidylinositol anchor. Both LdAChEs exist as homodimers with each monomer connected with a disulfide bond. LdAChE1 was the most highly expressed in the thorax followed by
