Microbial communities associated with honey bees in Brazil and in the United States.

Honey bee colony losses worldwide call for a more in-depth understanding of the pathogenic and mutualistic components of the honey bee microbiota and their relation with the environment. In this descriptive study, we characterized the yeast and bacterial communities that arise from six substrates associated with honey bees: corbicular pollen, beebread, hive debris, intestinal contents, body surface of nurses and forager bees, comparing two different landscapes, Minas Gerais, Brazil and Maryland, United States. The sampling of five hives in Brazil and four in the USA yielded 217 yeast and 284 b

Portuguese cacholeira blood sausage: A first taste of its microbiota and volatile organic compounds.

Among typical Portuguese sausages, the cacholeira blood sausage undoubtedly represents one of the most popular preparations. To the authors' knowledge, a lack of information on both the microbiota and the volatile organic compounds (VOCs) of this blood-containing sausage emerges from the available scientific literature. This study represents the first characterization of physico-chemical, microbiological and volatile traits of Portuguese cacholeira blood sausage. To this end, ready-to-eat cacholeira blood sausages were collected from two production batches manufactured in summer (batch 1) and

Cadavers stored under refrigerated conditions as a source of cold-adapted microscopic fungi.

Fungi are frequently observed on human remains during decomposition; however, little is known about fungal communities associated with cadavers stored under refrigerated conditions. This study aimed to characterize the cultivable fungal diversity of human cadavers subjected to long-term cold storage and to identify taxa capable of persisting under these conditions. A total of 12 cadavers were examined, including refrigerated cadavers stored at 4 °C, frozen cadavers, and one non-refrigerated comparison case recovered from an indoor environment. Fungi were isolated using culture-based methods an

From Charcuterie to Plant-Based: Harnessing Penicillium nalgiovense for Innovative Soybean Co-Culture Fermentation.

Improving the flavour of soybean-based ingredients remains challenging as soybeans naturally contain compounds that generate green and beany notes. This study evaluated how the surface-growing food-grade fungus Penicillium nalgiovense (PN), alone and together with selected yeasts and lactic acid bacteria, alters the chemistry and sensory attributes of soybeans during solid-state fermentation. PN showed strong proteolytic activity in the monoculture fermentation, producing the highest accumulation of free amino acids (1324 mg/100 g), while its combination with Lactiplantibacillus plantarum (LP)

Post-brumation yeast mycobiota in Vipera berus (European adder): clinically relevant Candida parapsilosis oral dominance and diverse fecal communities compared with warmer-region snakes.

Snakes may harbor clinically relevant yeasts, yet the culturable yeast mycobiota of temperate snake species remains poorly characterized. We surveyed culturable yeasts from 17 fecal samples and 5 oral swab samples of Vipera berus (European adder) collected in European Russia immediately after spring emergence from brumation. Yeasts were isolated by culturing at multiple incubation temperatures and identified by conventional phenotyping and ITS region sequencing (ITS1–5.8S–ITS2). In total, 16 yeast species were recovered. Alpha diversity was significantly higher in fecal samples (median richnes

Microbial Interactions and Flavor Modulation in Cabbage Fermentation: Roles of Lactiplantibacillus plantarum and Rhodotorula mucilaginosa.

Fermented cabbage is a globally popular food, whose distinctive flavor is largely determined by microbial metabolism and interspecies interactions. To understand the roles of Lactiplantibacillus plantarum (formerly Lactobacillus plantarum) and Rhodotorula mucilaginosa in regulating microbial community structure and flavor formation during cabbage fermentation, natural fermented cabbage was compared with that inoculated with L. plantarum, R. mucilaginosa and both strains. The results showed that cabbage inoculated with either strain accelerated fermentation, with the fastest acidification obser

Insights into Microbial Community and Its Enzymatic Profiles in Commercial Dry-Aged Beef.

Dry-aged beef has gained interest worldwide in recent years due to its improved sensory attributes. This enhancement is thought to be partially driven by microbial activities, particularly lipolysis and proteolysis. In this study, dry-aged beef manufactured by seven commercial producers in China was analyzed. The pH value and total volatile base nitrogen value of dry-aged beef were determined. High-throughput amplicon sequencing of full-length 16S rRNA genes and internal transcribed spacer (ITS) regions was used to analyze the microbial community. A total of 207 proteolytic and lipolytic isola

Identification and antifungal susceptibility of a large collection of yeast strains isolated in Tunisian hospitals.

In this study, matrix-assisted laser desorption/ionization time-of-flight mass spectrometry (MALDI-TOF MS) was used as a rapid method to identify yeasts isolated from patients in Tunisian hospitals. When identification could not be exstablished with this procedure, sequencing of the internal transcribed spacer with 5.8S ribosomal DNA (rDNA) (ITS1-5.8S-ITS2) and D1/D2 domain of large-subunit (LSU rDNA) were employed as a molecular approach for species differentiation. Candida albicans was the dominant species (43.37% of all cases), followed by C. glabrata (16.55%), C. parapsilosis (13.23%), C.

Identification and cloning of a selenium dependent glutathione peroxidase from giant freshwater prawn, Macrobrachium rosenbergii.

A selenium dependent glutathione peroxidase (Se-GPx) cDNA was cloned from haemocyte by a reverse-transcription polymerase chain reaction (RT-PCR) and rapid amplification of cDNA (RACE). The 913 bp cDNA contained an open reading frame (ORF) of 558 bp encoded a deduced amino acid sequence of 186 amino acids. The prawn Se-GPx sequence contains a selenocysteine (Sec) residue which is encoded by the unusual stop codon, (115)TGA(117). According to the molecular modeling analysis, the active site Sec residue, located in the loop between beta3 and alpha2 in a pocket on the protein surface, and hydroge

The ileal fungal microbiota is altered in Crohn's disease and is associated with the disease course.

INTRODUCTION: Fungal microbiota's involvement in the pathogenesis of Crohn's disease (CD) is incompletely understood. The terminal ileum is a predilection site both for primary involvement and recurrences of CD. We, therefore, assessed the mucosa-associated mycobiota in the inflamed and non-inflamed ileum in patients with CD. METHODS: The mucosa-associated mycobiota was assessed by ITS2 sequencing in a total of 168 biopsies sampled 5 and 15 cm proximal of the ileocecal valve or ileocolic anastomosis in 44 CD patients and 40 healthy controls (HC). CD patients with terminal ileitis, with endosc

Identification of Clinically Relevant Yeasts from Avian Isolates Using API ID32C, MALDI-TOF MS, and ITS Sequencing: Potential Relevance from a One Health Perspective.

Wild and synanthropic birds harbour a diverse range of yeasts, including species of recognised clinical relevance. Given their close interaction with human activities, these birds represent a valuable source for investigating environmental yeasts and assessing the performance of identification methods. We investigated yeasts recovered from cloacal and crop samples of birds from Gran Canaria and compared routine identification methods with molecular sequencing. Twenty-four isolates were examined by biochemical profiling (API ID32C) and MALDI-TOF MS. Molecular identification based on ITS sequenc

The impact of beer-spoiling yeast on flavour development in non-alcoholic beers.

No- and low-alcohol beverages reflect a commercially important and rapidly expanding market. These products represent a unique environment that differs nutritionally and environmentally from standard product types and are generally regarded as being at higher risk of spoilage. Beer-spoiling yeasts represent a particular risk within the brewing chain, typically impacting the sensorial properties of the final beverage. However, little is known about their effects in no- and low-alcohol products. This study aimed to determine the impacts of beer-spoiling yeasts on the flavour profiles of non-alco

Multifarious plant growth-promoting traits of mangrove yeasts: growth enhancement in mangrove seedlings (Rhizophora mucronata) for conservation.

Plant Growth-Promoting Yeasts (PGPY) have garnered significant attention in recent years; however, research on PGPY from mangroves remains a largely unexplored frontier. This study, therefore, focused on exploring the multifaceted plant growth-promoting (PGP) capabilities of yeasts isolated from mangroves of Puthuvype and Kumbalam. The present work found that manglicolous yeasts exhibited diverse hydrolytic properties, with the predominance of lipolytic activity, in addition to other traits such as phosphate solubilization, and production of indole acetic acid, siderophore, ammonia, catalase,
