To assess the daily intakes of total mercury (THg) and methylmercury (MeHg) and the possible adverse health impacts, different food groups including fish, meat, vegetable and rice were collected from three areas in Cambodia. The concentrations of THg and MeHg ranged from 0.16 to 171 ng g(-1) and not detected (ND) to 82.3 ng g(-1) wet weight (ww), respectively. The concentrations of THg and MeHg in fish were approximately three to four orders of magnitude greater than that in fruit and vegetable. Fish had the highest contribution to the total daily intakes of THg and MeHg. The estimated daily i

Exposure to high levels of mercury during vulnerable periods (such as pregnancy and childhood) may have serious consequences for cognitive development, as observed after acute poisoning episodes in Japan and Irak. The main source of mercury exposure in the general population is consumption of certain types of fish. There is growing concern about the possible neurotoxic effects of mercury, especially in younger children in populations where fish intake is moderate to high. The scientific evidence to date is inconclusive. In Spain, the Childhood and Environment (Infancia y Medio Ambiente [INMA])

INTRODUCTION: Acrylamide is present in a variety of cooked and processed foods, but its precise role in the biological mechanisms underlying type 2 diabetes (T2D) remains incompletely understood. This review aimed to comprehensively evaluate the relationship between dietary acrylamide exposure, T2D-related metabolic dysfunction, and the molecular mechanisms responsible for its adverse effects.
METHODS: A narrative literature review was conducted by searching PubMed®, ScienceDirect®, Google Scholar®, and MEDLINE® for English-language publications published between 2002 and 2025. The search str

Background/Objectives: Aluminium is a widespread environmental element and food contaminant to which the general population is continuously exposed, primarily through diet and drinking water. Although gastrointestinal absorption is generally low, bioavailability varies according to chemical form, food matrix, and interactions with dietary components. Prolonged exposure can nevertheless result in gradual tissue accumulation. This review summarises current evidence on dietary aluminium exposure, factors influencing its bioavailability, toxicokinetics, biological effects, gut microbiota interacti

BACKGROUND: PFAS are chemicals that are persistent in the environment. PFAS bioaccumulate and have been detected in human biospecimens, including children. Hispanic populations may be disproportionately vulnerable to PFAS exposure due to dietary and social factors.
OBJECTIVE: To identify dietary and social factors associated with PFAS concentrations in Hispanic children.
METHODS: We enrolled 110 Hispanic children (ages 4-11) in the Vidas Activas Familias Saludables (VALE) study. Parents completed questionnaires on diet and social factors, and children's anthropometrics and blood specimens we

Environmental stressors during the crucial period of fetal development can have a substantial impact on long-term health outcomes. A major concern is dietary exposure to endocrine-disrupting chemicals (EDCs), which can readily cross the placenta and disrupt fetal hormonal signaling and developmental programming. Examples of these chemicals include bisphenols, phthalates, pesticides, and persistent organic pollutants (POPs). Prenatal exposure to EDC has been associated with long-term effects in children, including immune disruption, metabolic dysregulation, impaired neurodevelopment, and reprod

The research aims to evaluate the source, dispersion, and human health risk assessment of PAH-contaminated Talinum Triangulare grown along the polluted Ikpoba River. The freeze-dried vegetables were sonicated with dichloromethane for an hour and then concentrated using a rotary evaporator. The extract was purified using a glass column with anhydrous Na2SO4 and silica gel and analyzed using gas chromatography-mass spectrometry (GC-MS). The distribution of the contaminants showed that Pyrene < Benzo(a)anthracene ≤ Fluorene < Phenathrene ≤ Naphthalene ≤ Acenaphthene < Anthracene ≤ Acenaphthylene,

Background. Fish and rice are the main dietary sources of methylmercury (MeHg); however, rice does not contain the same beneficial nutrients as fish, and these differences can impact the observed health effects of MeHg. Hence, it is important to validate a biomarker, which can distinguish among dietary MeHg sources. Methods. Mercury (Hg) stable isotopes were analyzed in hair samples from peripartum mothers in China (n = 265). Associations between mass dependent fractionation (MDF) (δ202Hg) and mass independent fractionation (MIF) (Δ199Hg) (dependent variables) and dietary MeHg intake (independ

Considering the genotoxic and cancerogenic nature of aflatoxin M1 (AFM1), its presence in milk and dairy products may pose health risks for consumers. The chronic exposure was calculated using a two-dimensional (second order) Monte Carlo model. Results of 13 722 milk and dairy product samples analysed in the 2015-2022 period were used. Milk and dairy products intake information was collected with a Food Frequency Questionnaire (FFQ) validated by a 24-h recall-based method. Risk characterization was done by calculation of the Margin of Exposure (MOE) and by calculation of AFM1 induced number of

Fluorinated liquid-crystal monomers (FLCMs) widely used in liquid crystal displays are considered to be a new generation of persistent, bioaccumulative, and toxic contaminants. They have been widely detected in the environment. However, little is known about their occurrence in food and human dietary exposure until now. Herein, we provided an evaluation of dietary exposure and health risks of FLCMs in the Chinese adult population based on the fifth and sixth total diet studies (TDSs). The detection frequencies of FLCMs in the two surveys were 90.5 and 99.5%, with concentrations ranging from no

Per- and polyfluoroalkyl substances (PFAS), dubbed "forever chemicals", are widely present in the environment. Environmental contamination and food contact substances are the main sources of PFAS in food, increasing the risk of human dietary exposure. Numerous epidemiological studies have established the link between dietary exposure to PFAS and liver disease. Correspondingly, PFAS induced-hepatotoxicity (e.g., hepatomegaly, cell viability, inflammation, oxidative stress, bile acid metabolism dysregulation and glycolipid metabolism disorder) observed from in vitro models and in vivo rodent stu

The intake of cassava would probably induce adverse health effects since there are toxic cyanide in cassava. However, the risk assessment of cassava consumption has not been reported in China. Therefore, this paper aimed to evaluate the dietary risks of cassava cyanide and proposed a maximum residue limit (MRL) for cyanogenic glycosides (CNGs) in cassava. The retention rate of CNGs and CN- were 61% and 11% after boiling, respectively. The acute dietary exposure of CN- and CNGs were 0.6-fold and 1.7-fold of acute risk reference dose, respectively. There was no chronic health risk across all pop

PURPOSE: Vitamin D may reduce cell proliferation and tumor growth in breast tissue, and exposure may be most important during adolescence when breast tissue is developing. In the Nurses' Health Study II, higher recalled adolescent vitamin D intake was associated with a lower risk of benign breast disease (BBD). Our study aimed to assess adolescent vitamin D exposure in relation to BBD in young women.
METHODS: Vitamin D was assessed in 6,593 adolescent girls (9-15 years of age at baseline) in the prospective Growing Up Today Study cohort using the mean energy-adjusted intakes from food frequen

Few data exist on the association between dietary habits and urinary biomarker concentrations of pesticides in children. The objective was to examined the association between the weekly intake frequency of 65 food items and urinary biomarkers of exposure to chlorpyrifos (3,5,6-trichloro-2-pyridinol [TCP]), permethrin (3-phenoxybenzoic acid [3-PBA]), and 2,4-dichlorophenoxyacetic acid [2,4-D] in 135 preschool-aged children. TCP and 3-PBA are nonspecific biomarkers as they are also urinary metabolites of other pesticides. TCP, 3-PBA, and 2,4-D were detected in 99%, 64%, and 92% of the urine samp

Epidemiologic and experimental data suggest that consumption of diets that are rich in isoflavones may decrease cancer risk in the breast, prostate, and other tissues. Isoflavones such as genistein and daidzein are structurally similar to endogenous estrogens, and demonstrate both estrogenic and weak anti-estrogenic activities; these activities may underlie the impaired fertility and reproductive tract disorders reported in animals exposed to high doses of isoflavones. To identify possible effects of isoflavones on male fertility, we evaluated reproductive parameters in Wistar-Unilever rats re

In a cassava-growing area in Malawi, where roots are processed by soaking and water is available throughout the year, we interviewed 176 women farmers regarding their preferences for cassava cultivars and frequency of cassava consumption. Dietary cyanogen exposure was estimated from urinary levels of linamarin, the cyanogenic glycoside in cassava, and urinary thiocyanate, the main cyanide metabolite. Protection against unplanned harvest by family members, theft and animal spoilage were stated to be very important reasons for growing bitter cassava cultivars by 91%, 90% and 74% of the women, re

The purpose of the present study was to investigate bone changes in the adult rat exposed to low lead levels during intake of normal dietary calcium and to contrast these findings with data from our earlier studies performed with animals receiving low dietary calcium concurrent with lead exposure. The present study exposed adult rats to 100 ppm lead via drinking water for 12 weeks and assessed bone histology, 1,25-dihydroxyvitamin D, 25(OH)vitamin D and parathyroid hormone levels. No osteopenia was evident by quantitative bone histology, and circulating levels of 1,25-dihydroxyvitamin D, 25(OH

BACKGROUND: Rapid dietary transitions in sub-Saharan Africa may alter coagulation profiles; however, this remains poorly characterized.
METHODS: An open-label dietary-intervention trial in Tanzania enrolled 77 healthy men aged 20 to 40 years. They underwent 1 of 3 interventions (n=22 per arm): heritage-to-Western-style diet switch (2 weeks), Western-to-heritage diet switch (2 weeks), or continued their habitual Western-style diet with daily consumption of 1 L of a traditional fermented banana-millet beverage (Mbege) for 1 week. The 2 diet-switch arms had 5 habitual-diet controls each, while t

Aquaculture facilities in marine ranches continuously fragment and release microplastics, which accumulate in filter-feeding shellfish and enter residents' diets. Climate change intensifies this pathway. Warming and ultraviolet exposure accelerate the fragmentation of aquaculture plastics, while typhoons damage facilities and release microplastics in pulses and raise the health expenditure at stake for the government, enterprises, and households. This study constructs a tripartite evolutionary game model of the government, marine ranching enterprises, and consumers. Numerical simulation is use

BACKGROUND: Heavy metals, like lead, arsenic, and cadmium, are linked to increased inflammation even in early life; however, anti-inflammatory diets may offset these effects.
METHODS: We evaluated associations between heavy metals and inflammatory biomarkers, and potential effect modification by diet in 399 adolescents aged 10 to 18 at baseline who attended two study visits 2 years apart (773 observations). At baseline, blood lead, urinary arsenic, and cadmium concentrations were measured, and the Children's Dietary Inflammatory Index (C-DII) was calculated. Fasting serum interleukin (IL)-4,
