Emulsion-template oleogels: Formation mechanisms, structural regulation, and potential as solid fat substitutes.

Solid fats, including saturated and trans fats, provide desirable functionality, texture, and palatability to foods; however, they are associated with adverse health effects. Food industry is actively seeking alternative ingredients to replace solid fats while preserving the sensory and texture attributes crucial for consumer acceptance. The emulsion-template approach for gelling vegetable oils is a novel strategy to replace solid fats, offering advantages such as the use of safe and plentiful raw materials, mild processing conditions, a healthier fatty acid profile, controllable viscoelastici

Physicochemical properties and biological safety of ferulic acid-grafted gelatin as a versatile food emulsifier: Studies in zebrafish and C. elegans.

Ferulic acid-grafted gelatin (Fg) was synthesized through the reaction with carbodiimide and evaluated for its potential as a clean-label, multifunctional food emulsifier. FTIR, UV-Vis, and NMR structural analyses demonstrated that amide linkages were effectively established between ferulic acid and gelatin. The grafting significantly enhanced the interfacial performance and the physicochemical characteristics. Visual and microscopic evaluations further confirmed that Fg formed stable and fine emulsions with reduced droplet size and improved dispersion stability compared to native gelatin. The

Structural characteristics and emulsifying properties of linear dextrin/eicosapentaenoic acid composites: Effect of the degree of polymerization.

This work aimed at building functional emulsions based on the linear dextrins (LDs) emulsion system. The gradient polyethylene glycol (PEG) precipitaion method was used to fractionate LDs into fractions with different degrees of polymerization (DP). A package, and co-precipitation procedure of LDs, and eicosapentaenoic acid (EPA) was used to fabricate LDs-EPA composites. The gas chromatograph, Fourier transform infrared spectroscopy, X-ray diffraction and differential scanning calorimetry analyses affirmed the formation of the LDs-EPA composites. The sizes of these composites were 38.55 nm, 59

Dual role of polyglycerol vitamin E succinate in emulsions: An efficient antioxidant emulsifier.

α-Tocopherol, as an oil-soluble vitamin with strong antioxidant activity. It is the most naturally abundant and biologically active form of vitamin E in humans. In this study, a novel emulsifier (PG20-VES) was synthesized by attaching hydrophilic twenty-polyglycerol (PG20) to hydrophobic vitamin E succinate (VES). This emulsifier was shown to have a relatively low critical micelle concentration (CMC = 3.2 μg/mL). The antioxidant activities and emulsification properties of PG20-VES were compared with those of a widely used commercial emulsifier: D-α-Tocopherol polyethylene glycol 1000 succinate

Stability of curcumin in oil-in-water emulsions: Impact of emulsifier type and concentration on chemical degradation.

Oral ingestion of curcumin is claimed to be effective against several diseases, including inflammation and cancer. However, its utilization in food, supplement, and pharmaceutical products is often challenging due to its poor water solubility, high chemical instability, and limited oral bioavailability. Emulsion-based delivery systems can be designed to overcome these challenges, but their composition and structure must be optimized to ensure they function appropriately. This study examined the impact of emulsifier type on the formation and stability of curcumin-loaded oil-in-water emulsions:

Production of bioemulsifiers by Amycolatopsis tucumanensis DSM 45259 and their potential application in remediation technologies for soils contaminated with hexavalent chromium.

In recent years, increasing interest has been shown in the use of bioemulsifiers as washing agents that can enhance desorption of soil-bound metals. However, high production costs derived from the use of expensive substrates for formulation of the fermentation media represent the main challenge for full, large-scale implementation of bioemulsifiers. This work reports on a first study of bioemulsifier production by the actinobacterium Amycolatopsis tucumanensis DSM 45259 using different carbon and nitrogen sources. Preliminary results on the potential use of these compounds as washing agents fo

Sorbitan sesquioleate: an emerging contact allergen.

Sorbitol-based emulsifiers such as sorbitan sesquioleate (SSO) are commonly used in topical corticosteroids, topical antibiotics, topical antifungals, moisturizing creams and lotions, and topical retinoids. Contact dermatitis from sorbitol derivatives appears to be increasingly prevalent. Patch-testing with SSO can be useful in the work-up of patients with presumptive cosmetic allergic contact dermatitis. Those sensitized to SSO can be counseled to avoid sorbitol-containing products, especially topical corticosteroids. Herein we discuss case reports of SSO allergy and a recent case series of 1

Self-emulsifying Drug Delivery System for Oral Anticancer Therapy: Constraints and Recent Development.

Oral anticancer therapy faces several drawbacks: low aqueous solubility, poor and irregular absorption from gastrointestinal sites, high first-pass metabolism, food-influenced absorption, non-targeted delivery, severe systemic and local adverse effects, etc. Enhancement of oral bioavailability could reduce the drug load and associated adverse effects. Self-emulsifying drug delivery systems (SEDDS) can enhance in-vivo solubility and drug absorption from the gastrointestinal tract, bypass liver metabolism by lymphatic absorption and inhibit efflux transport. All these phenomena ultimately result

Emulsifying properties of quinoa protein fibrillar aggregates and their influence on quinoa protein emulsion gel formation.

Fibrillization is a potential approach to improving functionality of seed storage proteins. Herein, the solubility, morphology, wettability, interfacial adsorption and emulsifying properties of quinoa protein fibrillar aggregates were compared with those of quinoa protein isolate (QPI). Effect of fibrillar aggregates on the formation of heat-induced QPI emulsion gels was investigated in the presence 0 or 100 mM NaCl. The results showed that fibrillization enhanced the relative solubility of QPI by ∼10 %, and reduced the contact angle from 130.5° to 83.4°. Both QPI and fibrillar aggregates exhi

Emulsifying Properties of Polysaccharide Conjugates Prepared from Chin-Brick Tea.

Chin-brick tea polysaccharide conjugates (TPC-C) were prepared to study their emulsion capabilities. Interfacial tension and the effects of some factors, such as storage time, metal ion concentrations (Na+, Ca2+), pH (2.0-8.0), and heat treatment (70-100 °C) on the emulsions stabilized by TPC-C were studied. The interfacial tension of TPC-C (10.88 mN/m) was lower than that of gum arabic (15.18 mN/m) at a concentration of 0.08%. As the TPC-C concentration increased from 0.1 to 3.0 wt %, the mean particle diameter (MPD) (d32) of emulsions stabilized by TPC-C decreased from 1.88 to 0.16 μm. Furth

Production and partial characterization of bioemulsifier from a chromium-resistant actinobacteria.

Surface-active compounds such as synthetic emulsifiers have been used for several decades, both for the degradation of hydrocarbons and increasing desorption of soil-bound metals. However, due to their high toxicity, low degradability, and production costs unaffordable for use in larger ecosystems, synthetic emulsifiers have been gradually replaced by those derived from natural sources such as plants or microbes. In previous studies, the bacterium Streptomyces sp. MC1 has shown the ability to reduce and/or accumulate Cr(VI), a highly promising advance in the development of methods for environm

Application of a long-lasting colloidal substrate with pH and hydrogen sulfide control capabilities to remediate TCE-contaminated groundwater.

A long-lasting emulsified colloidal substrate (LECS) was developed for continuous carbon and nanoscale zero-valent iron (nZVI) release to remediate trichloroethylene (TCE)-contaminated groundwater under reductive dechlorinating conditions. The developed LECS contained nZVI, vegetable oil, surfactants (Simple Green™ and lecithin), molasses, lactate, and minerals. An emulsification study was performed to evaluate the globule droplet size and stability of LECS. The results show that a stable oil-in-water emulsion with uniformly small droplets (0.7 μm) was produced, which could continuously releas

Corn Oil-Water Separation: Interfacial Behavior of Extended Surfactant and Glutelin.

The purification and collection of various products from oil/water mixtures are routine procedures. However, the presence of emulsifiers that can displace other surface active components in the mixtures can significantly influence the efficiency of such procedures. Previously, we investigated interfacial mechanisms of zein protein-induced emulsification and the opposing surfactant-induced demulsification related to corn oil refinement. In this paper, we further investigated a different class of protein, glutelin, inside corn and proved that glutelin acts as an oil/water emulsifier in an acidic

Oleic Acid-Mediated Double Emulsification Enables Enhanced Aqueous Stability and Localized Photothermal Heating of Liquid Metal Droplets.

Gallium-based liquid metals (LMs) have emerged as promising photothermal agents owing to their broadband optical absorption, high photothermal conversion capability, and intrinsic fluidity. However, their practical implementation in aqueous and biological environments remains severely limited by water-induced oxidation and hydrolysis, which progressively deteriorate their structural and photothermal stability. Here, we present a facile and potentially scalable double-emulsion strategy that physically isolates LM nanodroplets from water without requiring complex surface modification. By dispers

Successful factorial design for the optimization of methylprednisolone encapsulation in biodegradable nanoparticles.

Due to their crystalline nature, the encapsulation of hydrophobic corticosteroids within polymeric nanoparticles by o/w solvent evaporation method is often difficult to achieve. The aim of this study was to evaluate the effect of both process and formulation parameters on the encapsulation of a model corticosteroid: methylprednisolone (MP). For this purpose, a 3(2)factorial design was performed evaluating the effects of the concentration of emulsifiers and sonication time on the manufactured nanoparticles, followed by a multiresponse optimization. The study also included the evaluation of othe

Insights into the role of chia mucilage in lipid digestion reduction through bile salt sequestration.

This study aimed to evaluate the effect of chia mucilage (CM) on the lipid digestion of CM and β-lactoglobulin (β-lg)-CM mixed oil/water emulsions and to explore this effect through its interactions with bile salts (BS), key agents in the duodenal lipolysis process. CM exhibited high emulsifying and stabilizing capacity, particularly at concentrations above 0.5% w/w. During duodenal digestion, CM emulsions showed significant lower fatty acid release (21-25%) compared to mixed β-lg-CM (84-91%) and β-lg (100%) emulsions, corresponding to an approximate 75-80% reduction in lipolysis relative to t
