Comparative microbiome profiling of plant- and animal-derived traditional fermented foods from Mizoram, India using full-length 16S rRNA sequencing.

Traditional fermented foods represent complex microbial ecosystems shaped by substrate composition, indigenous processing practices, and local environmental conditions. However, the microbiomes of many traditional fermented foods from Northeast India remain poorly characterized. In this study, the bacterial communities associated with thirteen traditional fermented foods from Mizoram, India, representing both plant- and animal-derived fermentations, were characterized using full-length 16S rRNA gene sequencing on the Oxford Nanopore platform. Sequencing generated approximately 1.94 million hig

Fermentation of plant-based foods: Microbial consortia and their impacts on composition, sensory quality, and health benefits of food products.

Fermented plant-based foods have obtained growing interests for their improved nutrition profile, enhanced flavor and taste, as well as their health-promoting properties. Fermentation using lactic acid bacteria (LAB) and yeasts can eliminate antinutritional components and off-flavor compounds present in plant matrices while also generating beneficial metabolites. The interaction between fermentative microbes and plant substrates is dependent on plant matrices, microbial strains, and processing conditions. Accumulating evidence indicates that fermentation modifies the generation, degradation, a

Healthy Nutrition and Fermented Animal-Sourced Foods as a Complementary One Health Strategy: Effects on Foodborne Pathogens and Intestinal Host Defense.

Foodborne diseases remain a major global public health challenge at the interface of human, animal, and environmental health, emphasizing the need for integrated preventive strategies within the One Health framework. Although animal-sourced foods (ASFs) are essential components of human nutrition, they also serve as important reservoirs and transmission vehicles for foodborne pathogens. Conventional food safety interventions primarily target microbial contamination within food systems but often fail to adequately address host susceptibility, intestinal resilience, and microbiota-mediated defen

Metabolite-Pool Networks and Biological-Non-Enzymatic Synergy in Volatile Flavor Formation by Lactic Acid Bacteria in Fermented Foods: A Review.

Volatile flavor compounds (VFCs) are major determinants of sensory quality in fermented foods. In lactic acid bacteria (LAB)-containing systems, their formation reflects precursor metabolism, strain-specific metabolic capacity, environmental and community regulation, and non-enzymatic chemistry. This review develops an integrated precursor-pool-flux framework for LAB-associated VFC formation. Carbohydrate/citrate-, protein/amino-acid-, and lipid-related routes provide the principal precursor inputs, which intersect to different extents at three functional metabolite pools centered on α-keto ac

Production, purification, and functional properties of microbial fibrinolytic enzymes produced by microorganism obtained from soy-based fermented foods: developments and challenges.

According to the World Health Organization, cardiovascular disease (CVD) has become a major cause of chronic illness around the globe. It has been reported that soy-based fermented food (SFF) is very effective in preventing thrombus (one of the most important contributing factors to CVD), which are mainly attributed to the bioactive substances, especially the fibrinolytic enzymes (FE) generated by microorganisms during the fermentation process of soybean food. This paper therefore mainly reviewed the microbial fibrinolytic enzymes (MFE) from SFF. We first discuss the use of microbial fermentat

Fermentation of food and feed: A technology for efficient utilization of macro and trace elements in monogastrics.

Mineral deficiencies, especially of iron, zinc, and calcium, respectively, negatively affect human health and may lead to conditions such as iron deficiency anemia, rickets, osteoporosis, and diseases of the immune system. Cereal grains and legumes are of global importance in nutrition of monogastrics (humans and the respective domestic animals) and provide high amounts of several minerals, e.g., iron, zinc, and calcium. Nevertheless, their bioavailability is low. Plants contain phytates, the salts of phytic acid, chemically known as inositol-hexakisphosphate, which interact with several miner

Use of Schizosaccharomyces strains for wine fermentation-Effect on the wine composition and food safety.

Schizosaccharomyces was initially considered as a spoilage yeast because of the production of undesirable metabolites such as acetic acid, hydrogen sulfide, or acetaldehyde, but it currently seems to be of great value in enology.o ced Nevertheless, Schizosaccharomyces can reduce all of the malic acid in must, leading to malolactic fermentation. Malolactic fermentation is a highly complicated process in enology and leads to a higher concentration of biogenic amines, so the use of Schizosaccharomyces pombe can be an excellent tool for assuring wine safety. Schizosaccharomyces also has much more

Food production from air: gas precision fermentation with hydrogen-oxidising bacteria.

The breach of six planetary boundaries highlights the need for sustainable food production. Aerobic hydrogen-oxidising bacteria (HOBs) convert atmospheric CO2 and green hydrogen (H2) into biomass via gas fermentation, a process already used for food-grade single-cell protein production. This approach enables a supply chain independent of agriculture, requiring minimal land and water, with potential for carbon-neutral production and carbon capture. To expand beyond single-cell protein, HOBs must be engineered into cell factories for precision fermentation. Advances in synthetic biology, metabol
