Risk of Gluten Cross-Contamination Due to Food Handling Practices: A Mini-Review.

Celiac disease (CD) is an autoimmune disease triggered by the ingestion of gluten in genetically predisposed individuals, affecting 1.4% of the world population. CD induces an inflammatory reaction that compromises small intestine villi, leading to nutrient malabsorption, and gastro and extraintestinal manifestations. Although other treatment approaches are being studied, adherence to a gluten-free diet (GFD) is the only effective intervention to date. Despite this, about 50% of patients experience persistent inflammation, often associated with unintentional gluten ingestion through contaminat

Dietary alcohol exacerbates the hepatotoxicity induced by pyrrolizidine alkaloids: Hazard from food contamination.

Pyrrolizidine alkaloids (PAs) are the most common plant-derived toxins with emerging evidence to contaminate soil, water, nearby plants and derived food products. Outbreaks of human poisoning cases, due to the ingestion of PA-contaminated food, have been reported in various countries including Ethiopia. This study first investigated the contamination of PAs in retail honey in Ethiopia. A striking 77% of honey samples (27/30) were found to contain PAs with the content ranging over 1.5-323.4 μg/kg. Notably, these PAs were also found as contaminants in mead, an alcoholic beverage made from local

Beyond targeted PFAS: contamination patterns and trophic dynamics in an estuarine food web.

Over the past decade, emerging per- and polyfluoroalkyl substances (PFAS) have been increasingly reported in aquatic environments. Still, the environmental behavior of numerous emerging PFAS remains poorly understood. This study investigated trophic dynamics and contamination patterns of both legacy and emerging PFAS revealed by HRMS, in the food web of common sole (benthic) and European sea bass (demersal). Overall, 14 estuarine species collected in the Seine Estuary (France) were studied, including zooplankton, polychaetes, shellfish, crustaceans and fish. Through suspect screening, 92 PFAS

Shiga toxin-producing Escherichia coli, food contamination, and bacteriophages as a control strategy.

SUMMARYShiga toxin-producing Escherichia coli (STEC) strains cause diarrhea, hemorrhagic colitis, and hemolytic uremic syndrome (HUS) in humans. HUS is a severe systemic illness that can affect individuals of all ages, especially children. There is no specific treatment for HUS, and interventions consist of supportive therapy. STEC infections occur worldwide, and severe illness may occur in sporadic cases or outbreaks. In 2023, STEC was the third most frequently reported zoonotic agent detected in foodborne outbreaks in the EU. In this manuscript, we have focused on STEC reservoirs, STEC conta

Poultry Food Assess Risk Model for Salmonella and Chicken Gizzards: I. Initial Contamination.

The Poultry Food Assess Risk Model (PFARM) project was initiated in 1995 to develop data collection and modeling methods for simulating the risk of salmonellosis from poultry food produced by individual production chains. In the present study, the Initial Contamination (IC) step of PFARM for Salmonella and chicken gizzards (CG) was conducted as a case study. Salmonella prevalence (Pr), number (N), and serotype/zoonotic potential (ZP) data (n = 100) for one sample size (56 g) of CG were collected at meal preparation (MP), and then Monte Carlo simulation (MCS) was used to obtain data for other s

Maternal Supplementation of Food Ingredient (Prebiotic) or Food Contaminant (Mycotoxin) Influences Mucosal Immune System in Piglets.

The early life period is crucial for the maturation of the intestinal barrier, its immune system, and a life-long beneficial host-microbiota interaction. The study aims to assess the impact of a beneficial dietary (short-chain fructooligosaccharides, scFOS) supplementation vs. a detrimental dietary environment (such as mycotoxin deoxynivalenol, DON) on offspring intestinal immune system developmental profiles. Sows were given scFOS-supplemented or DON-contaminated diets during the last 4 weeks of gestation, whereas force-feeding piglets with DON was performed during the first week of offspring

From Food Additives and Contaminants to the Human Exposome: A Precision Toxicology Framework for Next-Generation Food Safety.

Human exposure to foodborne xenobiotics, including environmental contaminants that enter the food chain, is no longer adequately represented by isolated chemicals. Individuals encounter complex and dynamic mixtures of food additives, pesticide residues, veterinary drugs, mycotoxins, processing contaminants, packaging migrants, environmental pollutants, and other dietary chemicals that interact with genetics, metabolism, the gut microbiome, nutritional status, and lifestyle throughout life. The dietary exposome therefore represents a critical interface linking food contaminants, internal chemic

Coccidiostats in animal production: residue depletion, and cross-contamination in the feed-food chain.

Coccidiostats are used in animal production to control infections caused by Eimeria spp., particularly in poultry. While these compounds are effective in preventing coccidiosis and maintaining production efficiency, their use raises concerns regarding the occurrence of residues in the feed-food chain. This review summarises current knowledge on residue occurrence, transfer to food of animal origin, and depletion of coccidiostats following authorised use. Special attention is given to cross-contamination during feed manufacturing, which represents one of the sources of unintended exposure of no

Mutagenic and cellular integrity disruptions in freshwater food fish exposed to mercuric chloride contamination.

Mercuric chloride (HgCl2) contamination in aquatic environments poses significant threats to aquatic life, disrupting cellular functions and overall organism health. The impact of sublethal concentrations of HgCl2 on the freshwater food fish Channa punctatus was examined in this 60-day study, with an emphasis on cellular and molecular reactions, specifically DNA damage and the related signaling pathways. A total of 135 fish were distributed among 3 groups and exposed to sublethal concentrations of HgCl2 at 0.0 (group I), 0.039 (group II), and 0.078 mg L-1 (group III). Elevated DNA damage was o

Use of natural peptide TP4 as a food preservative prevents contamination by fungal pathogens.

Molecules of natural origin often possess useful biological activities. For instance, the natural peptide Tilapia Piscidin 4 (TP4) exhibits potent antimicrobial activity against a broad spectrum of pathogens. In this study, we explored the potential application of TP4 as a food preservative, asking whether it can prevent spoilage due to microbial contamination. A preliminary in silico analysis indicated that TP4 should interact strongly with fungal cell membrane components. Hence, we tested the activity of TP4 toward Candida albicans within fruit juice and found that the addition of TP4 could

Characterizing the heterogeneous contamination of commercial paper and board food packaging at different scales.

Assessing the contamination of paper and board (P&B) food packaging materials poses significant challenges due to the sensitivity limits of analytical methods and the low precision of sampling processes. This study aims to enhance the understanding of P&B food packaging contamination by investigating the distribution of contaminants at different scales using a combination of chromatographic and spectroscopic techniques. A total of 36 substances were targeted, including phthalates, photoinitiators, and bisphenol A. Key findings reveal that intra-packaging variability can lead to concentration v

Celiac Disease: Risks of Cross-Contamination and Strategies for Gluten Removal in Food Environments.

Celiac disease (CD) is the chronic immune-mediated enteropathy of the small bowel, manifesting when exposure to gluten occurs in genetically predisposed individuals. Nowadays, the only treatment considered safe for CD is a gluten-free diet (GFD). However, one of the problems faced by celiac patients is the cross-contamination of gluten-free food when preparing meals, in addition to utensils, surfaces and equipment. This study aimed to evaluate cross-contamination in gluten-free products and strategies for removing gluten from cross-contamination in cooking environments. The selection of papers

Microbial Contamination in the Coffee Industry: An Occupational Menace besides a Food Safety Concern?

Respiratory abnormalities among workers at coffee roasting and packaging facilities have already been reported; however, little is known about microbiological contamination inside coffee production facilities. This study intends to assess the microbial contamination (fungi and bacteria) in two coffee industries from Brazil with a multi-approach protocol for sampling and for subsequent analyses using four main sources of samples: filtering respiratory protection devices (FRPD) used by workers, settled dust, electrostatic dust cloths (EDC) and coffee beans. The fungal contamination in the assess
