Gelatin films from wastes: A review of production, characterization, and application trends in food preservation and agriculture.

Gelatin is the product resulting from collagen denaturation, which, in addition to conventional sources of extraction, can be recovered from wastes and byproducts rich in collagen widely generated by the industrial activities of poultry and cattle slaughterhouses and the fishing industry. Given the properties of good film-forming ability, nontoxicity, and biocompatibility for the addition of other compounds to obtain composite materials, gelatin is a potential polymer for the production of biodegradable films and, if extracted from waste sources, can contribute to the reduction of environmenta

Effects of sodium benzoate, a widely used food preservative, on glucose homeostasis and metabolic profiles in humans.

Sodium benzoate is a widely used preservative found in many foods and soft drinks. It is metabolized within mitochondria to produce hippurate, which is then cleared by the kidneys. We previously reported that ingestion of sodium benzoate at the generally regarded as safe (GRAS) dose leads to a robust excursion in the plasma hippurate level [1]. Since previous reports demonstrated adverse effects of benzoate and hippurate on glucose homeostasis in cells and in animal models, we hypothesized that benzoate might represent a widespread and underappreciated diabetogenic dietary exposure in humans.

Deep eutectic solvent served as extractant and bio-activity enhancer: applications on curcuminoids extraction and food preservation.

Deep eutectic solvents (DESs) from matrine and caprylic acid were constructed herein and used to extract curcuminoids from Curcuma longa. The DESs displayed excellent extraction efficiency that can be comparable to those with commonly used harmful organic solvents. The curcuminoids possessed high stability in the extract, which provided good anti-oxidant ability. Moreover, the extract was further used without any separation or purification process to develop biofilm that showed excellent anti-bacterial ability against E. coli and S. aureus, which was resulted from both components of DES. Sulfur Dioxide in Food: A Review of Its Preservative Mechanisms, Safety Concerns, and the Rise of Smart Detection Systems.

Sulfur dioxide (SO2) remains an indispensable food preservative, yet balancing preservation efficacy with residue safety continues to challenge both industry and regulators. The difficulty arises from the diverse chemical forms, dynamic release, and uneven distribution of SO2 in food matrices and package headspace, which hinder real-time monitoring and precise control. While progress has been made in preservation techniques, detection methods, and smart sensors, an integrated framework that unifies these threads to elucidate SO2 dynamics in complex food systems is still absent. This review pro

The use of the bacteriocin, nisin, as a preservative in ricotta-type cheeses to control the food-borne pathogen Listeria monocytogenes.

The efficacy of nisin to control the food-borne pathogen Listeria monocytogenes in ricotta-type cheeses over long storage (70 d) at 6-8 degrees C was determined. Cheeses were prepared from unpasteurized milk by direct acidification with acetic acid (final pH 5.9) and/or calcium chloride addition during heat treatment. Nisin was added in the commercial form of Nisaplin pre-production to the milk. Each batch of cheese was inoculated with 10(2)-10(3) cfu g-1 of a five-strain cocktail of L. monocytogenes before storage. Shelf-life analysis demonstrated that incorporation of nisin at a level of 2.5

Octenyl succinic anhydride starch-lemon essential oil coatings with superior preservative effects on fresh foods.

Starch-based coatings that incorporate active agents have potential to prolong the shelf-life of fresh foods. In this study, coatings made from maize or pea starches modified by octenyl succinic anhydride (OSA) esterification and incorporating lemon essential oil (LEO) are shown to have better preservative effects for fresh foods than coatings made from the unmodified starches. OSA esterification enhanced the stability of dispersion of LEO in starch emulsions, thereby facilitating the formation of starch-LEO films with better morphology. Starch-LEO inclusion complexes were formed in the prepar

Applications of Hydrogel and Aerogel Absorbent Pads in Food Packaging: From Exudate Management to Active and Intelligent Preservation.

Absorbent pads are important materials for regulating exudate and local microenvironments in the packaging of high-moisture perishable foods. However, conventional absorbent pads often suffer from limited functionality, insufficient liquid retention, and a lack of active responsiveness. Hydrogels and aerogels, with tunable three-dimensional polymer networks, provide an important material basis for the design of new functional absorbent pads. This review focuses on the relationships among structure, function, and application, and compares hydrogels and aerogels in terms of network composition,

Synergistic effect of greenly synthesized nanoparticles embedded in molecular imprinted polymer for the detection of food preservative: Formalin.

We report a neoteric study that accentuates the effectiveness of substrate-less molecular imprinted polymer (MIP) block acting as probe in detecting a carcinogenic food preservative, formalin (FOL). FOL is generally mixed with consumable products to increase their shelf-life. However, its ingestion has exposed human health to severe illnesses, comparable to chronic cancer. Present study demonstrates FOL detection through phenomenon of localized surface plasmon resonance (LSPR) alongside MIP. The LSPR spectra arising from the attributes of embedded NP's are recorded to characterize the MIP prob

Cationic porphyrin covalent organic framework reinforced hydroxypropyl methylcellulose films for photodynamic-photothermal sterilization and food preservation.

Microbial contamination in food necessitates effective antimicrobial packaging. While cellulose-based packaging materials suffer from limited antimicrobial efficacy, lack of active functionality, and susceptibility to inducing microbial resistance. To address these challenges, this study synthesized a cationic porphyrin-based covalent organic framework (Por-ICOF) as a multimodal photosensitizer. Por-ICOF was uniformly dispersed via non-covalent interaction within hydroxypropyl methylcellulose (HPMC), creating an HPMC/Por-ICOF composite film. This integration enhanced mechanical strength (incre
