Screening and application of high-folate-producing lactic acid bacteria in yogurt products.

Folate is a vital micronutrient that cannot be endogenously produced by the human body, necessitating dietary intake to support critical physiological functions. The objectives of this research were to isolate and select lactic acid bacteria (LAB) strains with high folate-producing capabilities, evaluate their probiotic properties and safety, and optimize fermentation conditions for high-folate dairy products. Lactiplantibacillus plantarum ZJUIDS16 (ZJUIDS16), isolated from a laboratory strain collection, produced 27.16 μg/mL of folate. Whole-genome sequencing revealed its folate biosynthesis

Multi Omics Analysis Reveals That Compound Radix Pulsatillae and Lactic Acid Bacteria Reprogram the Microbiome Metabolome Network in Oat Silage.

Oat (Avena sativa L.) silage fermentation often fails due to insufficient lactic acid bacteria (LAB) and low water-soluble carbohydrate content. We investigated the effects of Compound Radix Pulsatillae (CRP; 40 g/kg FM) alone or combined with a commercial LAB inoculant (containing L. plantarum, L. buchneri, and Enterococcus faecium, CRP_LA) on oat silage after 60 days. Compared to control (CK), both CRP and CRP_LA increased dry matter and water-soluble carbohydrate retention while reducing fiber components and ammonia nitrogen (p < 0.05). CRP_LA exhibited superior fermentation quality (lowest

Evaluation of Probiotic Properties and Antimicrobial Substances Produced by Five Lactic Acid Bacteria Against Foodborne and Spoilage Pathogens.

The rise of multidrug-resistant (MDR) pathogens presents a major challenge to food safety, particularly in preservation approaches. Lactic acid bacteria (LAB) gain probiotic recognition by effectively controlling MDR pathogens using antimicrobial substances (AMSs) and bacteriocin-like inhibitory substances (BLISs). The study evaluated the probiotic properties and AMS production potential of five LAB strains: Lactiplantibacillus plantarum NBRC 3070 (LP), Lactobacillus acidophilus ATCC 4356 (LA), Lacticaseibacillus casei ATCC 393 (LC), Lacticaseibacillus rhamnosus GG ATCC 53103 (LGG), and Bifido

Effects of lactic acid bacteria-fermented formula milk supplementation on colonic microbiota and mucosal transcriptome profile of weaned piglets.

Supplemental probiotic fermented milk as a gut modulator can improve growth performance for weaned piglets by promoting the development of the small intestine in digestion and immune function. The effect on colon health might also play a considerable part in the favourable role of probiotic fermented milk in the growth performance improvement of weaned piglets; however, it has yet to be reported. This study aimed to investigate the effects of supplementation with lactic acid bacteria-fermented formula milk (LFM) on colonic morphology, microbiota composition, and mucosal transcriptome profile i

Orally administered Lactiplantibacillus plantarum OLL2712 decreased intestinal permeability, especially in the ileum: Ingested lactic acid bacteria alleviated obesity-induced inflammation by collaborating with gut microbiota.

INTRODUCTION: Chronic inflammation caused by dietary obesity has been considered to induce lifestyle-related diseases and functional ingredients with anti-inflammatory effects are attracting attention. Although multiple studies on obesity had proved the anti-inflammatory effects of ingestion of lactic acid bacteria (LAB) and other functional ingredients on adipose tissue, the precise effects on the intestine, especially on the individual intestinal segments have not been made clear. In this study, we elucidated the mechanisms of Lactiplantibacillus plantarum (basonym: Lactobacillus plantarum)

Multiple Probiotic Lactic Acid Bacteria with Marked Cholesterol-Lowering Effects Were Discovered in Equine Colostrum.

Xinjiang ranks among the key domestication origins of horses. Local nomadic ethnic groups have a long-standing tradition of consuming equine dairy products, which endows mare-derived dairy matrices with abundant, distinctive and scarce probiotic resources. Equine colostrum is rich in immunoglobulins and growth factors; nevertheless, its pharmacological activities and micro-ecological composition remain poorly characterized. This study aimed to isolate and screen native strains with cholesterol-lowering potential from Xinjiang equine colostrum and conduct a preliminary investigation into their

From fungi to lactic acid bacteria: Dominant microorganisms govern stage-specific esters biosynthesis in pit microecology of strong-flavor baijiu.

Esters are vital flavor compounds in strong-flavor baijiu (SFB). However, their biosynthetic mechanisms during pit fermentation are not fully understood. This study employed integrated metagenomic and metabolomic analyses to investigate stage-specific microecological dynamics governing ester biosynthesis and identified three distinct fermentation stages. Stage P1 (days 0-15) featured initial ester accumulation driven by fungal dominance (e.g., Saccharomyces, Aspergillus, and Rhizopus) and high α-diversity. Elevated esterase (EST) genes mainly involved to the ethyl acetate and ethyl butyrate sy

Lactic acid bacteria-derived γ-linolenic acid metabolites are PPARδ ligands that reduce lipid accumulation in human intestinal organoids.

Gut microbiota regulate physiological functions in various hosts, such as energy metabolism and immunity. Lactic acid bacteria, including Lactobacillus plantarum, have a specific polyunsaturated fatty acid saturation metabolism that generates multiple fatty acid species, such as hydroxy fatty acids, oxo fatty acids, conjugated fatty acids, and trans-fatty acids. How these bacterial metabolites impact host physiology is not fully understood. Here, we investigated the ligand activity of lactic acid bacteria-produced fatty acids in relation to nuclear hormone receptors expressed in the small inte
