Water-in-water emulsion stabilized by cellulose nanocrystals and their high enrichment effect on probiotic bacteria.

HYPOTHESIS: The effect of the molecular weight and polymer concentration on the partition behavior of aqueous two-phase systems (ATPs) is significant for constructing water-in-water (W/W) emulsions. Hence, a long-term stable W/W emulsion system might be obtained through selecting the appropriate stabilizer and component phases, which could be a possible carrier for probiotics. EXPERIMENTS: Compared with the reported molecular weight difference between polyethylene oxide (PEO) and dextran (DEX) systems, PEO and dextran with lower molecular weight had been used for constructing the water in wat

New potentially antihypertensive peptides liberated in milk during fermentation with selected lactic acid bacteria and kombucha cultures.

Compounds with the ability to inhibit angiotensin-converting enzyme (ACE) are used medically to treat human hypertension. The presence of such compounds naturally in food is potentially useful for treating the disease state. The goal of this study was to screen lactic acid bacteria, including species commonly used as dairy starter cultures, for the ability to produce new potent ACE-inhibiting peptides during milk fermentation. Strains of Lactobacillus acidophilus, Lactobacillus casei, Lactobacillus delbrueckii ssp. bulgaricus, Lactobacillus helveticus, Lactobacillus paracasei, Lactococcus lact

Analytical Mapping of Swiss Hard Cheese to Highlight the Distribution of Volatile Compounds, Aroma, and Microbiota.

Cheese is one of the most consumed fermented animal-based products globally, rendering its quality assessment and evaluation of substantial economic interest. Understanding the degree of cheese homogeneity is paramount for designing effective sampling strategies, yet this information is largely lacking. This study investigates the homogeneity of a cheese wheel based on the distribution of volatile compounds, microbiota, sodium chloride content, and pH, combined with sensory analyses. The outer zones of the cheese wheel were primarily characterized by the presence of sulfur compounds, esters, p

Preventive role of probiotic bacteria against gastrointestinal diseases in mice caused by Giardia lamblia.

Giardiasis is one of the most prevalent gastrointestinal diseases in the world. It is caused by Giardia, Giardia lamblia, a common and opportunistic zoonotic parasite. The aim of our work is to find a natural and safe alternative treatment for giardiasis, specifically, to determine if probiotic bacteria (Lactobacillus acidophilus, Bifidobacterium bifidum, and Lactobacillus helveticus) can contribute to treatment, and act as preventives. Sixty weanling albino mice, Mus musculus, were divided into control and experimental, probiotic-fed groups. We determined infection intensity, and cure and pre

Identification of Lactobacillus species using tDNA-PCR.

tDNA intergenic spacer PCR (tDNA-PCR) using consensus primers complementary to the conserved edges of the tRNA genes can amplify the intergenic spacers. Separation of the PCR products with capillary electrophoresis enables discrimination between fragments differing only one basepair in length. This method was applied to a collection of 82 Lactobacillus strains belonging to 37 species in order to evaluate the discriminatory power of this technique within this genus. Twenty-one species could be distinguished to species level on the basis of a unique tDNA fingerprint pattern. The other species gr

VagiBIOM Lactobacillus suppository improves vaginal health index in perimenopausal women with bacterial vaginosis: a randomized control trial.

Bacterial vaginosis (BV) can cause vaginal dysbiosis that may influence general vaginal health and pregnancy complications. Balancing vaginal microbiome using Lactobacillus spp. may be a new way to prevent and treat mild BV. We conducted a randomized, double-blind, placebo-controlled pilot study aimed at evaluating the effect of the product VagiBIOM, a multi-Lactobacillus vaginal suppository, on peri- and premenopausal women with BV in restoring vaginal pH and overall vaginal health by resetting the vaginal microbiome composition. Sixty-six peri- and premenopausal women with BV symptoms were r

Novel Lactobacillus Strains Alleviate E. coli-induced Inflammation in a Urinary Tract Infection Rat Model.

Urinary tract infections (UTIs) are common bacterial infections that are predominantly caused by uropathogenic Escherichia coli. Chronic recurrence of UTIs, particularly in women, seriously affects the quality of life of infected individuals. Antibiotics are still the first-line treatment for UTIs; however, side effects and increasing antibiotic resistance emphasize the need for alternative therapies. In this study, we explored the in vitro and in vivo anti-E. coli effects of heat-inactivated Lactobacillus helveticus GUT10, L. salivarius HHuMin-U, and their combination. In lipopolysaccharide (
