The interaction between lipid oxidation and the Maillard reaction model of lysine-glucose on aroma formation in fragrant sesame oil.

The formation mechanism behind the sophisticated aromas of sesame oil (SO) has not been elucidated. The interaction effects of the Maillard reaction (MR) and lipid oxidation on the aroma formation of fragrant sesame oil were investigated in model reaction systems made of l-lysine (Lys) and d-glucose (Glc) with or without fresh SO (FSO) or oxidized SO (OSO). The addition of OSO to the Lys-Glc model increased the MR browning at 294 nm and 420 nm and enhanced the DPPH radical scavenging activity greater than the addition of FSO (p < 0.05). The presence of lysine and glucose inhibited the oxidatio

Impact of Maillard reaction products on nutrition and health: Current knowledge and need to understand their fate in the human digestive system.

The Maillard Reaction (MR) is a non-enzymatic chemical reaction which results in the linkage between the amino group of amino acids and the carbonyl group of reduced sugars. MR products (MRPs) are common components of processed foods, mainly as a result of heating, especially in the Western diet. MRPs are classified as into three stages: initial, intermediate, and final stages, indicative of increased complexity and size, incurring different flavor, aroma, and texture. MRPs presence is known to reduce the nutritional quality of foods, particularly by reducing protein digestibility. Early repor

Protection effect of lutein-loaded Pickering emulsion prepared via ultrasound-assisted Maillard reaction conjugates on dry age-related macular degeneration.

Age-related macular degeneration (AMD) is a prominent cause of vision loss among the elderly, and the treatment options for dry AMD (dAMD) are severely limited. Lutein has a favorable effect on the treatment of dAMD. Algae oil, rich in docosahexaenoic acid (DHA), is considered an effective intervention for eye diseases. In this study, casein-mannose conjugates were prepared to form algal oil-in-water Pickering emulsions by ultrasound-assisted Maillard reaction. As the ultrasound time increased from 0 to 25 min, the droplet size decreased to 648.2 ± 21.18 nm, which substantially improved the st

Maillard reaction of heme protein hydrolysate and xylose: A strategy for improving protein solubility, umami taste, and texture in plant-based patties.

The Maillard reaction generates key flavor compounds that enhance the palatability and overall quality of plant-based meats (PBMs). We utilized the Maillard reaction on heme protein hydrolysate (HH) to improve functionality and diversify flavor while maintaining its meat-like bloody taste. The optimized condition was an HH-xylose ratio of 2:1, heated for 6 h at 80 °C. Three samples were compared: HH, HH-xylose mixture (HHX), and HH-xylose Maillard reaction product (MHHX). MHHX exhibited higher grafting degree and browning intensity, along with stable structural modifications. MHHX improved pro

Mannose Glycation of Tumor-Associated Antigens via Intratumoral Maillard Reaction Mediated by a Photothermal Nano-Catalyst for Enhanced Antigen-Presenting Cell Targeting.

Immunogenic cell death (ICD) represents a classical pathway for generating personalized anticancer vaccines in situ. However, the poor immunogenicity of released tumor-associated protein antigens (TAAs) remains a major limitation to their therapeutic efficacy. Herein, we developed mannose-loaded hollow polydopamine nanoparticles (Man@HDA-Pd) and proposed intratumoral-Maillard reaction as a new strategy for the glycation of TAAs. The local administration of as-prepared Man@HDA-Pd could efficiently induce ICD effects, leading to the release of abundant TAAs. Furthermore, leveraging the photother

Anti-oxidant activity of 1-(1H-imidazo[4,5-c]pyridin-4-yl)ethenone, a Maillard reaction product derived from fructose and histidine.

BACKGROUND: The Maillard reaction involves the interaction of various amino acids and reducing sugars, resulting in food browning. It often produces appealing aromas and flavors. The complexities of the reaction are such that it can be challenging to identify the often numerous and frequently volatile products formed by it. In the present study, we sought to identify and evaluate an unusual product with anti-oxidant activity arising from a fructose-histidine Maillard reaction model. The anti-oxidant profile of this product was assessed by computational means. RESULTS: The fructose-histidine M

The alleviating effects of vitamin B6 and choline on β-lactoglobulin Maillard reaction: Insight into the mechanisms via mass spectrometry and interaction analysis.

This study investigated the inhibition effects of vitamin B6 (VB6) and choline on β-lactoglobulin (β-Lg) Maillard reaction by characterizing reaction indicators, structural alterations, glycation sites, and intermolecular interactions. The results indicated that lactose-induced glycation led to a reduction in the free amino group content of β-Lg and promoted the formation of advanced glycation end products (AGEs). With VB6 and choline supplementation, the content of free amino groups increased by 1.5-fold and 0.7-fold, respectively, while the inhibition rates of AGEs reached 28.28% and 7.42%.

Role of the Maillard reaction products of oyster peptides and chitosan oligosaccharide in chelation with zinc: restoring testicular injury and the testosterone synthesis pathway.

In this study, an oyster peptide-chitosan oligosaccharide complex (MOC) was prepared via the Maillard reaction (1.2 : 1, 90 °C, 5 h), followed by zinc chelation (30 °C, 30 min) to form MOCZn, achieving 84.5% zinc-binding capacity. Characterization revealed that MOCZn had a compact secondary structure, increased particle size (1338-1971 nm), improved thermal stability, and attenuated zinc crystal peaks. In vitro digestion showed high stability (soluble zinc: 2.17 mg L-1). In zinc-deficient mice, MOCZn increased body weight, restored organ indices, and elevated serum zinc. A medium dose normaliz

The synergistic evolution of structural characteristics and interfacial behavior in the Maillard reaction process regulated the emulsifying properties of flaxseed globulin-flaxseed gum conjugates.

Flaxseed globulin (FG), the predominant protein in flaxseed, exhibits suboptimal emulsifying properties that limit its food applications. The Maillard-driven glycation with polysaccharides offers a promising strategy to enhance protein functionality. This study elucidated the dynamic structural changes, interfacial behavior, and emulsifying properties of flaxseed globulin (FG)-flaxseed gum (FSG) conjugates. Covalent grafting between FG and FSG was confirmed by grafting degree and SDS-PAGE. The conjugates exhibited reduced particle size (206.33 ± 3.86 nm), increased absolute zeta potential (25.
