Emulsion characteristics, chemical and textural properties of meat systems produced with double emulsions as beef fat replacers.

In recent years, double emulsions are stated to have a promising potential in low-fat food production, however, there are very few studies on their possible applications in meat matrices. We aimed to investigate the quality of beef emulsion systems in which beef fat was totally replaced by double emulsions (W1/O/W2) prepared with olive oil and sodium caseinate (SC) by two-step emulsification procedure. Incorporation of W1/O/W2 emulsion resulted in reduced lipid, increased protein content, and modified fatty acid composition. W1/O/W2 emulsion treatments had lower jelly and fat separation, highe

Dietary transitions to plant-based meat and milk alternatives and their impact on mycotoxin exposure: A risk profiling study in Italy and the UK.

The aim of this study was to evaluate how transitioning to plant-based meat alternatives (PBMAs) and plant-based beverages (PBBs) contributes to mycotoxin exposure among Italian and British consumers. We retrieved mycotoxin occurrence data from 413 PBMAs and PBBs from the Italian and British markets and combined them with age-specific modelling. The targeted mycotoxins were aflatoxin B1, aflatoxin B2, aflatoxin G1, aflatoxin G2, fumonisin B1, fumonisin B2, HT-2, T-2, ochratoxin A, zearalenone, deoxynivalenol, alternariol, alternariol monomethyl ether, tentoxin, enniatin B, enniatin B1, enniati

Preventing potential pitfalls of a liberalized potassium diet in the hemodialysis population.

Emerging research suggests that a more liberalized diet, specifically a more plant-based diet resulting in liberalization of potassium intake, for people receiving hemodialysis is necessary and the benefits outweigh previously thought risks. If the prescribed hemodialysis diet is to be liberalized, the need to illuminate and prevent potential pitfalls of a liberalized potassium diet is warranted. This paper explores such topics as partial to full adherence to a liberalized diet and its consequences if any, the advantages of a high-fiber intake, the theoretical risk of anemia when consuming a m

Energy consumption and quality improvement of frozen pork using NaCl refrigerant with three amino acids in contact immersion freezing.

Maintaining low-energy consumption and improving the quality of frozen pork contribute to the sustainability of the meat industry. This study used a 23.5 % sodium chloride (NaCl) solution as the control refrigerant (NIF). It investigated the effects of substituting 10 % of NaCl in the refrigerant with three amino acids (l-lysine, l-proline, or l-arginine) on energy consumption and pork quality improvement in contact immersion freezing. Results indicated that l-proline among three amino acids could mitigate the increase in specific heat capacity, the decrease in thermal conductivity, and the un

Milk production and composition responses to the source of protein supplements in diets containing wheat middlings.

Two 3 x 3 Latin square trials were conducted to determine the effect of the source of supplemental protein in diets containing wheat middlings on milk production and composition. Cottonseed meal or meat and bone meal was substituted for a portion of the soybean meal and provided 24.5% of the total dietary crude protein. Trial 1 was conducted during fall 1989, and trial 2 was conducted during summer 1993. During trial 1, no differences in production or composition of milk were found for primiparous cows fed the various protein supplements. Multiparous cows tended to have higher dry matter intak

Health co-benefits of sustainable dietary transitions to reduced red and processed meat intake in the United Kingdom: a modelling study.

PURPOSE: Reducing meat intake and increasing plant-based food consumption are priorities for chronic disease prevention and environmental sustainability across Europe. Previous modelling has outlined how policy interventions could shift dietary patterns to align with meat reduction targets, but the resulting health impacts remain unexplored. METHODS: We quantified the projected health impacts of the UK Climate Change Committee's (CCC) dietary targets-a 35% or 50% reduction in meat consumption-focusing on red and processed meat and substitution with vegetables and legumes, on incidence and mor

Innovation-related perception as a key driver of alternative protein acceptance: evidence from an early-stage model for cultivated meat and algae-/microalgae-based alternative protein products in Italy.

Alternative proteins are increasingly considered part of the transition toward more sustainable food systems, yet their diffusion depends critically on consumer acceptance. This study investigates the early-stage acceptance of two alternative protein categories in Italy-cultivated meat and algae-/microalgae-based alternative protein products. Focusing on the first three phases of acceptance, the analysis examines how innovation-related perception (IRP) shapes consumer perceived value (CPV), consumer perceived risk (CPR), and subsequent affective (AFF), cognitive (COG), and conative (CON) respo

Effects of salt mixtures on in vitro digestion of sodium-substituted myofibrillar protein gel: Disintegration and gastric juice diffusion.

The effects of salt mixtures on the in vitro gastric digestion, disintegration, and gastric juice diffusion of sodium-substituted myofibrillar protein gels were investigated. The results showed that gel disintegration occurred via surface erosion, with no significant differences in apparent morphology among substitution treatments. However, KCl/CaCl2-substituted gels exhibited preferential early decomposition of soft regions, leaving rigid structures that impeded later digestion. Acid swelling tests and magnetic resonance imaging revealed that the sodium-substituted gels containing CaCl2 had l

Modified Rice Bran Dietary Fiber-Based Pre-Emulsion as a Fat Replacer: Modulating Physicochemical and Sensory Properties of Emulsified Meat Gels.

Polysaccharide-based pre-emulsions offer a promising strategy for reducing saturated fat in emulsified meat products. In this study, a pre-emulsion stabilized by rice bran dietary fiber modified with alkaline hydrogen peroxide (MRF) was used to replace pork back fat in emulsified meat gels. Four model systems were prepared, varying in fat content (20% and 50%) and chopping intensity (low vs. high). MRF pre-emulsion significantly reduced fat globule size (e.g., D[4,3] decreased by 18-34%, D[3,2] by up to 83%) and improved shear stability, as reflected in the weaker frequency dependence of the s

Stem Cells for Cultured Meat: Cell Sources, Lineage Specification, and Biomaterial Scaffolds for Edible Tissue Engineering.

Cultured meat aims to manufacture genuine animal tissue from cells in vitro, displacing the environmental and ethical liabilities of livestock slaughter. Because the final product must reproduce the fibre architecture, fat marbling, and nutrition of conventional meat, the cell-its identity, proliferative ceiling, and differentiation fidelity-is the central determinant of feasibility. This review consolidates the stem cell biology of cultured meat from a tissue engineering perspective. We first compare the principal cell sources: muscle satellite cells, which offer authentic myogenicity but lim

Replacing maize grain with self-fermented agro-waste in total mixed ration improves fatty acid profile, oxidative stability and meat quality traits in goats.

This study evaluated the dietary effect of complete substitution (32%) of maize grain with a self-fermented agro-waste mix (SFAWM) composed of apple pomace, spent mushroom residue, and wheat straw in male Gaddi goats. The study included two treatments viz. Control and SFAWM32 with six animals (3-4 months) per treatment (n = 6). After feeding for 150 days, goats were slaughtered for the determination of carcass yield, meat physico-chemical traits and fatty acid composition. Replacing maize with SFAWM32 reduced daily dry matter intake by 17.8% with comparable average daily gain, resulting in an

In vitro assay to determine inactivation of Toxoplasma gondii in meat samples.

Consumption of raw and undercooked meat is considered as an important source of Toxoplasma gondii infections. However, most non-heated meat products contain salt and additives, which affect T. gondii viability. It was our aim to develop an in vitro method to substitute the mouse bioassay for determining the effect of salting on T. gondii viability. Two sheep were experimentally infected by oral inoculation with 6.5 × 104 oocysts. Grinded meat samples of 50 g were prepared from heart, diaphragm, and four meat cuts. Also, pooled meat samples were either kept untreated (positive control), frozen

Hybrid food design as a way to enhance the nutritional and functional properties of animal-based products.

This chapter examines hybrid food systems as a strategic response to the challenges of rising global protein demand, population aging, environmental constraints, and changing dietary expectations. Hybrid foods, defined as formulations combining animal-derived ingredients with plant, fungal, insect, or other novel protein sources, are presented as a pragmatic pathway to reconcile nutritional adequacy, technological functionality, sustainability, and consumer acceptance within the ongoing protein transition. The chapter reviews the wide range of raw materials used in hybrid food design, emphasiz

Bacterial cellulose-Morchella sextelata mycelium composite disks as scalable, bioactive scaffolds: A promising platform for cultured meat.

Cultured meat, as an emerging method for obtaining protein, is receiving widespread attention. Developing biocompatible, edible scaffolding materials is a critical bottleneck for the industrialization of cultured meat. In this study, we developed a series of microbia-derived, biomass-based composite disk carriers by integrating bacterial cellulose (BC) with mycelium (Myc) from Morchella sextelata via a facile and minimally-processed blend-casting method. This composite is a potential, low-cost alternative to traditional BC-mushroom chitosan (BCMC) carriers in our previous work. Results indicat
