Mercury concentrations in tuna blood and muscle mirror seawater methylmercury in the Western and Central Pacific Ocean.

Understanding the relationship between mercury in seafood and the distribution of oceanic methylmercury is key to understand human mercury exposure. Here, we determined mercury concentrations in muscle and blood of bigeye and yellowfin tunas from the Western and Central Pacific. Results showed similar latitudinal patterns in tuna blood and muscle, indicating that both tissues are good candidates for mercury monitoring. Complementary tuna species analyses indicated species- and tissue- specific mercury patterns, highlighting differences in physiologic processes of mercury uptake and accumulatio

In vitro calcium availability in bakery products fortified with tuna bone powder as a natural calcium source.

Avoidance of dairy products due to lactose intolerance can lead to insufficiency of calcium (Ca) in the body. In an approach to address this problem, tuna bone powder (TBP) was formulated as a calcium supplement to fortify bakery products. In a study, TBP recovered by alkaline treatment contained 38.16 g/100 g of calcium and 23.31 g/100 g of phosphorus. The ratio of Ca:P that was close to 2:1 was hence comparable to that in human bones. The availability of calcium in TBP was 53.93%, which was significantly higher than most calcium salts, tricalcium phosphate (TCP) being the exception. In vitro

Splenic tissue injury and physiological response mechanisms in juvenile yellowfin tuna (Thunnus albacares) under acute cold stress.

Abnormal seawater temperatures driven by global climate change are profoundly disrupting the physiological homeostasis and immune regulation of marine fish. As a warm-blooded pelagic species, yellowfin tuna (Thunnus albacares) possesses partial thermoregulatory capability but still experiences significant physiological stress under abrupt cold exposure. The spleen, a key immune and metabolic organ, is highly sensitive to temperature fluctuations and serves as a critical indicator of cold stress effects. In this study, juvenile yellowfin tuna were subjected to cold stress at 24 °C (LT group) an

Pathologic Description and Genetic Characterisation of Kudoa thunni From Yellowfin Tuna (Thunnus albacares) in the Caribbean Sea.

Yellowfin tuna (Thunnus albacares) is a valuable recreational and commercial species in Grenada and the Caribbean region. Myxozoans, specifically the monotypic Kudoidae family within the Order Multivalvulida, are marine parasitic organisms that can negatively impact fish health and marketability. On 8 September 2023, muscle fillets from a yellowfin tuna caught off the coast of Grenada and containing numerous white nodules were submitted for diagnostic evaluation. Gross examination of the muscle showed firm, spherical to ovoid, white polysporous cysts approx. 0.8-1.3 mm in diameter and approx.

Tuna Dark Muscle Feeding Improved the Meat Quality of Holland Mini-Piglets and Modulated the Gut Microbiota.

Pork is one of the most widely produced and consumed meats in the world, and it is also an important source of animal protein. The continuous rise in feed prices has forced the pig industry to consider adding cost-effective alternative feed to pig diets. In this study, we aimed to explore the beneficial effects of tuna dark muscle as a nutritional supplement on the growth performance, serum lipids and antioxidant levels of Holland mini-piglets, as well as on the odor and volatile substances of pork and the gut microbiota. Two-month-old male mini-piglets (n = 24) were fed a control diet or supp

Angiotensin I-converting enzyme inhibitory peptides produced from tuna cooking juice hydrolysate by continuous enzymatic membrane reactor.

Angiotensin I-converting enzyme (ACE) inhibitory peptides were derived from tuna cooking juice (TCJ) hydrolysis by alcalase in the continuous enzymatic membrane reactor (cEMR) coupling with 1 kDa MWCO membrane. The permeated sample from cEMR for 510 min of hydrolysis was purified by size exclusion chromatography in Sephadex G-25 column. A fraction exhibited the highest ACE inhibitory activity was further separated by RP-HPLC, resulting two fractions showed highest ACE inhibitory activities. The molecular weight (MW) and amino acid sequences of peptides from both fractions were determined using

Mercury Stable Isotopes Reveal Influence of Foraging Depth on Mercury Concentrations and Growth in Pacific Bluefin Tuna.

Pelagic ecosystems are changing due to environmental and anthropogenic forces, with uncertain consequences for the ocean's top predators. Epipelagic and mesopelagic prey resources differ in quality and quantity, but their relative contribution to predator diets has been difficult to track. We measured mercury (Hg) stable isotopes in young (<2 years old) Pacific bluefin tuna (PBFT) and their prey species to explore the influence of foraging depth on growth and methylmercury (MeHg) exposure. PBFT total Hg (THg) in muscle ranged from 0.61 to 1.93 μg g-1 dw (1.31 μg g-1 dw ±0.37 SD; 99% ± 6% MeHg)

The effects of chemical preservation on bulk isotope ratios in Atlantic bluefin tuna and Atlantic bonito muscle tissue.

Biological samples collected during oceanographic research are often chemically preserved to maintain tissue integrity prior to analysis. However, chemical preservation can produce changes in isotopic signatures and elemental compositions of the preserved samples. These changes typically adhere to predictable ranges, but effects vary by species. The impacts of two commonly used chemical preservatives, formalin and ethanol, were tested on tissue samples from Atlantic bluefin tuna (Thunnus thynnus) and Atlantic bonito (Sarda sarda). Tissue samples underwent bulk isotope signature and elemental a

Total and organic mercury concentrations in the muscles of Pacific albacore (Thunnus alalunga) and bigeye tuna (Thunnus obesus).

Muscles of 115 North Pacific albacore (ALB, Thunnus alalunga) and 75 Pacific bigeye tuna (BET, Thunnus obesus), collected from 2001 to 2006, were analyzed. No ALB, but 13 large BET had organic mercury (OH g) concentrations exceeding 1 μg g(-1) wet weight. For both ALB and BET, total mercury (THg) and OH g concentrations were significantly and positively correlated with fork length (FL) and body weight. The muscle Hg bioaccumulation rates of BET were higher than those of ALB, particularly in the adult fish. Moreover, the lines had crossover points among the two species that imply the young BET

Allergenic protein behavior, parvalbumin (PA) contained in skipjack tuna (Katsuwonus pelamis) during the fish sauce processing stage.

Parvalbumin (PA) is a major muscle allergen in fish capable of triggering immunoglobulin E-mediated hypersensitivity reactions in fish-allergic individuals. This study investigated the degradation and allergenic behavior of PA in skipjack tuna (Katsuwonus pelamis) sauce during a 60-day fermentation process, sampled at 20-day intervals. Sodium dodecyl sulfate-polyacrylamide gel electrophoresis and immunoblotting were used to monitor PA profiles and immunoglobulin G (IgG)-binding ability, which revealed a thin, undetectable band of PA and low IgG-binding ability by immunoblotting with the progre

Organ-specific mercury stable isotopes, speciation and particle measurements reveal methylmercury detoxification processes in Atlantic Bluefin Tuna.

Identifying metabolism and detoxification mechanisms of Hg in biota has important implications for biomonitoring, ecotoxicology, and food safety. Compared to marine mammals and waterbirds, detoxification of MeHg in fish is understudied. Here, we investigated Hg detoxification in Atlantic bluefin tuna Thunnus thynnus using organ-specific Hg and Se speciation data, stable Hg isotope signatures, and Hg and Se particle measurements in multiple tissues. Our results provide evidence for in vivo demethylation and biomineralization of HgSe particles, particularly in spleen and kidney. We observed a ma

LncRNA Tuna is activated in cadmium-induced placental insufficiency and drives the NRF2-mediated oxidative stress response.

Cadmium (Cd) is a toxic heavy metal found throughout the environment and one of the top ten toxicants of major public health concern identified by the World Health Organization. In utero Cd exposure causes fetal growth restriction, malformation, and spontaneous abortion; however, the mechanisms by which Cd impacts these outcomes are poorly understood. Cd accumulates in the placenta, suggesting that these negative outcomes may be a consequence of disrupted placental function and placental insufficiency. To understand the impact of Cd on gene expression within the placenta, we developed a mouse

Mercury accumulation in Yellowfin tuna (Thunnus albacares) with regards to muscle type, muscle position and fish size.

The concentrations and relationships between individual mercury species and total mercury were investigated in different muscle parts and sizes of Yellowfin tuna (Thunnus albacares). Fourteen Yellowfin tuna caught in the South Atlantic off the coast of South Africa had an average total Hg (tHg) concentration of 0.77 mg/kg wet weight. No differences were detected (p > 0.05) in tHg, MethylHg (MeHg) or inorganic Hg (iHg) accumulation among the four white muscle portions across the carcass, but both tHg and iHg were found in higher concentrations (p < 0.001) in dark muscle than white muscle. Presence of Adult Cardicola forsteri (Trematoda: Aporocotylidae) in the Gills of Southern Bluefin Tuna: Implications for Diagnosis and Pathology.

Blood flukes cause serious health issues for farmed bluefin tuna worldwide. Their infection severity has been assessed by counting adult flukes in heart flushes. However, Cardicola orientalis adults reside in blood vessels in the gills. The aim of this study was to assess species composition, prevalence and intensity of adult blood fluke infection in gill blood vessels of ranched Southern Bluefin Tuna, Thunnus maccoyii. Based on molecular analysis, out of 41 adult blood flukes found in the gills of the tuna, 32 flukes were confirmed to be C. forsteri, while only 1 fluke was C. orientalis. Ther

Development and validation of a rapid and simple HILIC-MS/MS method for the determination of biogenic amines in tuna fish.

The production of biogenic amines (BAs), which are markers of both quality and safety in fish and fishery products, is influenced by the harvesting technique, handling, and other operations including those carried out on board the vessel. Scombroid dark-meat fish (e.g. tuna) are the fish species most frequently linked to histamine poisoning. The most commonly found BAs in fish are histamine, tyramine, putrescine, and cadaverine, which are produced when microbes decarboxylate the corresponding free amino acids. In this study, a rapid and cost-effective HILIC-MS/MS method was developed and valid
